This is the best banana bread I have ever had. I buy really ripe bananas just so I can make this :-) Got the recipe years ago from my friend Rachel. We used to beg her to make this for us in college! I think the moistness is due to the 1/2 cup of oil - I didn't say it was the healthiest banana bread around, but it is worth the extra time on the treadmill!

3 ripe bananas, mashed
2 eggs
1 3/4 cups flour
1 1/2 cups sugar
1/2 cup vegetable oil
1/4 cup milk
1 teaspoon baking soda
1 teaspoon vanilla
1/4-1/2 cup walnuts (optional)

Steps:

  • Combine the oil, eggs, sugar, milk, vanilla, and mashed bananas.
  • Add the baking soda and flour.
  • Combine well for 2-3 minutes.
  • Pour into a greased loaf pan and bake in a preheated 325 degree F oven for 1 hour and 20 minutes.

1 cup white sugar

¼ cup melted butter

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x5-inch loaf pan.
  • Combine bananas, sugar, egg, and butter together in a bowl. Mix flour and baking soda together in a separate bowl; stir into banana mixture until batter is just mixed. Stir salt into batter. Pour batter into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted in the center of the bread comes out clean, about 1 hour.

We have a lot of requirements when it comes to banana bread and we finally created a recipe that ticks all the boxes. It's moist, tender, a little tangy and perfectly sweet-all around our favorite one. The best part is that it's even better the next day (if it lasts that long). Try toasting the bread and slathering with a little salted butter. We're pretty sure you'll never need another banana bread recipe.

1/2 cup melted unsalted butter or vegetable oil, plus more for greasing pan
1 3/4 cups all-purpose flour (see Cook's Note)
1 cup toasted pecans, chopped
1/2 cup granulated sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
Fine salt
1/4 teaspoon freshly grated nutmeg
2 large eggs, lightly beaten
1/4 cup buttermilk, sour cream or yogurt
1/2 cup light brown sugar, lightly packed
1 teaspoon pure vanilla extract
4 soft, very ripe, darkly speckled medium bananas, mashed (about 1 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
  • Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. Whisk together the eggs, melted butter, buttermilk, brown sugar and vanilla in a medium bowl; stir in the mashed bananas. Fold the banana mixture into the flour mixture until just combined (it's OK if there are some lumps).
  • Pour the batter into the buttered pan and lightly tap the pan on the counter to evenly distribute the batter. Bake until browned and a toothpick inserted into the center comes out completely clean, about 1 hour. Let the bread cool for 10 minutes in the pan, then turn out onto a rack to cool completely.

This is a variation on the pumpkin spice bread recipe that I just love. With a few little changes you can make 3 different breads: Recipe #262238, Recipe #262285 and Scrumptious Banana Bread. All are so moist and absolutely scrumptious. Try this recipe--you won't be disappointed.

1 cup ripe smashed banana
2 large eggs, slightly beaten
1/2 cup water
1/2 cup vegetable oil
1 1/2 cups brown sugar
3/4 teaspoon salt
1 teaspoon baking soda
1 3/4 cups flour

Steps:

  • Adjust oven rack to middle position.
  • Heat to 350°F.
  • Grease 1 large loaf pan or 3 mini loaf pans.
  • Mix wet ingredients-do not over mix.
  • Add dry ingredients to combine-do not over mix.
  • Bake large loaf 60-70 minutes or 3 minis for 40-50 minutes. Until firm and golden brown.
  • Let stand for a few minutes before removing from pans. Cool completely.
  • Freezes well.

Banana bread is a classic family favorite. Overly ripe bananas contributes to the intense banana-flavor and deliciously moist crumb.

½ cup (125g) butter (room temperature)
1 cup (200g) sugar
2 eggs
6 bananas (350g) very soft bananas (mashed)
1 teaspoon vanilla extract
2 cups (250g) flour
1 teaspoon baking powder
1 teaspoon baking soda
1 tsp salt

Steps:

  • Pre-heat the oven to 180ºC/350°F and grease and line a standard size loaf tin (approximatley 20cmx12cm / 9" x 5") with baking paper.
  • In the bowl of a mixer, beat the butter and sugar together until light and creamy. Add the eggs one at a time, mixing well after each addition. Scrape down the bowl with a rubber spatula.
  • Beat in the bananas. At this point, your batter will split and look curdled. Don't be alarmed, the flour will fix that.
  • Add the dry ingredients then mix until just combined.
  • Transfer the batter to the prepared loaf tin and place in the oven.
  • Bake for 45 minutes or until a skewer inserted comes out clean. Cover with foil halfway to prevent over browning.
  • Remove from the oven and allow to cool before removing the banana bread from the tin.
  • Slice and serve.

Steps:

  • Remove odd pots and pans from oven.
  • Preheat oven to 350º / 180º.
  • Cream together butter and sugar.
  • Add eggs and crushed bananas.
  • Combine well.
  • Sift together flour, soda and salt. Add to creamed mixture. Add vanilla.
  • Mix just until combined. Do not overmix.
  • Pour into greased and floured loaf pan.
  • Bake at 350º / 180º for 55 minutes.
  • Keeps well, refrigerated.

This is my modification of the best recipe in my mom's Junior Auxiliary cookbook. I've decreased sugar and oil without compromising the flavor or texture... I have to give out the recipe every time I share the bread! Recipe is for two loaves worth of batter.

Number Of Ingredients 10

4 eggs
1/4 cup applesauce (veggie or coconut oil can be substituted)
1/4 cup coconut oil (veggie oil can be substituted)
1/2 cup white sugar
1/2 cup brown sugar (white sugar can be substituted)
4 -6 overripe bananas, mashed (as in BLACK they're so ripe)
2 teaspoons vanilla
2 cups white whole wheat flour (all-purpose works as well)
2 teaspoons baking soda
1 teaspoon salt

Steps:

  • 1. Mash bananas.
  • 2. Mix sugar and all wet ingredients in to the bananas; coconut oil may need to be heated slightly to get it to liquid state before mixing.
  • 3. Mix the flour, soda, and salt in with the wet mixture, just until combined.
  • 4. Pour into greased loaf or cupcake pans (or use liners) and bake at 350 degrees for one hour (loaves) or 25 minutes (cupcakes). Check for doneness and adjust cooking times as necessary; everyone's oven is a bit different.
  • This bread is even better with any of these added: a bit of cinnamon, semisweet chocolate chips, pecans or walnuts, or cream cheese frosting.
