3 tablespoons unsalted butter
2 tablespoons firmly packed brown sugar
One 20-ounce can crushed pineapple
1/2 teaspoon vanilla extract
Pinch salt
Ice cream, for serving
Chocolate sauce, for serving

Steps:

  • Melt the butter and sugar in a medium skillet over medium heat. Stir until the sugar dissolves, about 3 minutes. Increase the heat to high. Add the pineapple and cook, stirring occasionally, until golden and coated in caramel, about 5 minutes. Remove the skillet from the heat and add the vanilla and salt. Divide the pineapple sauce among 4 sundae dishes. Top each dish with 1 scoop of ice cream and some chocolate sauce.

1 large bell pepper, cut into 1/2-by-2-inch strips

Steps:

  • Whisk the reserved 3 tablespoons pineapple juice, vinegar, soy sauce, ketchup and sugar in a small bowl until smooth. Place tofu in a medium bowl; toss with 2 tablespoons of the sauce. Let marinate for 5 minutes. Add cornstarch to the remaining sauce and whisk until smooth.
  • Heat 2 teaspoons oil in a large nonstick skillet over medium-high heat. Transfer the tofu to the skillet using a slotted spoon. Whisk any remaining marinade into the bowl of sauce. Cook the tofu, stirring every 1 to 2 minutes, until golden brown, 7 to 9 minutes total. Transfer the tofu to a plate.
  • Add the remaining 1 teaspoon oil to the skillet and heat over medium heat. Add garlic and ginger and cook, stirring constantly, until fragrant, about 30 seconds. Add bell pepper and cook, stirring often, until just tender, 2 to 3 minutes. Pour in the sauce and cook, stirring, until thickened, about 30 seconds. Add the tofu and pineapple chunks (or tidbits) and cook, stirring gently, until heated through, about 2 minutes more.

17 1/2 ounces (500 grams) tofu
2 to 3 tablespoons avocado oil, for frying (untoasted sesame or peanut oil would also be good)
1/2 cup water
8 3/4 ounces (250 grams) sugar
1 small finger ginger, peeled and finely julienned or sliced
1 small finger galangal, peeled and finely julienned or sliced
1 to 2 red chiles, finely sliced
1 lemongrass stem, cut off the base, peel and discard the outer two layers, and finely slice the lower 2 inches
1 teaspoon dried shrimps, pounded in a mortar and pestle
4 lime leaves
1/3 cup lemon juice
1 tablespoon fish sauce

Steps:

  • Note: This dish utilizes the subtlety and texture of tofu to serve as a vehicle for the spicy flavors of the sweet dressing. The combination of the 2 works really well.
  • Slice the tofu into 4 pieces and place them in a single layer on absorbent paper, lay some more paper on top and gently press down, leave for 20 minutes. This drains off excess water and makes frying easier.
  • Heat up a fry pan and drizzle in the oil, add the tofu and fry until golden, gently flip over, and cook on the other side. Take out of the pan and place on a plate. Place a wok over heat and add the water and sugar. Stir until the sugar has dissolved and cook over a moderate heat, without stirring, until the sugar begins to caramelize and goes a golden amber color. Now add the ginger, galangal, chiles, lemongrass, shrimps, and lime leaves and stir it into the caramel. It will firm up a little, but keep it cooking over the heat for 20 seconds, then add the lemon juice and fish sauce and bring to a boil. Spoon the sauce over the tofu and eat while warm.

TOFU-VEGETABLE SATAY WITH PEANUT SAUCE



Tofu-Vegetable Satay With Peanut Sauce image

Caramelized pineapple, tofu and vegetables take center stage in these vegan satay, which are inspired by Indonesian charcoal-grilled skewers. Here, the smoky satay are glazed with sweet and sticky kecap manis, a fermented sweet soy sauce (see Tip), which also flavors the peanut sauce along with garlic, shallots and chile. The sauce is meant to be generously poured over the satay to serve, but any leftovers will last for one week in the refrigerator. The sauce thickens over time, so loosen it with extra water as needed. Serve the satay and peanut sauce with steamed rice or noodles, and a side of stir-fried greens or roast potatoes. 1 (14-ounce) package firm tofu, drained
5 large scallions
1 large eggplant (about 1 pound), cut into 1-inch cubes
1/2 large (4-pound) pineapple, peeled, cored and cut into 1-inch cubes
1 large red bell pepper, cut into 1-inch pieces
24 (8-inch) bamboo skewers, soaked overnight (or at least 30 minutes)
1/4 cup neutral oil, such as canola
3 tablespoons neutral oil, such as canola
2 medium shallots, peeled and sliced
4 long, red, medium-spicy chiles (such as serrano, cayenne or finger chiles), sliced and seeds removed, if you prefer less heat
6 garlic cloves, peeled and sliced
2/3 cup/150 grams crunchy peanut butter, natural or conventional
10 tablespoons kecap manis (see Tip)

