4-6 medium-large portobello mushrooms
125g unsmoked bacon lardons
1 shallot, finely chopped
1 garlic clove, finely chopped
4 tbsp dried breadcrumbs
1 tsp dried sage
50g medium cheddar, grated

Steps:

  • Heat oven to 220C/200C fan/gas 7. Wipe the mushrooms to remove any dirt, then turn upside down and remove the stalks. Place on a baking tray top-side down.
  • Fry the lardons for 8-10 mins until just starting to crisp up, then finely chop the shallot, mushroom stalks and garlic. Add to the bacon and fry on a moderate heat for about 5 mins until all the ingredients are cooked.
  • Take off the heat and add the breadcrumbs and sage, then stir to make an even mixture. Spoon into the hollows of the mushrooms and sprinkle with the grated cheese.
  • Bake for approximately 8-10 mins until the cheese has melted. Serve with crusty bread and a green salad.

These Baked Stuffed Mushrooms are a simple and delicious appetizer that won't last long once you serve them! You can be assured they will be popular. So if you're having a party, to be on the safe side, I suggest doubling or even tripling the recipe.

12 medium-sized mushrooms *
2 tsp olive oil
1 medium brown onion (finely chopped)
1/2 medium red capsicum/bell pepper * (divided)
1 shortcut bacon rasher *
1 tbsp chopped parsley
3 tbsp freshly grated Parmesan * (divided)
2 oz cream cheese (at room temperature)
sea salt * and freshly ground black pepper (to taste)
olive oil spray
a sprinkle of chopped parsley

Steps:

  • Preheat oven to 200 Degrees C (400 F).Line a baking tray with baking paper. Use a rimmed baking sheet so that any liquid released by the mushrooms will stay in the pan.
  • Clean the mushrooms using a dry paper towel. Only use a damp paper towel if they are especially dirty.
  • Carefully break the stems from the mushrooms, chop the stems finely and set aside.
  • Place the empty mushroom caps on the prepared tray.
  • Finely chop the bacon. I have used short cut bacon which is from the loin section only. It's about 6 ½"/16 ½cm in length and is very lean. Back bacon or side bacon is also fine.
  • Cut the piece of capsicum in half (each piece will be a quarter of the whole capsicum/bell pepper). Finely slice one piece to use as a garnish and set aside. Finely chop the other piece.
  • Over medium heat, add the olive oil to a medium-sized frying pan. Add the mushroom, onion, finely chopped capsicum and bacon. Stir occasionally until the moisture from the mushrooms evaporates. Then stir frequently until the ingredients are beginning to caramelise. Lower the heat if necessary.
  • Remove the cooked ingredients to a small bowl and cool for about 10 minutes.
  • Add the chopped parsley, 2 tablespoons of the grated parmesan and the cream cheese. Mix well. Ensure that all the ingredients are well blended. Season to taste.
  • Spray the empty mushroom caps with olive oil.
  • Using a teaspoon, fill the mushroom caps, pushing the filling in place with your fingertips and mounding the mixture a little. Sprinkle the mushrooms with the remaining 1 tablespoon of grated parmesan and decorate with the finely sliced capsicum/bell pepper.
  • Bake in the preheated oven about 20 minutes or until the mushroom feels cooked when tested with a skewer. Set aside for a few minutes.If your mushrooms have released a lot of moisture, sit them on some paper towel before placing on a serving platter.
  • Serve with a sprinkle of chopped parsley (optional).

2 (12 ounce) packages fresh white mushrooms
3 tablespoons butter, melted
6 pitted black olives, finely chopped
¼ cup finely chopped green onion
1 teaspoon oil-packed minced garlic

1 pinch cayenne pepper
1 tablespoon all-purpose flour
¼ cup milk
4 slices Swiss-flavored American cheese, chopped

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Transfer bacon slices to paper towels, reserving bacon drippings in the skillet. Crumble bacon when cooled.
  • Remove stems from mushrooms and set stems aside. Place mushrooms, hollow sides up, on a baking sheet; brush the insides with melted butter.
  • Chop mushroom stems; cook and stir chopped stems, black olives, green onion, and crumbled bacon in the bacon drippings over medium heat until mushroom stems release their liquid, about 5 minutes. Add garlic, salt, black pepper, and cayenne pepper; stir to coat.
  • Tilt the skillet slightly; move vegetable-bacon mixture to one side, allowing the bacon drippings to pool to the other side. Whisk flour into bacon drippings until smooth and paste-like; slowly stir in milk until gravy is smooth. Mix vegetable-bacon mixture into the gravy. Add American cheese and Parmesan cheese; cook and stir until cheeses melt, about 5 minutes. Spoon filling into mushroom caps.

