This fresh pasta is tender yet resilient enough to meet all your pasta needs -- from making simple fettuccine to filled shapes like ravioli or tortellini. The recipe makes about 1 pound of pasta dough, enough to serve 4 to 6 people.

Yield 1 pound pasta dough

Number Of Ingredients 4

3 large eggs, plus 1 large egg yolk
1 tablespoon extra-virgin olive oil
2 cups all-purpose flour, plus more as needed
Kosher salt

Steps:

  • Beat together the eggs, yolk and olive oil with a fork in a large spouted measuring cup.
  • Combine the flour and a large pinch of kosher salt in the bowl of a food processor. Pulse briefly to combine. With the food processor motor running, gradually pour the egg mixture through the feed tube and let it run until the dough forms a ball around the blade. (If the dough is too sticky to form a ball, add a tablespoon or so of flour and process again. If it is too crumbly to form a ball, add cold water, 1 tablespoon at a time, and process again.) Once the dough forms a ball, process until smooth and springy, 20 to 30 seconds.
  • Transfer the dough to a floured work surface and knead several times, until the dough comes together in a smooth ball.
  • Wrap the dough in plastic wrap and let it rest at room temperature for 30 minutes. (The dough can be made 1 day ahead, wrapped and refrigerated. Let it come to room temperature before rolling.)
  • Anchor a pasta machine to your countertop or secure the pasta attachment to a stand mixer. Set the machine to the widest setting. Unwrap the dough and cut it into 4 equal pieces. Wrap 3 of the pieces while you work with the fourth.
  • Flatten the dough into a rectangle and lightly dust with flour. Roll it through the pasta machine at the widest setting. Fold the dough in thirds like a letter and feed it through the pasta machine. Repeat the folding and feeding of the dough through the machine 2 more times. (Rolling and folding in this manner will help strengthen and smooth the dough.)
  • Set the pasta machine to the next setting (one setting thinner than the widest). Flour the dough as necessary and feed it through the machine. Repeat, feeding it through one more time.
  • Adjust the machine to the next thinnest setting and feed the dough through 2 times as above. Continue changing the setting and feeding the dough through 2 times for each setting until you have fed the dough through the second-to-last setting. The dough should be thin enough so that you can see your hand through it.
  • If you are cutting your pasta into noodles: Stop rolling the dough through after you have gone through the second-to-last setting.
  • If you are making filled pasta, like ravioli: Change the machine to the final setting and feed the dough through.
  • Cut the dough in half crosswise and cover it with plastic wrap. Repeat the folding, rolling and cutting process with the 3 remaining pieces of dough. Cover each piece of dough as you finish. You should have 8 pieces of dough total.
  • If you are cutting your pasta into noodles: Affix the cutting attachment to the pasta machine. Choose the desired setting and feed the dough through. Lightly toss the noodles with a little flour on a baking sheet to prevent sticking and cover with a dry kitchen towel while you process the rest of the dough. Cook the noodles in a large pot of boiling salted water until al dente, 3 to 4 minutes.
  • If you are making filled pasta: Proceed according to your recipe's instructions.

8 ounces gemelli pasta
2 cups broccoli florets
1 tablespoon extra virgin olive oil
2 tablespoons minced garlic
1/2 onion, diced
1 carrot, peeled sliced thin
1 medium zucchini, sliced into small chunks
1 medium yellow squash, sliced into small chunks
1 red bell pepper, sliced
1 teaspoon salt
1/4 teaspoon black pepper
1/2 cup frozen peas
10 -12 cherry tomatoes, halved
1/2 cup white wine
2 teaspoons lemon zest
1 lemon, juice of
1/3 cup parmesan cheese
1 tablespoon fresh parsley, chopped

Steps:

  • Cook pasta according to package directions. DO NOT DRAIN WATER. With a slotted spoon, remove pasta and transfer to bowl and set aside. Add broccoli florets to pasta water and bring to a boil. Reduce heat and simmer for 3-4 minutes until broccoli is just tender. Drain and set broccoli aside.
  • In a large, deep skillet over medium-high heat olive oil. Add garlic and onion and cook until onions are translucent.
  • Add boiled broccoli and sauté for 1 minute. Then add carrots, zucchini, squash, red bell pepper, salt and pepper - sauté until just tender, about 3-4 minutes.
  • Add cherry tomatoes and peas and cook for another 1-2 minutes.
  • Pour in white wine, add lemon zest and lemon juice. Let simmer for 3-4 minutes.
  • Add pasta to the veggies and combine thoroughly. Pour into a large serving bowl.
  • Add Parmesan cheese and parsley to the veggies and pasta, stirring gently. Add additional salt and pepper to taste. Serve warm or refrigerate and serve cold.