Steps:

  • Prepare the satay: Place the tofu in a folded dish towel and gently press to remove excess liquid. Cut tofu into 1-inch cubes.
  • Cut the thicker white and light green stalks of the scallions into 1-inch pieces. Thinly slice the thinner, dark green scallion stalks on the diagonal and reserve for the garnish.
  • Make the peanut sauce: Heat 1 tablespoon oil in a large skillet over medium-high. Add shallots, chiles and garlic, and cook, stirring occasionally, until softened, 4 to 5 minutes. Transfer to a food processor or blender. Add the peanut butter, 5 tablespoons kecap manis and ⅓ cup plus 1 tablespoon water, and blend until almost smooth. (It makes about 1 ½ cups.) Transfer sauce to a small bowl. (If the sauce thickens, add more water by the tablespoon until it is pourable.)
  • Assemble the satay: Place a cube of eggplant onto a bamboo skewer, followed by a piece of pineapple, bell pepper, scallion, tofu and another piece of eggplant. Repeat with the remaining skewers.
  • Heat the grill or a griddle pan over high. Use a pastry brush to dab the 1/4 cup oil all over the skewers. Once hot, line the skewers on the grill or griddle pan, working in batches as needed. Cook for 10 to 12 minutes, turning every 2 to 3 minutes with a metal spatula or tongs, until the eggplant is cooked through. Transfer to a plate.
  • Prepare the glaze: Mix 4 tablespoons kecap manis with the remaining 2 tablespoons oil. Brush the glaze all over the skewers.
  • Pool about 1 cup peanut sauce onto a large serving plate, spreading it close to the edges of the plate. Lay the cooked skewers on top, then spoon the remaining peanut sauce on top. Drizzle lightly with 1 tablespoon of kecap manis, and garnish with the sliced scallions.

1/2-3/4 lb extra firm tofu (8 ounces)
cornstarch, to coat
1 -2 teaspoon olive oil (or vegetable oil)
1 cup pineapple chunk (fresh or canned)
2 tablespoons vegetarian oyster sauce (mushroom sauce or use fish sauce but won't be vegetarian)
1/2 cup water
1 garlic clove, Minced
1 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon black pepper
2 green onions, Chopped
handful fresh cilantro, Chopped

Steps:

  • Place tofu between paper towels and press with cast iron frying pan or something heavy for about 10 minutes to get rid of excess moisture.
  • Cut into bite size pieces(about 1").
  • Dredge in cornstarch to coat, shaking off excess. Fry in oil till lightly browned and crispy, about 10 minutes.
  • If using canned chunk pineapple, drain juice.
  • Put pineapple, garlic, vegetarian oyster sauce and water in a small pot.
  • Add sugar, salt, black pepper and green onion. Stir well.
  • Cook on medium heat till the water is reduced and vegetables coated. Add tofu and stir to coat.
  • Top with cilantro.
  • Serve hot with rice.

  • Core and peel pineapple. Slice it lengthwise into eighths.

1 whole fresh pineapple, cored (about 20 oz.)
4 tablespoons unsalted butter
1/4 cup light brown sugar, packed
6 scoops vanilla ice cream or 6 scoops frozen yogurt
1/4 cup toasted almond, slivered
1/4 cup toasted coconut
2 bananas, sliced
fresh whipped cream
1 dash cinnamon

Steps:

  • Slice pineapple into eight rings and cut each ring into 8 pieces.
  • Warm butter in a large skillet over medium high heat. When butter begins to foam, add the pineapple and brown sugar (this is when you'd add the bananas if using that option).
  • Cook, stirring frequently and make sure you are turning the pineapple chunks over while stirring. This should take about 4-5 minutes - just until the pineapple is brown and all the sugar is dissolved.
  • Remove from heat and place into a shallow serving bowls and let cool 2-3 minutes.
  • Place a scoop of ice cream/frozen yogurt on each serving and top with other toppings if desired. Or you can serve with just a dollop of freshly whipped cream and a sprinkle of cinnamon.

