Stir in the rice and, once the mixture has returned to a boil, stir, reduce the heat to low, cover and cook for 20 to 30 minutes, or until the rice is tender and has absorbed all of the liquid. Yield 8 serving(s)

Number Of Ingredients 9

onion, finely diced
1 cup small dried red beans
2 garlic cloves, minced
1 teaspoon red pepper flakes
14 1/2 ounces coconut milk (full fat is best. If you prefer to use low fat, add a drop or two of coconut extract to intensify th)

1/2 teaspoon kosher salt
2 limes, cut in wedges (optional)

  • In the morning drain the water and dump the beans in a large pot of fresh water.
  • Boil rapidly on the stovetop for at least 10 minutes before draining and putting in the crockpot.

  • Add onion, garlic and red pepper flakes.
  • Pour in the entire can of coconut milk(the creamy stuff, too) and chicken broth.
  • Stir in raw rice and kosher salt.
  • Cover and cook on low for 8-10 hours or until beans are bite tender.
  • Before eating, squeeze on a bit of lime juice.

RED BEANS AND RICE

Red Beans and Rice image

This is my uncle Willie's recipe. He's from Mississippi but has a love for everything New Orleans. I would watch him make this dish over the holidays, so this is my memory of watching Willie all those years. And great rice? I will show you the best trick for cooking it!

Provided by JJ Johnson

Categories     side-dish

Time 1h50m

Yield 6 servings

Number Of Ingredients 17

Canola oil or another neutral oil
1 large onion, chopped
1 green bell pepper, chopped
2 large stalks celery, chopped
3 cloves garlic, minced
1 tablespoon smoked paprika
1 teaspoon cayenne pepper
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried thyme
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
Three 12-ounce cans red beans, drained and rinsed
1 smoked ham hock
4 cups chicken broth
1 1/2 cups white rice
Chopped parsley for garnish

Steps:

  • Generously coat the bottom of a large, heavy-bottom saucepan with oil. Add the onion and cook until it begins to soften, about 3 minutes. Add the bell pepper and celery. Cook, stirring occasionally, until the vegetables soften and the onions are translucent.
  • Add the garlic, smoked paprika, cayenne, oregano, basil, thyme, salt and pepper and cook, stirring, for 1 minute more. Add the beans, ham hock and broth and simmer, partially covered, for 1 hour.
  • Remove the ham hock from the pan but let the beans continue to cook. When the hock is cool enough to handle, take the meat off the bone, chop it into bite-size pieces and return it to the pan.
  • Add the rice to the pan along with 1 cup water if more liquid is needed. Cook, tightly covered, until the rice is tender, about 20 minutes. Serve in bowls garnished with parsley.

From Bittman's, "The Best Recipes in the World." If you like any of his recipes, you may as well go ahead and buy the book. It's fantastic, both as a reference and for its recipes.

Provided by Debbie R.

Categories     Rice

Time 28m

Yield 4 serving(s)

Number Of Ingredients 5

3 cups coconut milk
1 bay leaf (or 1 tsp. peeled and minced fresh garlic) (optional)
1 1/2 cups short-grain rice (or long-grain...particularly jasmine)
salt
1/2 cup cooked beans (moist kidney, pinto, pink or black beans)

Steps:

  • Combine coconut milk, bay leaf (or garlic) if you're using it, and rice. Bring to a boil over medium heat, stirring occasionally. Add some salt, lower heat to low and cover. Cook for 10 minutes. Stir occasionally to ensure it doesn't scorch.
  • Uncover. Cook, stirring over low heat, until rice is tender and mixture is creamy, about 15 minutes. At about the 10-minute mark, stir in beans. If liquid evaporates before rice is done, stir in water (about 1/2 cup at a time), and cook until done.
