4 poblano peppers
2 tablespoons extra virgin olive oil, plus some for drizzling (EVOO)
salt & freshly ground black pepper
2 1/2 lbs sirloin, trimmed, thinly cut and chopped into bite-size pieces
1 large red onion, chopped
4 -5 garlic cloves, chopped
2 tablespoons chili powder
1 tablespoon cumin
1 tablespoon ground coriander
1 teaspoon sweet smoked paprika
12 ounces dark Mexican beer, negro modelo
1 (28 ounce) can fire-roasted tomatoes
lime, juice and zest of
1/2 lb manchego cheese
3 scallions, finely sliced

Steps:

  • Preheat broiler to high.
  • To roast the poblano peppers, drizzle them with EVOO, season with salt and pepper, and place on a cookie sheet. Transfer to the broiler, turning every 1-2 minutes, until charred on each side.
  • Remove from the oven, place in a brown paper bag and seal to keep the steam in for about 10-15 minutes. If you do not have a brown paper bag, place in a bowl and cover with plastic wrap for about 10-15 minutes.
  • After that time, peel the skin off, remove the seeds and stem, and chop into bite-size pieces.
  • While the peppers are steaming in the bag or bowl, place a large dutch oven over medium-high heat, add 2 tablespoons EVOO, 2 turns of the pan. Add the steak and brown, about 3-4 minutes per side.
  • Add the red onion, garlic, chili powder, cumin, coriander and smoked paprika to the pot and cook for about 4-5 minutes.
  • Add the beer, scraping the bottom of the pan with the back of a wooden spoon to release any brown bits. Add the tomatoes, chopped poblano peppers, lime zest and juice, and simmer for 10-15 minutes.
  • To serve, ladle a portion of the chili into a bowl and top with grated manchego cheese and finely sliced scallions.

A rich and hearty chili full of meat and beans. Uses a 2:1:1 mixture of ground beef, pork and tri-tip steak. If you lean towards loving the heat, substitute hot italian sausage for one of the portions of ground beef. The hotter version of the ingredients below adds a serious punch.

4 tablespoons olive oil
1 lb ground beef
1/2 lb ground pork
1/2 lb tri-tip steak
4 teaspoons ground cumin
2 teaspoons cocoa chili powder
12 ounces Guinness stout
2 medium onions
5 garlic cloves
1 habanero pepper
2 poblano peppers
1 jalapeno pepper
2 tablespoons chili powder
2 teaspoons garlic salt
1 teaspoon oregano leaves
1 tablespoon dried ancho chile powder
1 tablespoon pasilla chili powder
1 teaspoon newmex chili powder
1 tablespoon pureed chipotle chile
14 1/2 ounces diced tomatoes
16 ounces whole tomatoes
4 cups chicken stock
15 ounces kidney beans, drained
6 habanero peppers
8 jalapeno peppers
3 serrano peppers
1 tablespoon crushed red pepper flakes

Steps:

  • Heat 3 tablespoons of the oil in a large Dutch oven over high heat.
  • Season the meat with salt and pepper, and saute until browned on all sides.
  • Sprinkle with the cumin and stir well.
  • Deglaze the pan with the beer and bring to a boil.
  • In a separate pot, add 1 tablespoon of the oil and add the onions to the pan and cook until soft.
  • Add the garlic and cook for 2 minutes.
  • Add the hot peppers and cook until soft, about 5 minutes.
  • Add the chipotle puree, and the rest of the spice mixture and cook an additional 2 minutes.
  • Add the chicken stock, and tomatoes and bring to a boil and boil for 15 to 20 minutes, or until all vegetables are tender. Puree with an immersion blender.
  • Add the beef mixture and beans to the pan and, reduce the heat to medium, cover the pan, and simmer for 1 hour, or until thick and beef is tender.
  • Remove from the heat, and adjust seasonings.

1 lb. beef top round steak, cut into 1/2-inch pieces
1 lb. extra-lean ground beef
1 onion, finely chopped
1/4 cup A.1. Dry Rub Bold Original
3 cloves garlic, minced
2 cans (16 oz. each) kidney beans, rinsed
2-1/2 cups undrained canned no-salt-added diced tomatoes
1 bottle (18 oz.) KRAFT Hickory Smoke Barbecue Sauce
3/4 cup KRAFT Shredded Cheddar Cheese

Steps:

  • Heat oil in large skillet on medium heat. Add next 5 ingredients; stir. Cook 10 min. or until meat is evenly browned, stirring frequently. Spoon into slow cooker sprayed with cooking spray.
  • Add all remaining ingredients except cheese; stir. Cover with lid. Cook on LOW 7 to 8 hours (or on HIGH 4 to 5 hours).
  • Serve topped with cheese.

This steak chili is the best beef chili recipe ever. That's a big statement, but it's true. It has a rich flavor and the tender chunks of slow-cooked chuck steak are dreamy. We go easy on the beans, but you can either omit them or add extra as you like. You'll want to keep this steak chili recipe in your back pocket so you can pull it out every weekend.