2 tablespoons olive oil
1 tablespoon reduced-sodium soy sauce
1 medium onion, quartered and thinly sliced
8 baby carrots, halved lengthwise
1 cup frozen green peas
One 15- to 16-ounce can pineapple chunks or slices, drained (reserve juice for a different use)
One 15-ounce can baby corn, undrained
1 cup diced tomatoes
1 cup light coconut milk
2 stalks lemongrass, cut into thirds and bruised, optional
2 teaspoons good-quality curry powder, or to taste
2 tablespoons cornstarch
1/4 to 1 teaspoon red or green curry paste, optional
1/4 cup minced fresh cilantro
Salt to taste
Hot cooked grain (rice, quinoa, or couscous)

Steps:

  • Cut the tofu into 6 slabs crosswise. Blot well on paper towels, then cut into dice.
  • Heat 1 tablespoon of the oil with the soy sauce in a stir-fry pan. Add the tofu and stir-fry over medium-high heat until golden on most sides, about 10 minutes. Transfer to a plate and set aside.
  • Heat the remaining tablespoon of oil in the same pan. Add the onion and carrots and sauté over medium heat for 5 minutes.
  • Add the peas, pineapple, baby corn, tomatoes, coconut milk, optional lemongrass, and curry powder. Gently stir in the tofu. Bring to a simmer, then cook for 5 minutes.
  • Combine the cornstarch and optional curry paste in a cup or small bowl. Add enough water to dissolve, then pour the mixture into the pan. Simmer gently until the liquid has thickened.
  • Stir in the cilantro and season with salt. Serve at once in shallow bowls over plenty of hot cooked grain.

  • Try substituting a leek for the onion in this dish. Use the white portion of a medium or large leek; cut in half lengthwise, then slice into 1/4-inch half-circles. Rinse well in a colander before using.

Two good choices are Bok Choy, Red Cabbage, and Carrot Salad (page 176) or Spinach and Red Cabbage Salad with Oranges and Almonds (page 180). If you'd like a little something extra with the meal, add prepared vegan dumplings or spring rolls (from your grocer's frozen foods section).

1 large pineapple, peeled, cored and cut into 3/4-inch-thick rings
3/4 cup vanilla sugar (see note)
4 egg yolks
2 tablespoons water
1 1/2 cups heavy cream
1 teaspoon vanilla extract

Steps:

  • Preheat the broiler. Place the pineapple slices on a foil-lined baking sheet and sprinkle with 1/4 cup of the sugar. Broil until the sugar is caramelized, about 10 to 15 minutes. Let cool and cut into small wedges.
  • In a medium metal bowl, whisk together the egg yolks and 6 tablespoons of the sugar until thick and pale yellow. Whisk in the water. Place the bowl over a pan of hot but not simmering water. Whisk constantly until the mixture is very thick and warm, about 10 minutes. Set aside to cool.
  • Whip the cream until soft peaks form. Add remaining 2 tablespoons of sugar and the vanilla extract and whip until firm. Stir a little of the egg mixture into the cream. Fold in remaining egg mixture.
  • Spoon a little of the custard into 6 narrow wine glasses. Top with a layer of pineapple, turning the pieces near the edge of the glass so that the caramelized side shows. Continue the layers, ending with the filling. Refrigerate for 2 hours before serving.

2 tablespoons butter
1/4 cup brown sugar
sliced fresh pineapple

Steps:

  • Melt the butter in a medium to large saute pan over medium heat.
  • Place the pineapple slices (no more than 1/2 inch thick) over the melted butter in the pan. Sprinkle with the brown sugar.
  • Baste the pineapple by tilting the pan a bit to scoop some of the butter/sugar mixture and pouring it over the pineapple slices. Cook for about 3-4 mins per side.
  • Continue to baste every so often to incorporate the flavor of the butter and brown sugar.
  • When cooked, place slices on plates and drizzle some of the sauce it cooked in over top. Serve with vanilla ice cream to make EXTRA delicious! Pour some of the sauce over that as well. VERY hot, let cool a little before serving.
