- 1. This is made on a *HOW MUCH DO YOU WANT BASIS*...
- 2. You only need to know two main things on this recipe... 1.) 3 cups of water per every 2.5 lbs of cheese. 2.) This HAS to be done in a double boiler because of the type of cheese used.
- 3. Saute vegetables in a little butter until transparent. Melt cheese and water in the double boiler and once smooth add sauteed vegetables. YUMMY!!!
CASA OLE GREEN SAUCE (COPY CAT)
This is the closest rendition o fthe actual Green Sauce from Casa Ole that I can find. Don't be afraid to blend it for a while to make everything as smooth as possible.

I found this recipe on CopyKat Recipes about ten years ago. It no longer appears to be on the site. I've never tried it, but want to put it here for safekeeping. I used to live in Waco, and loved to eat at Casa Ole - their green sauce was one of my favorite things.
