5 cups cauliflower florets
1 tablespoon unsalted butter
1 tablespoon. olive oil
1 teaspoon minced fresh garlic
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 tablespoons minced fresh parsley
1 teaspoon minced lemon zest

Steps:

  • Pulse cauliflower florets in a food processor until the size of rice. Melt butter with oil in a skillet over medium. Stir in cauliflower, garlic, salt, and pepper. Cook, covered, until cauliflower is tender, stirring occasionally, 6-8 minutes. Stir in parsley and zest.

1 cup white rice, Uncle Ben's Original long grain
3 cups water
3 tablespoons unsalted butter, divided
1/2 teaspoon salt
1/4 teaspoon black pepper, finely ground
1 tablespoon lemon juice, freshly squeezed
2 tablespoons capers, drained
2 tablespoons parsley, chopped

Steps:

  • Add rice to a large pan of boiling water.
  • Cook over high heat about 15 minutes, until just tender. Watch carefully to prevent overcooking.
  • Drain and rise thoroughly.
  • Heat 1 tablespoon butter in a heavy skillet or pan over low heat. (I usually use same pan I used to cook the rice.).
  • Add rice, salt, and pepper.
  • Heat, stirring gently with a fork.
  • Stir in lemon juice, capers, and parsley and remove from heat.
  • Stir in remaining butter and adjust seasonings to taste.
  • Serve immediately.

1 head cauliflower (about 2 pounds), cut into florets, including tender leaves
6 tablespoons olive oil, divided
Kosher salt, freshly ground pepper
1 cup fresh flat-leaf parsley leaves
1/2 teaspoon finely grated lemon zest
2 tablespoons fresh lemon juice

Steps:

  • Preheat oven to 425°F. Toss cauliflower and 4 tablespoons oil on a rimmed baking sheet; season with salt and pepper. Roast, tossing occasionally, until tender and golden brown, 25-30 minutes.
  • Meanwhile, pulse parsley, lemon juice, and remaining 2 tablespoons oil in a food processor until very finely chopped; season with salt and pepper. Toss cauliflower with lemon-parsley mixture and top with lemon zest.
  • DO AHEAD: Lemon-parsley mixture can be made 4 hours ahead. Cover and chill.
