My niece's version of this classic recipe, it tastes fantastic and is quick and easy! You can also top this with cooked tofu and serve with a vegetable side dish for a healthful vegan dinner:D Adjust heat according to taste, and if you prefer a sweeter taste, swirl in a tablespoon of honey with the tahini and peanut butter.

16 ounces whole wheat spaghetti or 16 ounces spaghetti
1 tablespoon canola oil
2 garlic cloves, minced
1 teaspoon red pepper flakes or 3 -5 drops sriracha sauce
2 tablespoons tahini sauce
1/3 cup peanut butter (preferably natural chunky style)
1 tablespoon honey (optional)
5 -7 tablespoons hot water
salt and pepper, to taste
2 scallions, chopped (optional)
1/2 cup cilantro, chopped (optional)
1 cucumber, peeled and sliced
1 lime, cut into wedges

Steps:

  • Cook spaghetti according to package directions.
  • saute garlic and hot pepper in oil for 1-2 minutes.
  • Mix in tahini and peanut butter, then whisk in warm water until the sauce is a creamy consistency (depending on the peanut butter you use and personal preference).
  • Taste and add pepper, salt or more red pepper or hot sauce as desired.
  • Toss with pasta and garnish with scallions, cilantro, cucumber then serve with lime wedges.

This is one of the most popular recipes I've ever made! From kid's to old folks everyone loves these noodles. Add some spicy "Rooster sauce" and more ginger to give it even more flavor. I have now adjusted my original recipe post (9/07). Apparently an employee had written the recipe down incorrectly cause I never measured. It's a really easy dish to make for pot luck's etc. Toast your sesame seeds if they haven't already been toasted for better flavor. Almost all of the ingredients are available at any Oriental Market and most regular grocery stores. You can add other ingredients to make it a whole meal. --Please note-- the soy sauce amount was incorrect in this recipe! I have now changed it! Add more if you like.

1 lb linguine
1/3-1/2 cup soy sauce
1/4 cup toasted sesame oil
1/8 cup rice vinegar
4 tablespoons grated fresh ginger, adjust to taste
1/4 teaspoon cayenne pepper, adjust to taste
3 tablespoons black sesame seeds, regular can be substituted
1/2 bunch green onion, diced, green only

Steps:

  • Cook linguine noodles per directions on package. Drain well.
  • Combine next 5 ingredients and mix well with noodles. (I use gloved hands to do this).
  • Mix in sesame seeds and most of green onions.
  • Let stand for at least 30 minutes before serving and stir occasionally during this time.
  • Sprinkle with reserved green onion for decorative purposes.

1 cup frozen shelled edamame
Vegetable oil, for the grill
1 bunch scallions
3 tablespoons tahini
3 tablespoons soy sauce
3 tablespoons rice wine vinegar
2 teaspoons toasted sesame oil
2 teaspoons sugar
2 teaspoons grated fresh ginger
2 cups bean sprouts
1 cup shredded carrots
1 cup julienned snow peas
Toasted sesame seeds, for topping

Steps:

  • Cook the udon noodles as the label directs; drain and let cool. Meanwhile, cook the edamame as the label directs; drain and let cool.
  • Heat a grill or grill pan over medium-high heat and oil the grates. Add the scallions and cook, turning, until charred, about 3 minutes. Let cool, then slice.
  • Make the dressing: Whisk the tahini, soy sauce, vinegar, sesame oil, sugar and ginger in a large bowl. Stir in 1 to 2 tablespoons water to make a smooth sauce.
  • Add the noodles and edamame to the dressing along with the bean sprouts, carrots and snow peas; toss. Sprinkle with sesame seeds.

1-inch piece fresh ginger, minced

1 teaspoon red chili paste, such as sambal
1 lime, juiced
2 tablespoons brown sugar
1/2 cup creamy peanut butter
3 tablespoons rice vinegar
3 tablespoons soy sauce
6 tablespoons hot water
1 tablespoon toasted sesame seeds

Steps:

  • Cook the noodles in large pot of boiling unsalted water over medium heat until barely tender and still firm. Drain immediately and rinse with cold water until cold. Drain the noodles really well and transfer to a wide bowl; toss with the sesame oil so they don't stick together. Chill.
  • In a blender combine the peanut oil, ginger, garlic, chili paste, lime juice, brown sugar, peanut butter, vinegar, soy sauce, and hot water. Blend. Toss the noodles with the peanut sauce until well coated. Serve at room temperature or chilled; garnish with the sesame seeds, green onions, and cilantro.

