225g plain flour , plus extra for rolling out
140g cold unsalted butter , roughly cubed
1 large egg yolk
2-3 tbsp ice-cold water
1 small cauliflower , broken into smallish florets
100g thick-cut unsmoked streaky bacon , roughly chopped
3 large free-range eggs
284ml carton double cream
175g/6oz cheese , finely grated (combine two or three of the following: parmesan, cheddar and gruyère or emmental)
2 tbsp snipped chives
good grating of nutmeg

Steps:

  • To make the pastry, briefly whizz the flour with a pinch of salt in a food processor, then add the butter and whizz until the mixture looks like breadcrumbs. Whisk the egg yolk with 2 tbsp water and pour in. Process until the pastry forms a ball round the spindle, add a 1⁄2-1 tbsp water if necessary. Pat into a thick disc, wrap in cling film and chill for 30 minutes or up to 48 hours.
  • Return the pastry to a cool room temperature. Roll out as thinly as you can and line a 4cm deep, 23cm round tart tin with a removable base. Tuck pastry into the corners, without stretching it, and trim off the overhang (watch our video which shows how to do this neatly). Chill for 30 minutes.
  • Meanwhile, preheat the oven to fan 170C/conventional 190C/gas 5. Line the pastry with foil (no need to prick pastry), weigh it down with ceramic or dried beans, then bake for 12-15 minutes. Remove foil and beans, and cook for another 5-7 minutes until the pastry has lost all rawness but is still pale golden.
  • Meanwhile, bring a saucepan of salted water to boil, add the cauliflower and cook for 5 minutes, timed from when the water's back to the boil. Drain well and leave to cool.
  • Spread out the bacon in a cold non-stick frying pan and cook over a low-medium heat for 7-8 minutes, stirring occasionally, until the fat runs and the bacon's coloured but not crisp. Leave to cool.
  • Combine eggs, cream, all the cheese, chives and nutmeg with black pepper and a little salt. Stir in the cauliflower and bacon, then pour the mixture into the case. Bake for 30 minutes or until the pastry is golden and the filling is set but just trembles. Leave for 30 minutes, as quiche is at its best served warm.

0.5 medium onion (finely chopped)
1 tomato (finely chopped)
4 strips Bacon (cooked and chopped)

0.5 cup Gruyere
fresh Chives (for garnish; chopped)

Steps:

  • Preheat oven to 375 degrees F.
  • Heat olive oil in skillet over medium heat. Sauté chopped cauliflower, onions, and tomato. Remove from heat and add chopped bacon. Stir, set aside and cool slightly.
  • Whisk together eggs, half and half, salt and pepper.
  • Place vegetable mixture in 9-inch, glass ovenproof pan. Evenly sprinkle Gruyere over the top. Pour egg mixture into pan.
  • Bake in oven on middle rack for about 40 minutes. (Sides should be fully cooked, but center slightly soft). Allow to sit for 10 minutes before serving. Garnish with fresh chopped chives.

1 head cauliflower (about 3 1/2 or 21 ounces riced)
1/4 cup mozzarella cheese (shredded (about 29 grams))
1/4 cup parmesan cheese (shredded (about 25 grams))
1 large egg
1/4 teaspoon salt (more or less to taste)
1/4 teaspoon garlic powder
8 slices no sugar bacon (cooked crisp and finely chopped (about 16 ounces))
4 ounces cheddar cheese (freshly grated)
1/4 cup parmesan cheese (grated (about 21 grams))
1/2 cup heavy cream
1/2 cup water
6 eggs
1/4 teaspoon salt.

Steps:

  • Grate or pulse cauliflower in food processor to rice. Place in covered microwaveable dish and microwave for 5 minutes. Allow to cool uncovered for at least 10 minutes.
  • Place cooked cauliflower rice into a cheesecloth or dish towel and squeeze out as much water as possible.
  • In medium bowl, combine dried cauliflower, mozzarella cheese, parmesan cheese, egg, salt, and garlic powder.
  • Press crust mixture evenly into tart or pie plate. Bake at 425°F until golden (about 15-18 minutes). Remove and set on wire rack.
  • Sprinkle bacon, cheddar cheese, and parmesan cheese into crust.
  • In medium bowl whisk together cream, water, eggs, and salt.
  • Bake at 350°F about 40-45 minutes or until filling is set. Remove and allow to cool slightly before serving.

