White Bean Dip comprises white beans that have been blitzed together with olive oil, lemon and numerous herbs. Serve with crudités and pita chips.

480g (2 x tins) cannelini, butter beans, navy or white beans, drained and rinsed
1 lemon, juice and zest
125ml (½ cup) extra virgin olive oil
2 garlic cloves, peeled
10ml (2 tsp) ground cumin
12g (½ cup) fresh herbs, washed and finely chopped
salt and pepper, to taste

Steps:

  • Place the beans, lemon juice and zest, olive oil, garlic and cumin in a food processor and blend until smooth.
  • Add the herbs and give it a quick blitz to incorporate.
  • Season to taste then spoon into serving bowls.
  • Serve with vegetable crudités and crackers as a snack, starter or side dish. Enjoy!

1 1/2 cups dried white beans
7 tablespoons extra-virgin olive oil, plus more as needed
5 large cloves garlic
1 large yellow onion, halved and thinly sliced
Kosher salt
2 teaspoons Worcestershire sauce
2 teaspoons white distilled vinegar
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon hot sauce, such as Tabasco
Vegetables or crackers, for serving

Steps:

  • For the beans: Put the beans in a bowl and cover with cold water by 3 inches above the top of the beans. Let soak overnight.
  • Strain the beans, discarding the soaking liquid. Place them in a pot and cover with water by 3 inches above the top of the beans. Bring to a simmer over medium-low heat and let cook until the beans are tender, 1 hour 15 minutes to 1 hour 45 minutes. Strain and let cool.
  • For the dip: Bring 1/2 cup water and 1 tablespoon olive oil to a boil in a medium skillet over medium heat. Add the garlic, onion and a pinch of salt and simmer until the water reduces down and the onions become translucent and tender, 3 to 5 minutes. Add the beans and heat until they become warm.
  • Meanwhile, add the Worcestershire, vinegar, garlic powder, paprika, hot sauce, 4 tablespoons olive oil and some salt to a food processor. Transfer the bean mixture to the food processor. Add the remaining 2 tablespoons olive oil and another pinch of salt. Puree the beans until smooth. Add more oil if needed for taste or texture. Taste for seasoning. Serve with vegetables or crackers.

LIGHTER CREAMY WHITE BEAN DIP



Lighter Creamy White Bean Dip image

2/3 cup reduced-fat 2-percent cottage cheese
1 tablespoon apple cider vinegar
1/2 teaspoon dried thyme
One 15.5-ounce can cannellini beans, rinsed and drained
Kosher salt and freshly ground black pepper
2 teaspoons good quality olive oil
Pinch smoked or sweet paprika
Chopped chives, for garnish

Steps:

  • Combine the cottage cheese, vinegar, thyme, beans, 1/4 teaspoon salt and 1/4 teaspoon pepper in a food processor. Puree until smooth, scraping down the sides of the bowl as needed. Chill 30 minutes to 1 hour.
  • Transfer to a serving bowl and drizzle with the olive oil, sprinkle with the paprika and garnish with chives.

1/2 cup olive oil
1/8 cup garlic cloves (chopped)
2 (15.8-ounce cans) white beans (Great Northern Beans are best, but cannellini beans or navy beans are also fine, drained and rinsed)
1/4 cup fresh lemon juice
1 teaspoon ground cumin
2 tablespoon fresh parsley (chopped)
1/2 tablespoon salt (sea salt or kosher salt is always best)
1 teaspoon white pepper (optional but adds a nice rich flavor)
Optional: pinch cayenne pepper (or paprika)

Steps:

  • Gather the ingredients.
  • In a small saucepan, combine the olive oil and garlic over medium to low heat until the garlic is very lightly browned, being careful not to burn. Let cool slightly and strain, reserving both the oil and the garlic.
  • Place the white beans in a food processor or blender, and add the garlic, lemon juice, cumin, and parsley. Process until smooth. Carefully pour in the reserved olive oil while the food processor or blender is running and process until light and smooth.
  • Season your white bean hummus with salt (sea salt or kosher salt is almost always best), white pepper, and a touch of cayenne pepper or paprika for a colorful garnish.
  • Serve cool with pita bread, bagel chips, tortilla chips , or an array of freshly chopped vegetables-baby carrots or carrot sticks, celery sticks, bell pepper slices, sliced mushrooms, or jicama slices.

  • Add all ingredients to a food processor, except for the chopped onion and chili flakes (I have used a stab mixer successfully).
  • Blend until you get a good dip consistency.