Baked Italian stuffed mushrooms are easy to make and delicious! Perfectly baked, with a cheesy topping they are filled with mouthwatering flavor!

24 large mushrooms (stems removed and reserved)
1 lb. mild Italian sausage
1 yellow onion (diced)
1 stalk celery (diced)
2 cloves garlic (diced)
1/2 cup panko bread crumbs (or ground pork rinds)
1/3 cup parmesan cheese (grated (reserve 1 tablespoon))
1 oz. cream cheese
1 egg
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp red pepper flakes
1 tbsp olive oil (extra virgin)

Steps:

  • Preheat oven to 350 degrees
  • Clean the mushrooms with a damp paper towel.
  • Chop the mushroom stems, dice the onions and celery. In a large skillet over medium heat add the olive oil. When hot add the chopped mushroom stems, onions, celery. Season with salt, pepper and red pepper flakes. Sauté for about 4 minutes until the vegetables just start to soften.
  • Add the garlic & saute until it becomes fragrant about 30 seconds, remove from heat. Allow to cool.
  • Combine pork, bread crumbs and cheeses. Add the sauteed vegetables, bread crumbs and egg. Mix by hand until just combined.
  • Stuff mushrooms and set in an oven proof dish or baking sheet. Top each mushroom with a good pinch of the Parmesan cheese. Bake in the oven uncovered for 30 minutes.
  • Remove from the oven. Set temperature to broil and insert under the broiler. Broil until the tops turns golden brown - about 4-5 minutes depending upon your oven.
  • Optional - garnish with fresh parsley. Serve and enjoy!

Steps:

  • Set oven to 350 degrees.
  • Butter a shallow baking dish.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a baking sheet with cooking spray. Clean mushrooms with a damp paper towel. Carefully break off stems. Chop stems extremely fine, discarding tough end of stems.

Steps:

  • Preheat oven to 350° F (180°C).
  • Cut the stems off of each of the mushrooms and finely chop them, setting the mushroom caps aside for later.
  • Heat the oil in a pan over high heat. Cook the chopped stems with the garlic, salt, and pepper for about six to eight minutes, constantly stirring. Be careful not to burn the garlic. Remove from heat.
  • In a medium bowl, combine cooked stems, cream cheese, breadcrumbs, half of the parmesan, parsley, salt, and pepper, mixing until evenly combined. The mixture should be extremely thick.

2 garlic cloves, minced
1 large shallot, minced
24 large button mushrooms, caps cleaned, stems trimmed and finely chopped

1 slice white bread

  • Rinse mushrooms, then cut off and finely chop the stems.

1 cup marinara sauce (prepared or homemade)
1/2 cup finely snipped fresh basil leaf
8 portabella mushrooms, each about 4 to 5 inches in diameter
1 lb cooked chicken, cubed (2 average-sized chicken breasts)
1 -2 garlic clove, peeled and minced
1/3 cup chopped green onion
2 tablespoons chopped green peppers, and sweet red and yellow peppers
1 -2 tablespoon minced Italian parsley (no stems)
1 teaspoon dried Italian herb seasoning (optional)
salt, and freshly ground black (optional) or white pepper (optional)
shredded mozzarella cheese (as desired) or cheese, of choice (as desired)
grated parmesan cheese (optional) or romano cheese, as desired (optional)
1 sprig fresh basil (to garnish)

Steps:

  • Preheat oven to 350°F.
  • In a small bowl, combine marinara sauce and basil, blending well; set aside.
  • With a sharp knife, remove stems from mushrooms; coarsely chop stems and set aside.
  • Arrange mushrooms, rounded-side-down in a 12 x 8 x 2-inch baking dish and set aside. In a medium bowl, combine chicken, marinara/basil sauce, garlic, green onion, peppers, Italian parsley, and Italian herbs, if desired, mixing well. May add salt and pepper to taste, if desired.
  • Press mixture onto mushrooms, dividing evenly and fitting each mushroom.
  • Bake, loosely covered with aluminum foil, in a preheated moderate oven (350 degrees F.) for 20 to 25 minutes.
  • Uncover and sprinkle each mushroom with shredded mozzarella cheese or cheese of choice and continue baking, uncovered, for 6 to 7 minutes, or until cheese is melted.
  • Sprinkle each lightly with Parmesan or Romano cheese, if desired, and continue baking for 6 to 8 minutes or until cheese becomes lightly browned.

