3 tablespoons canola oil
4 chicken breasts, boneless, skinless, rinsed and patted dry
salt
pepper
2 (16 ounce) cans pinto beans, undrained (recommended -- Bush's)
2 (10 ounce) cans tomatoes, Mexican, diced (recommended -- Ro-tel)
1 tablespoon seasoning, fajita, low-sodium (recommended -- The Spice Hunter)

Steps:

  • Heat the oil in a large skillet over medium-high heat.
  • Season chicken breasts with salt and pepper. Place in the skillet and sear about 2 minutes per side.
  • Place pinto beans in the bottom of a 5 quart slow cooker.
  • Remove chicken from skillet and place in the slow cooker on topof the beans. Pour the tomatoes over th chicken and beans and sprinkle with fajita seasoning. Cover and cook on LOW setting for 3 to 4 hours.
  • STOVE TOP INSTRUCTIONS:.
  • Preheat oven to 350 degrees F. Heat the oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper. Place in the skillet and sear about 2 minutes per side. Place pinto beans in the bottom of a 9 by 13-inch baking dish. In a medium bowl, stir together diced tomatoes and fajita seasoning. Remove chicken from skillet and place in the baking dish on top of beans. Pour tomato mixture over the chicken and beans. Cover with foil and bake for 25 minutes or until chicken is tender.

1/4 cup vegetable oil
3 tablespoon red wine vinegar
1-1/2 teaspoons sugar
1-1/2 teaspoons chili powder
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
1-1/2 pounds boneless skinless chicken breasts, cut into thin strips
8 flour tortillas (10 inches), warmed
2 cups shredded lettuce
2 cups shredded cheddar or Monterey Jack cheese
1 large tomato, diced
3/4 cup sour cream
Taco sauce

Steps:

  • In a glass bowl or resealable plastic bag, mix first eight ingredients. Add chicken; toss to coat. Cover or close bag and refrigerate for 4 hours. Drain, discarding marinade. , Saute chicken in a large skillet over medium heat for 6-7 minutes or until juices run clear. Spoon about 1/2 cup chicken down the center of each tortilla. , Top with lettuce, cheese, tomato, sour cream and taco sauce. Fold in sides of tortilla and serve immediately.

1/2 cinnamon stick, broken into small pieces
1 teaspoon sesame seeds
1/2 teaspoon whole cloves
1 tablespoon chili powder
1 tablespoon olive oil
2 garlic cloves, minced
1 medium yellow onion, chopped
3/4 cup reduced-sodium chicken broth
1/4 cup no-salt-added tomato sauce
2 tomatillos, peeled and chopped
1 large tomatoes, chopped
4 boneless skinless chicken breast halves

Steps:

  • In a small nonstick skillet combine cinnamon stick, sesame seeds and cloves. Cook over low heat, stirring, until fragrant, about 3 minutes. Stir in chili powder.
  • In a blender, food processor or small coffee grinder, process the spice mixture until ground. Set aside.
  • In a small sauce pan, heat oil over medium heat. Add garlic and onion. Cook, stirring, until softened, about 3 minutes. Add broth, tomato sauce, tomatillos, tomato and reserved spice mixture.
  • Meanwhile, preheat broiler. Sprinkle chicken with 1 tsp ground cinnamon (not from mixture prepared above). Broil, turning once, until no longer pink, about 10 minutes. Place on serving plates; spoon sauce over top. Serve immediately.
  • Optional cooking methods.
  • Crock Pot -- Complete steps 1 - 3, place mixture and raw chicken in crock pot and cook until chicken is no longer pink inside.
  • Stove top -- Complete step 1 - 3, bring sauce mix to a boil and then add raw chicken. Cook until chicken is not longer pink inside.