Steps:

  • For crust:
  • Blend flour and salt in processor. Add butter and shortening. Using on/off turns, process until mixture resembles coarse meal. Mix in enough ice water to form moist clumps. Gather dough into ball; flatten into disk. Wrap in plastic and chill until dough is firm enough to roll out, about 30 minutes. Roll out dough on floured surface to 12-inch round. Transfer to 9-inch-diameter tart pan with removable bottom. Trim dough overhang to 1 inch. Fold overhang in and press, forming double-thick high-standing sides. Pierce crust all over with fork. Freeze crust 30 minutes. (Can be made 1 day ahead. Cover and keep frozen.)
  • Position rack in center of oven and preheat to 400°F. Bake crust until golden brown, piercing with fork if crust bubbles, about 20 minutes. Transfer crust to rack. Reduce temperature to 375°F.
  • For filling:
  • Cook bacon in heavy medium skillet over medium-high heat until crisp, about 5 minutes. Using slotted spoon, transfer to paper towels and drain. Add shallots to same skillet and sauté until tender, about 2 minutes. Add arugula and sauté until just wilted, about 1 minute. Remove from heat. Add balsamic vinegar; toss to combine.
  • Sprinkle arugula mixture, then bacon over crust. Whisk cream, eggs, salt and pepper in large bowl to blend. Stir in cheese. Pour mixture into crust.
  • Bake quiche until filling is slightly puffed and golden, about 35 minutes. Let stand 10 minutes. Cut into wedges.

1 medium cauliflower, trimmed and divided into florets
40 g butter
1 onion, finely chopped
4 slices bacon, rind removed & finely chopped
2 tablespoons flour
1 1/2 cups skim milk
1 teaspoon Dijon mustard
1 pinch nutmeg
1 1/2 cups tasty cheese, grated
salt & pepper, to taste
1/3 cup breadcrumbs

Steps:

  • Pre-heat oven to 180.C.
  • Grease a 6 cup baking dish.
  • Cook Cauliflower in boiling salted water for 5 mins or until just tender, drain well & arrange in baking dish.
  • Heat butter in a saucepan over medium heat and cook onion and half the bacon for 4 mins or until softened. Remove pan from heat, add flour and stir with a wooden spoon until combined. Return to heat & cook gently for 2 minutes.
  • Gradually add milk, stirring continuously and bring to a boil. Add mustard, nutmeg, 1 cup cheese and season with salt & pepper. Stir until cheese has melted.

1 head cauliflower, separated into florets
1 teaspoon salt
1 cup Original Bisquick™ mix
2 cups milk
4 eggs
5 slices bacon, chopped, crisply cooked
2 tablespoons chopped fresh chives
3/4 cup shredded pizza cheese blend

Steps:

  • Heat oven to 350°F. Spray 3-quart casserole with cooking spray.

3 green onions, chopped

A nice twist to a classic. Layered and baked until golden brown. A great side dish for any meal. I prefer a grilled steak or some roasted chicken, but this is so good and creamy. Originated as a recipe I developed for a restaurant I worked for, this has been a long standing favorite of friends and family. Give it a try and I am sure you will enjoy.

3 large potatoes, peeled and diced
1 head cauliflower, chopped
1/2 cup milk
1 tablespoon butter
salt

1 red pepper, diced fine
3 scallions, diced fine
1 medium onion, dice fine
3 slices bacon, chopped and sauteed
salt

1 1/2 cups shredded swiss cheese
1 cup Italian seasoned breadcrumbs
1 tablespoon butter, melted

Steps:

  • Potato and Cauliflower Layer -- In a large pot of boiling salted water on medium high heat, cook the potatoes for about 10 minutes and then add the cauliflower and cook another 5 minutes under tender. Remove from the heat and drain. Using a potato masher or even just a fork, slightly mash. I like to do a rough mash for this dish. Add, salt, pepper, milk and butter and set to the side.
  • Bacon, Pepper and Onion Layer -- In a medium saute pan, add the bacon and saute until crisp. Remove and let it drain on a paper plate lined with a paper towel. In the same pan, use the bacon drippings (no more than 1 teaspoon, you don't want too much oil) to cook the onion and red pepper red pepper until tender. Once the onion and pepper are done add the scallions, salt and pepper to taste and remove from the heat, drain if necessary (you don't want this oily) and set to the side.
  • Cheese and Crumb Mixture -- In a small bowl, add the melted butter, bread crumbs and cheese and mix well to combine.
  • Casserole -- In a casserole dish, spray with non stick spray and heat the oven to 375. Add a layer on the potato cauliflower mix; then a layer of the bacon, pepper and onions; then a layer of the cheese and bread crumb mix. Next, again, the potato cauliflower; bacon, pepper and onions; and then the cheese and bread crumbs.
  • Bake -- Thirty (30) minutes until golden brown and bubbly. This is a great side dish and makes a great presentation when you cut into it and serve.
