4. Continuate a cuocere, tenendo presente che il caramello non dovrà brunire in maniera eccessiva o diventerà irrimediabilmente amaro.
Il caramello è il risultato della cottura del saccarosio sino alla sua fusione, che avviene oltre i 160 °C. Con il caramello si procede a caramellare preparazioni dolci e salate.