4 Portobello mushrooms, stems removed and finely chopped
2 tbsp olive oil
½ onion, finely chopped
2 garlic cloves, finely chopped
200g/7oz spinach
100g/3½oz goats' cheese or other creamy cheese
100g/3½oz roasted red peppers (from a jar) drained and roughly chopped
50g/1¾oz cheddar, grated
squeeze lemon juice, optional
salt and freshly ground black pepper

Steps:

  • Heat the oven to 190C/170C Fan/Gas 5. Brush the mushrooms with 1 tablespoon of the olive oil and place, cap side up, on a baking tray. Bake for 20 minutes until beginning to soften.
  • Meanwhile, heat the remaining oil in a frying pan. Add the onion and mushroom stems and cook for 3 minutes until beginning to soften. Add the garlic and spinach and season with salt and pepper. Cook over a medium heat until the spinach has wilted. Increase the heat and cook until all the liquid in the pan has evaporated. Remove from the heat.
  • Spoon the goats' cheese, red peppers and half of the Cheddar into a bowl. Add the cooked spinach mix and combine. Season with salt, pepper and a squeeze of lemon juice, if using.
  • Remove the mushrooms from the oven, turn them over and divide the filling between each one. Sprinkle the remaining Cheddar over the top.
  • Return to the oven and bake for a further 15 minutes, until the mushrooms are tender and the cheese is golden.

4 tablespoons butter, melted
1/4 cup onion, finely chopped
2 tablespoons dry white wine
1/4 cup dry breadcrumbs
1/4 cup cooked bacon, drained & finely chopped

2 tablespoons olive oil
1 garlic clove, minced
1 teaspoon oregano leaves, dried
salt & pepper, to taste
1/2 cup monterey jack cheese, finely shredded

Steps:

  • Remove mushroom stems from mushrooms; chop enough stems to measure 1/4 cup.
  • Place mushroom caps on a buttered baking sheet and set aside.

24 large stuffing mushrooms (stems removed and reserved)
3 tablespoons olive oil (divided)
2 cloves garlic (minced)
20 ounces ground Italian sausage
1/2 medium green bell pepper (diced)
1/2 medium white onion (grated)
3/4 cup gluten free bread crumbs
1 tablespoon dried parsley
1/2 teaspoon salt

Steps:

  • Preheat oven to 400°F.Using your hands, lightly rub mushroom caps with 1 tablespoon of olive oil. Place oiled caps in a single layer in a baking dish.
  • Chop about 1/2 of the reserved mushroom stems and set aside. Toss remaining stems or reserve for another use.
  • Heat remaining 2 tablespoons of olive oil in a large saute pan. Add garlic and saute for 2 minutes. Add sausage and cook until browned and no longer pink.
  • Add pepper, onion, and chopped mushroom stems. Continue to cook until vegetables soften, about 3-5 minutes.
  • Remove pan from heat and stir in bread crumbs, parsley, and salt until thoroughly combined.
  • Fill mushroom caps with stuffing using a small scoop of large spoon. Bake in the middle of the oven for 15 minutes, or until heated through. Serve warm.

Salt , to taste

Steps:

4 slices of bread processed into fine crumbs in food processor
2 tbs butter
1 lb. button mushrooms, wiped clean and chopped and the stems from the large mushrooms (I used the food processor)
1 tablespoon ricotta cheese
¼ cup freshly grated parmesan cheese
2 tbs butter
¼ cup finely chopped onion
1 clove garlic finely minced
2 slices bacon, chopped into small pieces
½ tsp salt
Black pepper to taste
2 tbs grated carrot
1 tbs olive oil
½ tsp mixed herbs
8 large portobello or field mushrooms, cleaned or peeled, stems removed

Steps:

  • In a frying pan, saute bacon pieces for a few minutes and then add the carrot and onions with a little bit of salt and cook for 2 minutes.
  • Add the mushrooms and butter and cook on medium high heat for 2 minutes and then add the garlic and cook for a minute or so longer. Set aside to cool in a bowl.
  • In the same frying pan melt 2 tbs butter and when it begins to foam add the bread crumbs and stir to coat. Do not let them turn brown - the oven will do that bit.
  • To the bowl with the mushroom mixture add the ricotta cheese, parmesan cheese, remainder of the salt, some black pepper and the mixed herbs and stir to combine.
  • With a pastry brush, spread oil over the top and bottom of the large mushrooms and place cavity side up in a greased baking pan. (I used spray oil but you could use baking paper)
  • Divide the mushroom mixture between the mushrooms, piling it in the center.
  • Place in oven for 10 minutes before topping with the buttered bread crumbs and bake for an additional 15 minutes or until the crumbs are golden brown.
  • Garnish with chopped parsley.
