CREAMY MACARONI SALAD

Creamy Macaroni Salad image

I have looked all over for a great macaroni salad; this one is it! It's easy and is a huge hit at every function I take it to. The sauce for this is a great creamy sauce. I like my salads to have a lot of creamy dressing, so I always make an extra half batch of the wet mix and add it as necessary to get the salad more wet because the pasta soaks up the sauce.

SUPER EASY MACARONI SALAD

Super Easy Macaroni Salad image

This is great for someone with little time and money. I couldn't find anything this simple when I was looking so I thought I would add it. You can add or substitute many different things. CREAMY MACARONI SALAD

Creamy Macaroni Salad image

This is my own macaroni salad. I did not get it from my mother or my grandmother and I did not get it out of a book or off the internet. It is not Amish, Cajun, Mexican or any other description of the various macaroni salads that are posted on the internet. It is my own made up salad. It is designed after my own recipe #20155 that I have posted on Recipezaar (with 121 high reviews, thank you very much to those that have tried it). The dressing is mostly the same, but there are a few other ingredients in this salad that is not in my potato salad. I hope some of you will enjoy it as much as you did the other.

THE BEST MACARONI SALAD EVER

The Best Macaroni Salad Ever image

This macaroni salad recipe is creamy but still light, sweet but tangy, and has a wonderful mix of flavor, spice, and texture. And you can make it fast, in less than 30 minutes!

Categories     main dish     salad

Time 25m

Yield 12 servings

Number Of Ingredients 12

4 c. elbow macaroni
1/2 c. mayonnaise
1 tbsp. red wine or distilled vinegar
3 tsp. sugar, more or less to taste
1/4 tsp. salt, more to taste
Plenty of black pepper
1/4 c. milk (more if needed)
Splash of pickle juice, more to taste
3 whole roasted red peppers, more to taste (can also use pimentos)
1/2 c. black olives, finely chopped
6 sweet/spicy pickle slices, diced (about 1/2 cup diced)
3 green onions, sliced (white and dark green parts)

Steps:

  • Cook the macaroni in lightly salted water according to the package directions. Drain and rinse under cold water to cool. Set aside.
  • Mix together the mayo, vinegar, sugar, salt, and pepper. Splash in enough milk to make it pourable. Splash in pickle juice for extra flavor. Taste and adjust seasonings as needed. Set aside.
  • Place the cooled macaroni in a large bowl and pour in 3/4 of the dressing. Toss and add more dressing if you'd like. (The dressing will seem a little thin, but it will thicken up as the salad chills.)
  • Stir in the roasted red peppers (or pimentos), olives, pickles, and green onions. Add more of any ingredient if you'd like more stuff going on! At the end, splash in a little more pickle juice and stir.
  • Chill for at least 2 hours before serving. Sprinkle with sliced green onions to serve!

  • Boil a large, salted pot of water for the macaroni and cook it al dente according to package directions. Drain it then rinse it under cold water and set aside (let it drain well).
  • At the same time as the pasta is boiling, cook the eggs in a separate pot until they're hard-boiled. I simply time 10 minutes from the point where they start to boil. I cool them by running cold water over them for a few minutes. Peel the eggs once they've cooled.
  • Meanwhile, make the dressing by combining the dressing ingredients in a measuring cup or small bowl, and prep the remaining ingredients (pickles, celery, onion).
