CARAMELIZED SWEET ONION DIP
Serve this caramelized onion dip with sweet potato chips - a cheesy appetizer.

Steps:
- Heat oven to 375°F. Lightly spray 1 1/2- to 2-quart casserole with cooking spray.
- In 12-inch skillet, melt butter over medium heat. Cook onions in butter 30 to 40 minutes, stirring often, until caramel colored.
- In large bowl, mix cheeses, mayonnaise and onions. Spoon into casserole.
- Bake uncovered 30 minutes or until golden and bubbly. Serve with sweet potato chips.

CARAMELIZED VIDALIA ONION DIP

Steps:
- Heat the olive oil in a medium skillet over medium-high heat. Add the onions and saute until beginning to brown, 5 to 7 minutes. Stir in the water and scrape up any brown bits from the bottom of the pan. Turn the heat to low and cook until the onions are golden brown, 30 to 35 minutes, stirring occasionally. If the pan ever looks too dry, add a tablespoon of water. Let cool completely.
- Combine the cream cheese, mayonnaise, sour cream, Worcestershire, garlic salt, onion powder and pepper in a medium bowl. Beat until smooth with an electric mixer. Stir in the reserved onions and the scallions. Chill until serving time. Serve with chips.
CARAMELIZED ONION DIP
Steps:
- Heat the butter and olive oil in a heavy medium saucepan over medium-high heat. Add the onions and sugar. Cook, stirring constantly, until soft and golden brown, 15 to 20 minutes. Season with salt. Stir in the vinegar and simmer until the mixture is dry. Add the hot sauce if using. Remove the mixture from the heat and allow the onions to cool slightly.
- Mix the cream cheese until smooth in a large bowl. Fold in the sour cream and caramelized onions. Season with salt and pepper. Garnish with chives if using. Can be eaten warm or transferred to the refrigerator to be eaten cold.
CARAMELIZED ONION DIP
You will never use onion soup mix again to make dip.

- Heat oil in a skillet over low heat; stir in onion. Cook and stir until onion is soft but not browned, 20 to 30 minutes. Increase heat to high, add butter, and sprinkle sugar over onions. Cook and stir frequently until onion is very tender and dark brown, 8 to 10 minutes more. Remove from heat and cool to room temperature.
- Combine sour cream, yogurt, and mayonnaise together in a bowl; season with salt and black pepper. Mince cooled onions on a cutting board; stir onions into sour cream mixture. Store in refrigerator to allow flavors to blend, at least 1 hour.

MAUI CARAMELIZED SWEET ONION DIP
This is from Sunset Magazine's June 2009 issue, in a Luau recipe feature. They suggest serving this addictive dip with potato chips. For best flavor, this recipe uses a sweet onion such as Maui, Vidalia, or Texas 1015.

- Heat oil in a large nonstick frying pan over medium heat. Add onions and cook, stirring occasionally, until brown, sticky, and caramelized, about 20 minutes. If it seems to be starting to burn, reduce heat to medium-low and add 1 tablespoons water, stirring well.
- Transfer onions to a small bowl and chill until cold, about 1 hour.
- Reserve a heaping tablespoon of the caramelized onions for a garnish.
- In a food processor, pulse remaining onions, sour cream, buttermilk, and salt just until combined.
- Transfer to a serving dish, top with reserved onions, and chill at least 1 more hour. It can be made ahead for up to two days and kept chilled.
CARAMELIZED SWEET ONION DIP
From Cooking Light 11/08....."Caramelizing enhances the onion's inherent sweetness. If you can't find sweet onions, substitute two large Spanish onions and add a tablespoon of sugar. This dip is best served warm. If time is tight, you can caramelize the onions (step 2) earlier in the day; combine with the other ingredients and bake just before guests arrive. Serve with a crunchy dipper like melba toast."

- Preheat oven to 350°.
- Melt 1 1/2 teaspoons butter in a large skillet over medium-high heat. Add onion and 1/8 teaspoon salt to pan; cook 15 minutes or until tender, stirring occasionally. Add garlic; cook 10 minutes or until onion is golden brown and very tender, stirring occasionally. Remove from heat; cool 5 minutes.
- Combine the remaining 1/8 teaspoon salt, mayonnaise, and next 4 ingredients (through Worcestershire sauce) in a medium bowl, stirring until smooth. Stir in onion mixture. Transfer mixture to a 1-quart baking dish coated with cooking spray.
- Melt remaining 1 1/2 teaspoons butter. Combine melted butter and panko. Sprinkle panko mixture evenly over onion mixture. Bake at 350° for 15 minutes or until thoroughly heated and bubbly. Sprinkle with parsley. Serve hot.
CARAMELIZED FRENCH ONION DIP
My family loves French onion dip but I find most recipes made from fresh onions tend to be very sweet. By adding the beef bouillon and Worcestershire sauce, it deepens the flavors and slows the caramelization of the onions. The result is a savory dip that goes great with veggies, crackers, and chips. Enjoy!

- Heat oil in a large saute pan over medium heat until shimmering, about 2 minutes. Add onions and cook, stirring occasionally, for 5 minutes. Add garlic and cook until fragrant, about 30 seconds. Add 1/2 cup water, Worcestershire, beef base, onion powder, and thyme. Increase heat and bring to a boil, stirring constantly until beef base is dissolved.
- Reduce heat to a simmer and cook, stirring occasionally, 30 to 45 minutes. Liquid will slowly evaporate and onions will caramelize. If onions start to stick to the pan, throw in a splash of water and scrape up the delicious bits. Taste before adding sugar, salt, and pepper. Once seasoned to your liking, remove from the heat and let cool to room temperature, 15 to 20 minutes.
- Mix cooled onions with sour cream until well combined. Chill for 1 hour before serving.

- Heat the butter in a large skillet or pot over medium heat. Once melted, stir in the onions with a big pinch of salt and pepper. Cook for 5 minutes, just until the onions begin to soften. Turn the heat down to low (or medium-low, if low isn’t cooking them), and cook, stirring often, until the onions are dark brown and caramely, anywhere from 30 to 60 minutes, depending on how much you want to babysit them. This will take a while, but the onions are in smaller pieces, so are also more apt to burn. Keep an eye on them and stir often, reducing the heat when needed. Add a splash of water to the pan if it gets dry at any time.
- Let the onions cool slightly before adding them to the dip. Alternately, you can also caramelize the onions a day or two ahead of time! I will caramelize them and store them in a container in the fridge. I do reheat them on low heat (either in a pan or microwave) just to warm the solids up a bit.
- Whisk together the sour cream, mayo, garlic powder and a big pinch of salt and pepper. Once the onions are caramelized, stir them in. Continue to stir until everything is combined - it will come together. Taste the dip and if you need more salt, add it in.
- This stays great in the fridge if you make it ahead of time - it will thicken up a bit. It is also great served immediately. Serve with chips, crackers, pretzels, veggies - anything!
