Sweet beets temper fierce horseradish while adding bright color to a traditional Passover condiment.

- Scrub beets; trim stems to 1/2 inch. Place beets in a medium saucepan; add water to cover by 1 inch. Bring to a boil over high heat. Reduce heat to medium high; cook at a gentle boil until beets are tender when pierced with a small, sharp knife, 30 to 40 minutes. Remove from heat, drain, and set beets aside until cool enough to handle.
- Meanwhile, grate horseradish on small holes of a box grater. Place in a small bowl; stir in vinegar, salt, and sugar.
- Peel beets; grate on small holes of box grater. Add to horseradish mixture; stir well to combine. Keep covered to preserve flavor, and refrigerate until needed.

BEET SOUP WITH HORSERADISH CREAM

- In medium bowl, stir together sour cream and horseradish. Cover and refrigerate until ready to use.
- In 6-quart stock pot over moderate heat, heat oil until hot but not smoking. Add onions, celery, and garlic and sauté until onions are translucent, about 10 minutes. Add beets and stir until lightly coated with oil. Add 8 cups water, cover, and bring to boil. Reduce heat to low and simmer until beets are tender and easily pierced with fork but not falling apart, about 1 hour.
- Remove from heat and stir in lemon juice, sugar, coriander, salt, and pepper. Serve hot, topped with horseradish cream, or serve chilled.

- : If you plan on serving this soup at two seders and want some variety on the second night, try this twist that combines Eastern European knaidlach (matzoh balls) and Middle Eastern kibbeh (meatballs): Prepare matzoh ball dough (you can use a packaged mix) and chill at least 15 minutes. Meanwhile, in a large bowl, stir together ground beef or lamb, chopped onion, chopped celery, chopped fresh mint, a pinch of cinnamon, a pinch of nutmeg, salt, and pepper. Form the meat into mini-meatballs. Wrap matzoh ball dough around each meatball to form "knaidlach kibbeh." Boil the balls according to the package directions (the meat will cook inside them). Place two balls in each bowl of hot soup.

- Preheat the oven to 375 degrees F (190 degrees C).
- Place carrots in a pot and add water to cover. Bring to a boil. Reduce heat to a simmer and cook until tender, 6 to 8 minutes. Drain carrots, reserving 1/4 cup of the cooking liquid. Transfer carrots to a shallow baking dish.
- Mix reserved cooking water, mayonnaise, onion, horseradish, salt, and pepper together in a small bowl until combined; pour over carrots.

- Preheat oven to 375.
- Wash and trim beets, but do not peel.
- Place on a large piece of foil and sprinkle with salt and pepper, then fold up in a loose package sealing seams tightly.
- Place foil package on a baking sheet and roast for 1 hour or until beets are tender.
- Let cool, then peel and thinly slice the beets.
- Refrigerate until serving.
- Whip cream until thick but not stiff, fold in sour cream and horseradish and season with salt and pepper.
- Refrigerate until serving.
- To serve, slice onion into thin rings, divide lettuce among serving plates.
- Top with beet slices and onion rings and drizzle with dressing.
- Sprinkle dill on top.

BEET AND RED ONION POTATO LATKES WITH CARROT PUREE AND HORSERADISH AND CARAWAY CREME FRAICHE

- Heat the oil in a medium saucepan, over medium heat. Add the carrots and saute for 2 minutes. Stir in the carrot juice and simmer until the liquid has reduced by 5/6. Put the carrot mixture in a blender and puree until smooth. Transfer to a serving bowl and serve at room temperature.
- Mix all of the ingredients in a small bowl and let sit, ideally for 24 hours in the refrigerator. Serve cool.
- Using the grating attachment in a food processor, grate the potatoes, onions, carrot and beet separately. Coat a small saute pan with a little oil and put it over low heat. Add half of the grated onions and saute them slowly until caramelized, soft and sweet. Using a colander, squeeze all the excess liquid out of the remaining vegetables and then combine all of the ingredients in a mixing bowl.
- Add the 2 cups of oil to a medium skillet and heat it to 370 degrees F. Put 2 ounces of the latke mixture into the oil and cook until brown on 1 side, approximately 2 minutes. Using a slotted spoon or spatula, flip the latke and continue to cook until brown on the other side. Remove from oil to a paper towel covered tray and immediately season with salt, to taste. Continue with the remaining mixture. Arrange the latkes on a serving platter and serve immediately with the carrot puree and the horseradish and caraway creme fraiche.
BAKED HORSERADISH CARROTS
Any leftovers may be gently reheated, although I have been known to eat them cold for lunch. Yields 4 to 6 servings.