Steps:

  • Bring a large pot of water to a boil. Cook the noodles according to the package instructions.

1 pound spaghetti or Chinese egg noodles
2 tablespoons toasted sesame oil
1 garlic clove, peeled
1 (1-inch) piece peeled fresh ginger
1/2 cup smooth peanut butter
1/4 cup soy sauce
2 tablespoons dark brown sugar
1 tablespoon rice vinegar
3/4 teaspoon crushed red pepper
1/4 cup hot water
1 Kirby cucumber, halved and sliced
1 cup shredded cooked chicken
6 scallions (white and green parts), sliced
1/4 cup dry-roasted peanuts, chopped

Steps:

  • Game Plan: Make the sauce while the noodles cook.
  • Bring a large pot of cold water to a boil over high heat. When the pasta water boils, salt it generously, add the spaghetti or noodles, and cook, stirring occasionally, until al dente. Drain and rinse under cold running water. Put the spaghetti in a large bowl and toss with the sesame oil.
  • To make the Peanut Sauce: In a blender drop in the garlic and ginger while the motor is running. When the chopping is complete, stop the machine and add the peanut butter, soy sauce, brown sugar, vinegar, and red pepper. Process until smooth, then--with the blender running--slowly pour in the water.
  • To serve, toss the spaghetti with the Peanut Sauce, then top with the cucumber, chicken, scallions, and peanuts.

1 pound spaghetti
8 ounces snow peas, thinly sliced lengthwise
1 red bell pepper, cut into long, thin strips
1/2 cup smooth peanut butter
2 garlic cloves, smashed
1 jalapeno pepper (seeds removed if desired)
1/4 cup soy sauce
1/4 cup rice vinegar
1/3 cup warm water
2 tablespoons toasted sesame oil

Steps:

  • In a large pot of boiling salted water, cook pasta until al dente, according to package instructions. Drain, and rinse with cold water. In a large bowl, combine with snow peas and red pepper; set aside.
  • In a blender, combine peanut butter, garlic, jalapeno, soy sauce, rice vinegar, water, sesame oil, and 1/4 teaspoon salt; puree until smooth. Pour over reserved pasta; toss to coat. Serve chilled or at room temperature.

This recipe for sesame noodles is one I've created through trial and error. It combines green onions, peanut butter and sesame oil for a wonderfully complex flavour.

½ (8 ounce) package spaghetti
2 tablespoons peanut butter
1 tablespoon honey
2 tablespoons tamari
1 teaspoon Thai chili sauce
1 teaspoon sesame oil
1 teaspoon ground ginger
1 clove garlic, minced
1 green onion, chopped
2 teaspoons sesame seeds

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the spaghetti, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 12 minutes. Drain well in a colander set in the sink.
  • Melt the peanut butter in a large microwave-safe glass or ceramic bowl, 15 to 20 seconds (depending on your microwave). Whisk the honey, tamari, and chili sauce into the peanut butter, then stir in the sesame oil and ginger. Mix in the garlic and green onions and toss with the spaghetti. Top with the sesame seeds.

Noodles dressed with sesame are popular in many parts of China, but this particular style, made with peanut butter and served cold, became a Chinese-American staple in the United States in the 1970s. The family of Shorty Tang - an ambitious restaurateur who emigrated from Sichuan to Taipei to New York - firmly believes that he invented the dish and still serve it at Hwa Yuan, the restaurant he opened in 1967 in Manhattan's Chinatown. They have never divulged the exact recipe; this is our own lush but refreshing version.

200g leftover roast chicken
1 roasted aubergine
1 carrot , grated
½ cucumber , seeds removed and cut into half moons
½ small pack mint , roughly chopped

Steps:

  • Whisk together the tahini, lime juice, soy sauce, flesh from the roasted garlic, sesame oil and chilli flakes in a large bowl, adding enough water to make a creamy dressing.
  • Add the noodles, leftover roast chicken, aubergine and carrot and toss everything to combine, then gently fold through the cucumber and mint. Divide between two containers, then sprinkle over a few extra chilli flakes to serve.

After tinkering with a few different recipes, this is my family's favorite version! Sooooo good, I could eat the whole bowl! You can easily add cooked chicken and make it a main dish! The honey is an optional ingredient; leave it out if you don't like the noodles sweet.

1/4 cup peanut butter
1/4 cup soy sauce

Steps:
