MICROWAVE NUT BRITTLE
Steps:
- Chop the nuts or seeds if they are large; otherwise, leave them whole. Put them into a 4-quart glass bowl with all other ingredients except the baking soda and vanilla extract. Stir in 3/4 cup water. Heat in a microwave oven on high power for 5 minutes. Using oven mitts or potholders, carefully transfer the bowl to a countertop and stir with a heat-resistant spatula. Repeat 2 or 3 more times, until the syrup thickens and the nuts begin to stick together. Then heat for 1-minute periods, stirring in between, until the syrup begins to turn light golden brown.
- Line a baking sheet with foil. Add the baking soda and vanilla extract to the syrup and stir vigorously. Quickly pour the mixture out onto the baking sheet and use the spatula to spread it as thin as possible. Allow to cool to room temperature, then peel off the foil and break the brittle into pieces. Store in an airtight container.

This is a really simple way of making nut brittle, without using a candy thermometer or doing any of the stage tests. A trick that I use is to line the cookie sheet with parchment paper so there's no sticky stuff to pry off and then wash up.

Steps:
- Spray cookie sheet and metal spatula with the cooking spray.
- In a 2-quart microwavable glass measuring cup or bowl stir sugar, corn syrup and salt with a wooden spoon until mixed.
- Microwave on High (100%) 7 to 8 minutes or until syrup is pale yellow.
- (CANDY SYRUP IS VERY HOT. HANDLE CAREFULLY; DO NOT TOUCH HOT MIXTURE.) Stir in nuts.
- Microwave 1 to 2 minutes or until nuts are lightly browned.
- Immediately stir in margarine, vanilla and baking soda until foamy.
- Quickly pour onto prepared cookie sheet; spread evenly with spatula.
- Cool; break into pieces.
- Store in tightly covered container.

- Spray a heatproof spoon with cooking spray. Stir sugar and corn syrup together in a 2-quart microwave-safe bowl using the greased spoon. Microwave on high until very bubbly, 2 1/2 to 4 minutes.

I had this recipe years ago and managed to lose it, but found a friend at work that had it and I am back in the brittle business. It is extremely easy and quick to make. Since most people have the ingredients in their pantry and freezers, it is a recipe that can be made up in a few minutes if unexpected guest show up.

- Line baking sheet with wax paper.
- Spray wax paper with Pam.
- Combine sugar, salt and Karo in a 3 quart microwave safe glass bowl.
- Stir in peanuts.
- Microwave on high until light brown (8 to 10 minutes) stirring at least 2 times during cooking.
- Remove from microwave and stir in remaining ingredients adding baking soda last (mix will be foamy).
- Stir quickly and pour onto wax paper.
- Spread thin for brittle candy.
- Note: You can use any type nuts you prefer or even sunflower seeds (which is my favorite).
BEST EVER MICROWAVE PEANUT BRITTLE
Note your microwave needs to be 750 to 950 watt. If your microwave is higher need to lower your cooking times and if your microwave is less you will need to increase your cooking time. I'm sorry I did not update this sooner.

- Butter large baking sheet. In microwave-proof bowl, combine peanuts, sugar, corn syrup and salt. Microwave on High until mixture bubbles vigorously, about 6 minutes. Remove mixture from microwave and stir in butter and vanilla. Return to microwave and cook on High until candy turns light gold color, about 3 minutes. Remove bowl from microwave. Working quickly, add baking soda to candy mixture and stir briskly (mixture will foam up). Immediately pour out onto prepared baking sheet. Shake baking sheet from side to side to spread brittle as thinly as possible. Let stand until cold and hard, about 2 hours. Break brittle into pieces. Store in airtight container at room temperature for up to 1 month.
MICROWAVE PEANUT BRITTLE
This puts store bought peanut brittle to shame. I prefer to use the skinless peanuts because I think the skins are bitter. The amount listed below for the peanuts is if you're using Virginia peanuts. If you're using Spanish peanuts then reduce the amount of peanuts to 1 1/2 cups. Be sure to watch the candy carefully the first time you make it.

- Combine peanuts, sugar, corn syrup, and brown sugar in a large microwave safe bowl. Mixture will be quite gummy.
- Microwave on high power for 2 minutes and then stir.
- Continue microwaving the peanut brittle a couple minutes at a time until the peanuts are a nice roasted brown color. Be sure you're looking at the peanuts themselves and not the syrup surrounding them. The time this takes will vary according to your microwave. When the syrup starts to get really hot you may want to check every minute or less to prevent it from burning.
- After the peanuts are cooked quickly stir in the butter, vanilla, and baking soda.
- Pour the candy out on to a sheet of aluminum foil and spread it as thin as you can get it.
- Let the candy cool completely before breaking it into pieces.
