The best cornbread recipe ever! This fluffy, moist cornbread is easy to make in just 30 minutes with under 10 ingredients. It has the perfect amount of sweetness and will be your new go-to side dish for any meal. You'll never need another homemade cornbread recipe after this one!

Dry ingredients:
1 cup all purpose flour
1 cup yellow cornmeal
2 teaspoons baking powder
½ teaspoon salt
Wet ingredients:
2 eggs, at room temperature
⅓ cup pure maple syrup or honey
½ cup plain yogurt (a whole milk greek yogurt works great!)
½ cup milk of choice (cow's milk, oat, cashew or almond milk are great options!)
¼ cup melted butter

Steps:

  • Preheat the oven to 400 degrees F. Grease a 9x9 inch pan or 9 inch skillet or 9 inch cake pan with nonstick cooking spray or butter.
  • In a large bowl, whisk together the dry ingredients: flour, cornmeal, baking powder and salt. Set aside.
  • In a separate large bowl, mix together the wet ingredients: eggs, maple syrup/honey, yogurt and milk. Add dry ingredients to wet ingredients and stir with a spoon until it just begins to combine, then stir in the melted butter until just combined. Do not overmix the batter.
  • Bake for 18-25 minutes or until a toothpick comes out clean or with just a few crumbs attached. Serve warm with a pat of butter and a drizzle of honey!

I love corn bread. Not the stuff out of a box, but the real thing. I went to make some last night and discovered I had no baking powder! So I looked in my Joy of Cooking for substitutions for baking powder, and the resulting corn bread was the best I've tasted. Try it, I think you'll agree!

1 cup yellow cornmeal
1 cup white flour
1/4 cup sugar
1/2 teaspoon baking soda
1 teaspoon salt
1 cup plain nonfat yogurt
1/4 cup light sour cream
1 egg

Steps:

  • Preheat oven to 400°F.
  • Sift together the corn meal, flour and sugar.
  • Mix the baking soda with the yogurt sour cream and egg.
  • Combine the yogurt mixture into the corn meal mixture. The batter will be thick, but don't worry.
  • Pour mixture into greased (PAM) 8 inch square pan.
  • Bake for 20-25 minutes until a toothpick inserted in center comes out clean.
  • NOTE: For a more savory corn bread, omit the sugar and try adding any combination of following -- crumbled bacon, shredded cheese, green chilies.

Fall weather puts me in the mood for comfort food such as casseroles, but I don't want all the calories that usually come with them. So I paired cod with potatoes and used an Italian inspired tomato sauce to bring it all together. My partner and I really enjoyed this last night and I hope you will too. You can use any type fish you like, as long as it flakes easily when cooked. I think I'm going to try smoked salmon next time. For the potatoes, I like to use Yukon gold, but any low starch potato will work well.

1 lb cod
1 (14 1/2 ounce) can crushed tomatoes
1/2 cup white wine
1 garlic clove, crushed
1 tablespoon fresh oregano, finely chopped
1 teaspoon salt
1/2 teaspoon pepper
4 medium potatoes, thinly sliced
1 medium onion, thinly sliced
salt and pepper
1 cup fresh breadcrumb
1/4 cup grated parmesan cheese

Steps:

  • Preheat oven to 400F.
  • Combine cod, tomatoes, wine, garlic, oregano, salt and pepper in medium sauce pan. Simmer until fish flakes easily, about 10 minutes.
  • Meanwhile, slice potatoes and onion.
  • Place half of the potatoes and onion in bottom of greased 10 inch square baking dish, lightly sprinkling with salt and pepper.
  • Place flaked cod evenly over the top, and lightly salt and pepper.
  • Pour one half of tomato sauce over this.
  • Place remaining potatoes and onion on top, sprinkling lightly with salt and pepper, and then the remaining sauce.
  • Cover with foil and bake approximately 45 minutes until potatoes are tender.
  • Combine breadcrumbs and cheese and sprinkle over top of casserole and bake uncovered 15 minutes more. Can broil for a couple minutes to brown the top if desired.
  • Let stand five minutes before serving.

I love corn bread all by itself. But this recipe is really yummy, especially when served with a nice pork roast and a little gravy on the side. I hope you enjoy it. Prep time does not include the cooling period for the corn bread.

1 cup all-purpose flour
1 1/2 cups yellow cornmeal
1 tablespoon baking powder
1 teaspoon salt
1 cup milk
1 large egg
3 tablespoons unsalted butter, melted and cooled
4 large eggs
4 cups milk
1/2 teaspoon cayenne, to taste
1 (15 ounce) can tomatoes, drained well, chopped
6 green onions, finely chopped

Steps:

  • The cornbread can be made several days in advance and kept in an airtight container.
  • To make the corn bread: In a bowl, combine the flour, cornmeal, baking powder, and salt.
  • In a small bowl, whisk together the milk, egg, and butter.
  • Stir the milk mixture into the cornmeal mixture until just combined.
  • Pour the batter into a greased 8-inch square baking pan.
  • Bake the cornbread in the midle of a preheated 425^F oven 20-25 minutes until a tester comes out clean.
  • Let cool in pan for 5 minutes; invert onto a rack; cool completely.
  • Crumble the corn bread coarsely into 2 shallow baking pans and toast in the middle of a preheated 325^F oven, stirring occasionally, for 30 to 35 minutes until it is dried and a deep golden color.
  • Set aside.
  • To make the pudding: In a large bowl, whisk together the eggs, milk, cayenne, and salt to taste.
  • Add the crumbled corn bread, tomatoes and scallions.
  • Combine well.
  • Divide the pudding between 2 greased 9-inch round cake pans.
  • Let stand for 15 minutes.
  • Bake in the middle of a preheated 375^f oven for 40-45 minutes until golden.
  • Cut into wedges to serve.

1 teaspoon baking powder

1/4 cup canola oil
1 cup plain fat-free yogurt (optional)

Steps:

  • Pre-heat oven to 400°F; generously grease an 8x8-inch bread pan.
  • Sprinkle about 2 tablespoons of cornmeal into the greased pan and shake around until all sides are coated. Discard of the remaining cornmeal.
  • Stir together the cornmeal, baking powder, soda, and salt.
  • Beat the eggs until frothy and mix together. Stir in the creamed corn, plain yogurt, and oil. Mix well.
