Steps:
- Preheat a grill to medium high. Combine 2 tablespoons oyster sauce, 1 tablespoon vegetable oil, the five-spice powder, 1/2 teaspoon salt and a few grinds of pepper in a large bowl. Add the chicken and toss to coat.
- Oil the grill grates. Grill the chicken until lightly charred and cooked through, 5 to 6 minutes per side. Transfer to a cutting board and let rest.
- Meanwhile, bring a medium saucepan of salted water to a boil. Add the noodles and cook as the label directs, adding the carrots and snow peas during the last minute of cooking. Drain the noodles and vegetables and transfer to a large bowl. Wipe out the saucepan and reserve. Snip the noodles into shorter pieces with kitchen shears.
- Finely chop the scallions and ginger in a food processor. Heat the remaining 5 tablespoons vegetable oil in the reserved saucepan over medium-high heat. Add the scallion-ginger mixture and cook, stirring, until softened, about 2 minutes. Remove from the heat and stir in the soy sauce and vinegar. Add to the noodle mixture, season with salt and pepper and toss. Divide among plates; drizzle with the remaining 3 tablespoons oyster sauce.
- Slice the chicken and serve over the noodles.

ROASTED CHICKEN THIGHS WITH PEACHES, BASIL AND GINGER
A ripe, succulent peach is one of nature's greatest gifts. But a hard peach? It, too, is a gift, especially in this simple recipe from Melissa Clark. A roast in a 400-degree oven cooks the peaches alongside boneless, skinless chicken thighs, drawing out their flavor and softening them as they meld with those flavorful drippings. Speaking of those pan juices, don't cast them aside: Sop them up instead with crusty bread. You won't regret it.

Steps:
- Heat oven to 400 degrees. Halve peaches, remove pits and slice fruit 1/2 inch thick.
- In a 9-by-13-inch pan, toss all ingredients except 1 tablespoon basil. Roast until meat is cooked through and peaches are softened, about 20 minutes. Garnish with remaining basil. Sauce will be thin, so serve with crusty bread for sopping or over rice.

GINGERY GRILLED CHICKEN THIGHS WITH CHARRED PEACHES
Coated in a balsamic vinegar glaze that's spiked with ginger, garlic and soy sauce, these chicken thighs are sweet-tart and irresistibly sticky. They're served with grilled thyme and honey butter-basted peaches, which become soft and wonderfully jammy on the fire. The yogurt is optional. It adds a cool and creamy counterpart to the char and smoke, but the dish is just as satisfying without it.

Steps:
- Marinate the chicken: In a small bowl, mix together balsamic vinegar, grated ginger and a pinch of salt.
- Season chicken all over with salt, and put it in a larger bowl or resealable bag. Add 2 tablespoons of the balsamic mixture. (Give it a stir before measuring in case any of the ginger has fallen to the bottom. Save remaining balsamic for serving.) Add the thyme, garlic, soy sauce, and 1 teaspoon lime juice. Cover bowl or close bag, and let chicken marinate in the refrigerator for at least 2 hours and up to overnight.
- Light the grill or heat the broiler, arranging the rack about 4 inches from the heat source.
- Prepare the peaches: In a bowl, combine butter, thyme and honey. Brush peaches lightly with butter mixture and place in a grilling basket, if you have one, or directly on the grill. Grill over direct heat until just charred, 2 to 4 minutes per side. You'll know they are done when the skin curls back and the flesh starts to melt. Transfer to a serving platter or plates, and, if you like, drizzle with a little more of the butter mixture and sprinkle with flaky sea salt.
- If there's room on the grill, cook the chicken at the same time (or wait until peaches are done). Brush off any clinging pieces of marinade from chicken, pat it dry, and coat lightly with oil. Grill or broil until charred and browned, 4 to 6 minutes per side.
- Transfer chicken to a platter or serving plates, along with the peaches. Serve with dollops of yogurt on the side if you like, and a drizzle with some of the remaining gingery balsamic and a little more olive oil. Scatter with scallions and basil, if using, for garnish.
GINGER-AND-SPICE CHICKEN THIGHS
Every once in a while, I get in the mood for some of the "sweets" spices in my dinner entree. The recipe calls for skinned, boned chicken thighs, but I always use regular ol' chicken thighs. This recipe is from Cooking Light magazine.

This sweet and sour chicken main dish has become a favorite recipe to prepare on Sunday. It's easy to prepare and requires very little clean up, plus the slow cooker leaves me plenty of time to do other things. -Lisa Renshaw, Kansas City, Missouri

- Season chicken thighs all over with salt. Separate out 2 T. of the balsamic vinegar, ginger and garlic into another bowl. Add the rosemary, garlic, soy sauce and 1 t. of lime juice. This will be your chicken marinade. Place the seasoned chicken thighs into a ziplock bag or a bowl that will hold them all closely. Close the bag, or cover the bowl with plastic wrap and allow them to marinate in the fridge for 1 - 2 hours, turning them at around the halfway mark, so as to allow both sides of the chicken to have time resting in the marinade.
- Prepare the peaches: in a bowl combine melted butter, rosemary and honey. Brush peaches with herbed honey butter mixture. Grill over direct heat until you have grill marks, about 2-4 minutes per side. transfer them to a serving platter, and brush with more herbed honey butter. Sprinkle with sea salt.
