LEFTOVER HAMBONE SOUP
Use up your leftover hambone to make this cozy, hearty soup loaded with tons of veggies and chunks of sweet ham!

Steps:
- Place leftover hambone in a large stockpot or Dutch oven and add enough water to cover the bone halfway, about 6-7 cups. Bring to a boil; reduce heat and simmer until very fragrant, about 30 minutes to 1 hour; set aside ham stock and discard hambone. Heat olive oil in a large stockpot or Dutch oven over medium heat. Add garlic, onion, carrots and potato. Cook, stirring occasionally, until onions have become translucent, about 2-3 minutes. Stir in ham stock, beans, corn, thyme and bay leaves; season with salt and pepper, to taste. Bring to a boil; reduce heat and simmer until potatoes are tender, about 10-12 minutes. Stir in ham until heated through, about 1-2 minutes. Serve immediately.
CATHY'S HAM BONE SOUP
I wasn't a big fan or regular boiled dinner, so after years of hubby missing one of his favorite meals, I decided to revise it & make my own version into more of a soup. I cut everything into about 1 inch pieces , just nice for a bite. the stewed tomatoes add a really nice flavor, now this is a favorite for the whole family, even the little kids love it. **** you can use chicken or vegetable soup base in place of the ham flavor if you dont have ham flavor. I always use the SOUP BASE & NOT bouillon, as the bouillon makes it too salty and the flavor is not as good.

- simmer ham bone covered in water for a few hours or leave in slow cooker over night on low.
- remove ham bone set aside to cool.
- add several cups of water to soup pot and add other ingredients. I put the cabbage in 1st so it cooks down and makes room for other stuff. I always add stuff by what takes longest to cook. i.e. fresh rutabaga, raw potatoes , etc..before canned stuff
- add seasonings such as salt & pepper , to your own taste, I always add a little at a time , wait a bit then taste to see if more is needed.
- remove meat from ham bone & cut to your desired size then add just the meat back into the pot.
- set to simmer. wait until all vegetables are fully cooked, I usually simmer on low a couple hours to get all the flavors mixed well.. and...ENJOY !! a big bowl of hearty, healthy, deliciousness.

- Place the ham bone, onion, tomatoes, kidney beans, potatoes, and green pepper into a 3 quart or larger slow cooker. Dissolve the bouillon cubes in water, and pour into the slow cooker.
- Cover, and cook on High until warm. Reduce heat to Low, and continue to cook for 5 to 6 hours.

HAM BONE SOUP
Don't let that leftover bone from your holiday smoked ham go to waste! Put it to use in this hearty, delicious soup, which can be made with ingredients you probably have in your fridge and pantry. It's nice if you have a little meat left clinging to the bone after you've carved off all the ham, but even if you don't, the bone alone will add rich flavor and smokiness to the dish. You'll need to soak the dried beans overnight, so plan accordingly. Luckily this recipe makes a big batch as the soup keeps well in the freezer (see Cook's Note).

- The day before you want to make the soup. put the beans in a large bowl and add cold water to cover by several inches. Soak overnight (or at least 8 hours) in the refrigerator.
- Drain the beans and rinse. Heat the olive oil in a large Dutch oven over medium heat. Add the carrots, celery and leeks and season with 1 teaspoon of salt. Cook and stir until the vegetables are softened, about 5 minutes.
- Add the tomato paste and thyme and stir to coat the vegetables. Let the tomato paste toast for 1 minute, stirring, then add the bay leaves and 12 cups of water. Add the beans and nestle the ham bone in. Bring to a simmer and cook, uncovered, until the beans are almost tender, 45 minutes to 1 hour.
- Add the escarole, another 2 cups of water and 1 teaspoon salt. Return the soup to a simmer and cook until thickened and the beans and escarole are very tender, 20 to 30 minutes.
- Remove the bay leaves and ham bone from the soup and let cool until you can handle the bone. Shred any useable meat left on the bone and stir back into the soup. Season with salt and pepper before serving.
KATHY'S HAM AND BEAN SOUP
This is the highlight of my 'after' Easter cooking....that ham bone that is in the fridge after most of the ham is eaten. I just can't get myself to throw it out without making a pot of this soup!! I use canned beans in place of the dry, it just makes making the soup so much easier and the beans are always cooked just right. Be careful when adding salt, if the ham was salty the soup may not need any. Hope you like my recipe!!

- Add all ingredients but the beans to a kettle, cover with water and the broth. Cook on medium heat for 1 1/2 to 2 hours or until the barley and vegetables are tender. Remove the ham bone and cut any remaining meat from the bone and return the meat to the soup. Now you can discard the bone! Add the canned beans and the liquid in the cans to the soup and heat through. Enjoy with some crusty bread rolls and a glass of your favorite vino!

CHEESY HAM AND POTATO SOUP RECIPE
This Cheesy Ham and Potato Soup is easy to throw together, and will quickly become a family favorite. It's my favorite meal on a cold chilly day, and tastes amazing.

- In a large stock pot combine potatoes, onion, carrots, peas, ham and chicken broth
- Bring to a boil, lower heat to medium, and let cook until potatoes are soft (about 15-20 minutes).
- Add salt and pepper to taste.
- In a small saucepan, melt butter over medium-low heat.
- Whisk in the flour and continue to stir constantly until the mixture thickens (about 1-2 minutes).
- Slowly add the milk to the butter/flour mixture, stirring the entire time so that you don't get any lumps. Continue to stir until the mixture thickens once again (takes about 3-5 minutes).
- Add in the cheese to the butter/flour/milk mixture and stir until it's completely melted.
- Pour the cheese mixture into the stock pot with the vegetables and ham and stir until completely incorporated. It will get thicker as it cools.

HAM BONE SOUP
Made this up after winning a ham at the company Christmas party. I'm not a big ham or soup fan, but the ham turned out pretty good and I thought I'd experiment with a soup to use up some of the leftovers. I couldn't find a recipe I liked, so I basically combined three recipes I found on 'Zaar. I'm a picky eater - don't like carrots or many types of beans - which is why I didn't stick to the navy bean/pea/carrot type recipes. I used cornstarch to thicken which didn't work very well. Another recipe recommended the potato flakes (which I don't have). I made my ham with looneytunesfan's Brown Sugar Honey Baked Ham recipe (#151563). The soup seemed sweet to me and I'm guessing it's because of the sugary ham. I think it turned out pretty good so I thought I'd share. Feel free to experiment or make suggestions. I'm more of a baker than a cook! :)

- Cover ham bone in water and simmer for about an hour.