- In a small bowl, combine the mayonnaise, onion, horseradish, salt, and pepper. Set aside. (This mixture may be prepared 1 to 2 days in advance, covered, and refrigerated.) Cook the carrots in a covered saucepan in a small amount of water until they are crisp-tender. (Taste them to make sure-this is the best way to avoid mushy carrots.) Drain the carrots well, and return to the pan. Stir the horseradish mixture into the carrots, tossing to evenly coat. Transfer the carrots to a lightly greased 1 1/2-quart baking dish. (A small casserole or an 8-inch square baking dish work well.) Mix the crushed crackers with the 2 teaspoons melted butter or oil. Sprinkle evenly over the carrot mixture. At this point, the carrots may sit on the counter for up to 2 hours before baking. You may also cover and refrigerate. In this case, I like to add the cracker crumbs just before baking and allow the carrots to sit at room temperature while the oven is preheating. When ready to cook, preheat the oven to 350 degrees F. Bake, uncovered, for approximately 15 to 20 minutes or until heated through. If you'd like the cracker crumb topping to brown a little more, briefly broil the carrots, watching very carefully so as not to burn. Garnish with a light sprinkle of fresh parsley or dill, if desired.
GEFILTE FISH WITH BEET HORSERADISH

- To make the dumplings, cut the fish into 1 1/2-inch chunks and place in the freezer for 10 to 15 minutes to freeze partially. Transfer to a food processor and process to as fine a puree as possible. Add the onion, egg, matzo meal, salt, and pepper and continue processing to a paste. Cover and set aside in the refrigerator until quite firm, at least 1 hour or up to overnight.
- To make the beet horseradish, cook the beet in water to cover until it can barely be pierced, 20 to 30 minutes, depending on the size. Drain and let cool until it can be handled, then peel it while still warm. Grate on the medium-fine holes of a box grater. In a small bowl, combine the grated beet, horseradish, vinegar, sugar, and salt and stir to mix. Set aside at room temperature until ready to use or refrigerate for up to 2 days.
- To make the broth, combine the fish bones and heads, carrot, celery, shallot, salt, and water in a medium saucepan, adding more water if needed to cover the ingredients. Bring to a boil over high heat and skim off any foam that forms on the surface. Decrease the heat to maintain a brisk simmer, cover partially, and cook until slightly reduced, about 30 minutes. Strain through a fine-mesh sieve into a large pot and bring to a simmer over medium-high heat.
- To cook the dumplings, with wet hands, form the fish mixture into ovals the size of a very large egg, using about 1/3 cup for each dumpling. Drop them into the broth and bring just to a boil. Cover the pot and simmer, adding more water if necessary to keep the dumplings afloat, until cooked through, about 1 1/2 hours. Transfer the dumplings and broth to a serving bowl, let cool until no longer steaming, and refrigerate until the broth sets into a loose gelée, 3 hours or so.
- Serve the gefilte fish and gelée cold with the beet horseradish on the side.
CARROT AND BEET SALAD WITH COCONUT LIME DRESSING
Fast, perfectly refreshing & vivid magenta (unless using golden beets). An awesome salad that is the perfect introduction to those not acquainted with the glories of raw beets. This recipe is from the New Orleans Vegetarian Society - published in The Times-Picayune. Oh & did I mention the dressing becomes magenta? BTW - this salad is really, really good for you - reduce the dressing if the calories from the coconut milk worry you - save half for the next salad. BTW beets & carrots are great beginner gardener vegetables - everyone loves pulling a beautiful carrot or beet from the ground.

- Lay out a sheet of plastic wrap and spread the dill into a 12 by 4-inch rectangle in the center. Form the cheese mixture into a log in the center of the dill and roll up tightly, twisting the ends to seal. Refrigerate until firm, about 20 minutes.

- Make Pesto. While pesto is traditionally made with basil, you can use any kind of greens to make it. I love making pesto out of kale, spinach, radish greens or any greens I happen to have on hand.
- Make Vegetable Stock and Soups. Soups and stock are great ways to use up any veggies and their parts. Since they will just boil away in the liquid, you don’t have to worry about overcooking them and any bitterness will be taken care of.
- Make Salads. Advertisement. Whenever I make Borscht or beet soup, I make sure to buy beets with lots of greens attached. Then I make a salad with the greens to have with my soup.
- Saute the Greens. My favorite way to cook greens is to saute them in a pan with olive oil, garlic, shallots and a pinch of red pepper flakes. I don’t cook them long, just long enough to wilt and get bright green.
- Make Smoothies. Smoothies are a great way to use beet and carrot greens. It shouldn’t seem unusual since we already add plenty of greens like kale, spinach and chard to our smoothies.
- Swap Them In. Sometimes when I am out of parsley or cilantro, I garnish my dishes with whatever greens I have – kale, celery leaves, radish tops, etc.

- Whisk together the eggs, salt and pepper in a large bowl. Add the beets, carrots and onion and toss to combine. Sprinkle flour and cornstarch over top, then mix until incorporated.