2 lb stewing beef (cut into bite-sized pieces)
1 teaspoon EACH: salt and pepper
2 tablespoons oil (divided)
1 large onion (minced)
4 cloves garlic (minced)
2 stalks celery (minced)
5.5 ounce can tomato paste
3 tablespoons chili powder (see notes)
1 teaspoon EACH: oregano and cumin
3 cups beef bone broth (see notes)
28 ounce can crushed tomatoes
2 tablespoons honey
14 ounce can kidney beans (drained and rinsed (omit for paleo chili))

Steps:

  • Dry the beef well with paper towels then sprinkle the salt and pepper over the top.
  • Heat 1 tablespoon of the oil in a large pot over medium-high heat. Add half of the beef and brown well on 2 sides. Remove it from the pan and repeat with the remaining beef, adding more oil as needed. Remove the second batch of browned beef from the pot.
  • Add the remaining tablespoon of oil to the pan. Add the onion and cook until it is soft and starts to brown, about 5 minutes. Add the garlic and celery and cook for 2 minutes.
  • Push the veggies to the side of the pan and add the tomato paste. Let it cook for 2-3 minutes, or until it becomes sweet smelling. Add the chili powder, oregano, and cumin to the pot and mix.
  • Pour the beef broth into the pot and scrape the bottom of the pot with your mixing spoon to remove any of the dark stuck on bits. Add the crushed tomatoes, honey, and browned beef and bring the pot to a boil. Reduce the heat to low and cover the pot. Very gently simmer the steak chili for 2 hours. (See notes)
  • Just before serving, add the beans and let them warm. Season to taste with salt.

I came up with this to use up some steaks I had smoked a little too much in my smoker. I based the ingredients on what some old cowboy might have on hand o'er there in his chuckwagon. Now I make it all the time. Its spicy and delicious!

2 lbs steak
2 poblano chiles
1 tablespoon chili powder
mesquite wood chips
10 small hot dried chilies
1/2 dried anaheim chile
1 large onion
6 garlic cloves
1 (7 ounce) can tomato sauce
1 (15 ounce) can black beans
1 (15 ounce) can French onion soup
1 (15 ounce) can beef broth
1 (12 ounce) can beer
2 tablespoons red wine vinegar
2 teaspoons crushed cumin seeds
2 teaspoons crushed black pepper
1 teaspoon oregano
1 teaspoon instant coffee
1/2 teaspoon sage

Steps:

  • Rub the steaks with the chili powder and some salt and smoke them for a few hours over mesquite wood. Add the peppers for the last hour, and try to get some char on them. Skin the peppers and roughly chop, and chop the steak into 1" square chunks. Boil the small hot chiles and the anaheim in the beer for a moment, then soak for 20 minutes. Remove the chiles and chop to a pulp.
  • Chop the onion and garlic and saute in a little oil until starting to carmelize, then add all the rest of the ingredients, including the beer that the chiles were boiled in, and of course the steak-- everything except the tomato sauce, beans and smoked poblanos. Simmer for 1 hour with the lid off to reduce, and then add the rest and simmer another 20 minutes.
  • Ladle into bowls and top off with chopped raw onion and shredded cheddar to your liking!

Steps:

  • Brown meat in oil in dutch oven,.
  • remove meat from pan and saute garlic and onion until soft.
  • Add meat back to pan and add chili powder, cumin, cocoa powder, paprika, oregano, pepper flakes, and bay leaf.
  • Saute gently for 30 minutes or so stirring frequently, add a little water if necessary to prevent scorching.
  • add beef broth, tomato sauce and cider vinegar.
  • Simmer one hour stirring frequently.
  • Add bell peppers and continue to simmer until peppers are tender, adding water as necessary.

3 large poblano peppers
2 lbs sirloin shell steak
3 tablespoons extra virgin olive oil
1 large red onion, chopped
4 -5 garlic cloves, chopped
1 teaspoon smoked paprika

1 1/2 teaspoons ground coriander
1 tablespoon chili powder
1 (8 ounce) bottle dark Mexican beer, such as Negra Modelo
1 (28 ounce) can diced fire-roasted tomatoes
1 lime, juice and zest of

Steps:

  • Preheat the broiler to high and place the poblanos on a broiler pan or baking sheet. Char and blacken the skins all over under the hot broiler. Set the poblanos in a bowl (or plastic sealable bag); let stand for 10 to 15 minutes. When the peppers have cooled, peel off the skins, discard the seeds and cut the peppers into large bite-size pieces.
  • Trim the steak and cut it into thin bite-size strips about 1 1/2 inches long and 1/4 inch thick. Heat the olive oil in a stew pot over high heat. When it ripples add the beef and sear on all sides, seasoning it with salt and pepper. Add the onions and garlic and reduce the heat to medium-high. Cook the onions for 5 minutes, then stir in the smoked paprika, cumin, coriander and chili powder, distributing the spices well.
  • Deglaze the pan with the beer, scraping up the browned bits, and cook for a minute to reduce. Add the tomatoes and lime zest, then stir in the poblano peppers.
  • Reduce the heat to low and simmer the chili for 15 to 20 minutes. Squeeze the lime juice over the chili and turn off the heat. Serve in shallow bowls garnished with a few crushed tortilla chips.
