Steps:
- In a skillet that has a tight fitting cover, heat olive oil over medium high.
- Add onion, peppers, garlic, ground beef, dry mustard, chili powder, salt and pepper. Sauté until ground beef is no longer pink, breaking up beef as you cook.
- Add rice and cook for two minutes letting rice absorb liquid.
- Add tomato paste and cook for one minute.
- Add canned tomatoes with juice, water and Worcestershire sauce. Stir, cover and simmer for 20 minutes covered.
- After 20 minutes, remove lid and fluff the mixture then serve. If the mixture is too wet, cook for another few minutes with lid off.
- If you are using the cheese, sprinkle on top for last few minutes of cooking time with lid on.

- Preheat broiler. Place potatoes into a microwaveable bowl with the water, cover tightly and microwave on high for 3 minutes. Drain well. Heat a large cast iron skillet over medium heat. Place bacon and oil into the skillet and cook until bacon is crisp, 4- 5 minutes. Add garlic and cumin and stir until fragrant. Add the potatoes and salt and cayenne pepper and continue to cook and stir over high heat until potatoes are beginning to crisp. Stir in the salsa, then sprinkle cheese on top and broil 3 4 minutes until bubbly. Garnish with sour cream and cilantro before serving. NOTES If you have cubed frozen potatoes without the O'Brien seasoning (onions, red and green pepper), you may want to add some of those things along with the garlic, stirring until slightly cooked. For the salsa, we liked Chipotle flavored, but choose your favorite flavored salsa and level of heat.
SKILLET HASH AND EGGS

- Preheat the oven to 400 degrees F. Pierce the potatoes in a few places with a fork and microwave until almost tender, about 10 minutes, turning halfway through. Let cool slightly, then peel and cut into 1/2-inch dice.
- Heat the butter in a large cast-iron skillet over medium-high heat. Add the kielbasa and cook, stirring, until it starts to brown, about 3 minutes. Add the onion and caraway seeds and cook until the onion is soft, about 3 minutes.
- Stir in the potatoes, then flatten the hash into an even layer, pressing gently with a spatula. Cook undisturbed until crunchy and browned on the bottom, about 5 minutes. Flip the hash in sections and cook until browned on the other side, about 5 more minutes. Remove from the heat.
- Using a spoon, make 4 shallow indentations in the hash and crack 2 eggs into each. Transfer to the oven and bake until the egg whites set, about 10 minutes. Season with salt and pepper and top with the parsley and scallions.
SKILLET HASH BROWNS HOMEMADE
The secret to this is to use cold cooked potatoes, a cast-iron skillet and don't over stir while they brown in the skillet, this makes a great accompaniment to eggs, prep time does not included overnight chilling time.

Steps:
- Cut the cold potatoes into 3/4-inch cubes.
- Melt the butter with oil in a 9 or 10-inch cast-iron skillet over medium-high heat.
- Add in the cold potato cubes and cook tossing gently and occasionally for 10 minutes.
- Add in onion and continue to cook until the potatoes are browned on all sides, stirring gently.
- Season with seasoned salt and black pepper.
