Steps:
- Combine jalapenos, cukes, onions and the salt in a large glass bowl, cover with cold water and let stand for 2 hours-drain and press veg to remove excess water.
- Combine the sugar and vinegar in a large pot, tie the spices in cheesecloth and add to the liquid.
- Bring to a boil and simmer 15 minute.
- Add veg and simmer for 10 min-remove spice bag.
- Pack into clean hot jars and process 10 minutes in a boiling water bath.

PINEAPPLE RELISH

Steps:
- In a medium saucepan over medium heat, add the oil onion and green pepper. Saute until the vegetables are soft. Add the pineapple, the salt and the pepper. Cook over medium heat, uncovered, until the liquid reduces, about 30 minutes.
- Deglaze the saucepan with the vinegar and add the lime zest, mustard and garlic. Cook uncovered over low heat until the liquid is reduced again, about 20 minutes more. Transfer to a bowl, let cool then refrigerate, covered, until ready to use. Aloha!
PINEAPPLE-JALAPENO DAIQUIRIS

- Thinly slice 1 jalapeno (remove the seeds for less heat). Combine with 2 1/2 cups chopped pineapple in a shallow dish; freeze until firm, at least 3 hours. Transfer to a blender; add 3/4 cup rum, 2 to 3 tablespoons sugar, the juice of 1 lime and 1 1/2 cups ice and puree until smooth. Divide among 4 glasses; top with jalapeno slices and a cilantro sprig.
BREAD AND BUTTER PICKLES AND PINEAPPLE GINGER RELISH
Steps:
- Preheat an indoor grill pan.
- Place the pineapple on the hot grill and grill until it gets nice and caramelized on all sides, about 6 to 8 minutes per side. Chop the grilled pineapple and set aside.
- In a medium mixing bowl, add the garlic, pickles, ginger, habanero pepper, salt, and pepper, to taste. Add the grilled pineapple and mix together until well combined. This relish can be used on a burger or hot dogs.

- In saucepan over medium heat, sauté the onions, ginger, jalapenos, and cumin for 6 minutes.
- Add the rum and cook until almost all is evaporated.
- Add the pineapple, lime juice, and sugar, bring to simmer and then remove from heat.
- Stir in the cilantro, salt and pepper to taste.
- Note: Caution!
- Be sure to wear rubber gloves when preparing the chilies or you will experience an intense burning sensation in your hands not to mention what would happen should you rub your eyes!

Steps:
- Combine brown and white sugars, cinnamon stick, cloves, and apple cider vinegar in a medium saucepan.
- Bring to a boil over medium heat and simmer 10 minutes.
- Add both cans of drained pineapple chunks. Bring to a boil again and cook 10 more minutes.
- Put in jars and store in the refrigerator.

- Prepare a boiling water canner. Heat jars in simmering water until ready to use, do not boil. Wash lids in warm soapy water and set aside with bands.
- Pulse pineapple, red onion and jalapeño in the bowl of a food processor a few times just to fine chop, being careful not to puree.
- Combine remaining ingredients in a non-reactive pot set over medium heat. Bring to a boil, lower heat and simmer for 5 minutes. Add pineapple mixture and simmer, stirring, until liquid has reduced by half, about 15-20 minutes.
- Ladle hot relish into a hot jar leaving a ½ inch headspace. Remove air bubbles. Wipe jar rim. Center lid on jar and apply band, adjust to fingertip tight. Place the jar in the boiling water canner. Repeat until all jars are filled.
