1 1/4 cups white wine
3/4 cup chicken broth
1 teaspoon butter
1 1/2 lbs baby carrots

Steps:

  • In a wide frying pan, combine wine, broth and butter. Bring to a boil over high heat. Add carrots; reduce heat, cover, and simmer, stiring occasionally until carrots are tender when pierced (10 to 15 minutes).
  • Uncover pan, bring cooking liquid to a boil over high heat. Boil, uncovered, stirring often, until liquid evaporates and the carrots begin to brown (about 10 minutes).

Carrots in White Wine Sauce image

These golden petite carrots in this creamy sauce and white wine are nicely enhanced by the flavor of the chives. Makes a great side dish with your holiday ham or turkey even roast.

12 oz bag petite carrots
4 Tbsp butter
3 Tbsp chives, dried
1/4 tsp salt
1 1/2 Tbsp water
5 tsp all purpose flour
1 c light cream
1/4 c white wine

Steps:

  • 1. In a small sauce pan add the butter in chunks,melt slightly ,then add the carrots and chives. Cover and saute about 3 minutes.
  • 2. Stir in the salt and the water. Cover and simmer until carrots are almost tender, about 8 minutes. Sprinkle with the flour and cook, stirring until flour is bubbly.
  • 3. Remove from heat and gradually stir in the cream and white wine. Cook, stirring until thickened. Serve with your favorite dinner menu. Note: When cooked, alcoholic content evaporates off leaving the desired flavor.

I love this dish made with baby carrots, but feel free to use fat old ones sliced at an angle if you please. Butter and wine make a fantastic sauce which just makes it for me. Serve with anything you like.

1 pound baby carrots, preferably organic, scrubbed and left whole, tops removed
1/2 teaspoon cumin seeds, crushed
1 handful fresh thyme leaves
4 knobs butter (about 4 tablespoons)
Salt and freshly ground black pepper
1 glass Chardonnay (about 5 ounces)

Steps:

  • Preheat the oven to 425 degrees F. Tear off around 5feet of kitchen foil and fold it in half to give you double thickness. Place everything but the wine and seasoning in the middle of the foil. Bring up the sides and pour in the white wine. Season well. Fold or scrunch the foil together to seal. Cook in the preheated oven for 45 minutes until the carrots are tender. You may need to cook it for longer if the carrots are bigger than baby ones;

Steps:

  • Melt butter and sauté carrot slices and onion bulbs for 5 minutes.
  • Stir in sugar, spices and wine.
  • Cover and simmer for 25 minutes.
  • When done and ready to serve, top with sour cream and sprinkle with parsley.

1 large leek (white and pale green parts only), halved lengthwise
5 carrots, quartered
1 head garlic, separated into cloves and peeled
2 red bell peppers, quartered
1 pound plum tomatoes, halved
1 fennel bulb, stalks discarded and bulb quartered
2 large onions, quartered
2 tablespoons olive oil
1 cup boiling water
1/2 ounce dried porcini mushrooms (1 cup)
1 (4-inch) piece celery
4 parsley stems
1 large thyme sprig
8 black peppercorns
2 Turkish bay leaves or 1 California
1 cup dry red wine
4 quart water
1/2 cup sun-dried tomatoes (not packed in oil; 1 1/2 ounces)
1/2 stick unsalted butter
1/3 cup all-purpose flour
Equipment: cheesecloth; kitchen string

Steps:

  • Roast vegetables:
  • Preheat oven to 450°F with rack in middle.
  • Wash leek halves and pat dry.
  • Toss leek, carrots, garlic, bell peppers, plum tomatoes, fennel, and onions with oil, then spread in a 17- by 14-inch roasting pan and roast, stirring occasionally, until well browned and tender, 1 1/4 to 1 1/2 hours.
  • Soak porcini and make bouquet garni while vegetables roast:
  • Pour boiling water over porcini in a bowl and soak until softened, 10 to 20 minutes.
  • Meanwhile, wrap celery, parsley stems, thyme sprig, peppercorns, and bay leaves in a piece of cheesecloth and tie with string.
  • Lift out porcini, squeezing excess liquid back into bowl, and rinse to remove any grit. Pour soaking liquid through a sieve lined with a dampened paper towel into another bowl.
  • Make stock:
  • Transfer roasted vegetables to a 6- to 8-quart pot and add wine to roasting pan, then deglaze pan by boiling, scraping up brown bits, 1 to 2 minutes. Add wine to vegetables in pot along with water (4 quarts), porcini and soaking liquid, bouquet garni, sun-dried tomatoes, and 2 teaspoons salt. Bring to a boil, then simmer, uncovered, until stock is reduced to about 6 cups, about 2 hours. Pour through a fine-mesh sieve into a large bowl, pressing firmly on and then discarding solids.
  • Make sauce:
  • Melt butter in a 3-quart heavy saucepan over medium heat and whisk in flour, then cook roux, whisking, 3 minutes. Add stock in a stream, whisking constantly to prevent lumps, then bring to a boil, whisking. Reduce heat and simmer, whisking occasionally, until slightly thickened, about 10 minutes. Season with salt and pepper.

I came up with this on my own. I was inspired by a couple different leek recipes on. My touch is the rosemary, wine and bacon. Turned out delicious and thought I'd share. Delicious side dish.

1 bunch leek, carefully cleaned and sliced
3 carrots, peeled, sliced and thinly sliced into circles
1 slice bacon, fried, crumpled and set aside
1 tablespoon bacon drippings, reserved
1/2 teaspoon fresh rosemary
1/2 cup Chardonnay wine
1/2 pint heavy whipping cream
salt & freshly ground black pepper

Steps:

  • Using bacon drippings, sauté leeks, carrots and rosemary until leeks are opaque. About 15 minute.
  • Deglaze pan with half of the wine and simmer until reduced and cooked into the leeks(about 10 minutes).
  • Add the cream and simmer, covered, until leeks and carrots are tender.
  • Add the remaining wine and bacon that had been set aside and simmer until reduced to desired consistency and tenderness.
  • This takes me about 20 minutes as we like our leeks really tender, but the carrots turn out al-dente.
  • **NOTE: If you prefer carrots that are softer, then parboil them prior to sautéing.
  • The timing is an estimate as I really wasn't planning on posting this, but after we ate it I figured it deserved a place on here :-). ENJOY!