PASTA WITH CHICKEN IN A LIGHT WHITE WINE AND FRESH HERB SAUCE

This is a fresh, light meal that is great for the warmer times of year. The sauce is not thick or heavy but coats the pasta for an even flavour. The choice of herbs here is merely what I have found to work well but please adjust to your family's tastes! The herbs should be fresh though- dried herbs will not give the same result. The fresh basil really brings out the flavours in this dish. UPDATE: In light of a review, I have tried this dish again and increased the liquid ingredients in the recipe to provide more sauce. It is important in this recipe to include the stock cube as there is something in it that thickens the sauce. If you must leave it out, add an alternative thickening agent.

1 red onion, peeled and cut into wedges
2 cups dry pasta (or equivalent of fresh pasta)
2 garlic cloves, crushed
2 chicken breasts, diced
2 cups dry white wine
1 tablespoon fresh rosemary, chopped
10 -12 leaves fresh basil, chopped
1 cup mascarpone cheese
1 chicken stock cube

Steps:

  • Heat the oil in a skillet and add the chicken, red onion and garlic. Cook for 10 minutes, stirring frequently, until the chicken is cooked through.
  • Start to cook the pasta according to the instructions on the packet (if using fresh pasta, wait a while as it takes less time to cook).
  • Pour the white wine into the skillet with the chicken, bring to the boil and simmer until the liquid is reduced by about half. Do not reduce it for too long or there will not be enough sauce.
  • Stir in the mascarpone cheese and fresh herbs. Crumble in the half stock cube.
  • Heat the sauce through gently for a few minutes but do not boil.
  • Drain the pasta and spoon the sauce over it in the pan. Toss to coat the pasta.
  • Serve immediately.

1 lb angel hair pasta
1/2 onion
4 garlic cloves
20 basil leaves
3/4 cup fresh parmesan cheese
2 (14 1/2 ounce) cans chicken broth or 2 (14 1/2 ounce) cans vegetable broth
1 tablespoon cornstarch
2 tablespoons olive oil
fresh pepper
3/4 cup white wine
1 lemon

Steps:

  • First, finely chop about half a large onion and mince or press about four large cloves of garlic (organic, of course).
  • Second, take about a handful of organic basil (I hate to admit I don't wash this because it is harder to mince) and then finely chop the basil.
  • Third, shred about half to three-quarters cup of parmesan reggiano.
  • Fourth, start a pot of boiling salted water.
  • Open two cans of chicken broth (I like Ralphs because it is less sodium than Stater Bros.).
  • Place about one large heaping tablespoon of cornstarch in a short water glass or coffee cup.
  • Saute onion only over medium heat in about 2 tablespoons of olive oil. Add about three or four shakes of ground white pepper (maybe a bit more if you like it spicy). After about two minutes of saute process, add garlic and continue to stir and heat for another one minute. This brings out flavor of garlic. Then add about 3/4 cup of white wine and raise heat to "high" to deglaze the pan. Boil to reduce the liquid until it is nearly gone.
  • Add one can of chicken stock, keeping heat at high. Stir the pan to make sure that all accumulated flavor on side of pan is combined with liquid. Boil this down by about half. Then add most of the second can and boil down again by about 1/3.
  • While the sauce is finishing, add pasta to boiling water.
  • Using the balance of the unused can of chicken stock, slowly pour into the glass of cornstarch stirring to blend the powder into a paste and then add more stock to make it a thick cornstarch liquid. Add this liquid slowly to the sauce, stirring in to incorporate about 15 seconds after pouring. Continue to heat on medium heat until sauce has thickened slightly (won't be much thicker than a heavy liquid) - this won't take much more than 45 seconds. Turn off heat. Add juice from about 1 lemon, more or less if desired. Stir to blend lemon. Set aside.
  • Drain pasta. Place in bowls. Add basil to each bowl of dry pasta. Mix. Add a bit of sauce. Mix. Then add a bit of cheese. Mix. Add more sauce and cheese and fresh ground black pepper on top.
