SIMPLE CARAMELIZED PINEAPPLE

Simple Caramelized Pineapple image

Found in All*You Magazine many years ago. I love making this dish for our family - very simple and I can tweak it with different toppings so it always seems just a bit different.

Provided by HokiesMom

Categories     Dessert

Time 15m

Yield 6 bowls, 6 serving(s)

Number Of Ingredients 9

1 whole fresh pineapple, cored (about 20 oz.)
4 tablespoons unsalted butter
1/4 cup light brown sugar, packed
6 scoops vanilla ice cream or 6 scoops frozen yogurt
1/4 cup toasted almond, slivered
1/4 cup toasted coconut
2 bananas, sliced
fresh whipped cream
1 dash cinnamon

Steps:

  • Slice pineapple into eight rings and cut each ring into 8 pieces.
  • Warm butter in a large skillet over medium high heat. When butter begins to foam, add the pineapple and brown sugar (this is when you'd add the bananas if using that option).
  • Cook, stirring frequently and make sure you are turning the pineapple chunks over while stirring. This should take about 4-5 minutes - just until the pineapple is brown and all the sugar is dissolved.
  • Remove from heat and place into a shallow serving bowls and let cool 2-3 minutes.
  • Place a scoop of ice cream/frozen yogurt on each serving and top with other toppings if desired. Or you can serve with just a dollop of freshly whipped cream and a sprinkle of cinnamon.

ROASTED PINEAPPLE WITH WHITE CHOCOLATE CARAMELIZED MACADAMIA NUTS

Roasted Pineapple with White Chocolate Caramelized Macadamia Nuts image

Provided by Food Network

Categories     dessert

Time 5h30m

Yield 4 servings

Number Of Ingredients 21

6 ounces milk chocolate
2 ounces white chocolate
12 ounces eggs
1 cup plus 4 tablespoons sugar
2 cups cake flour, sifted
4 tablespoons butter, melted
6 ounces finely chopped macadamia nuts
7 ounces pineapple
1 cup sugar
1/2 -ounce star anise
1/2 -ounce cinnamon stick
1 vanilla pod
6 tablespoons butter
12 ounces macadamia nuts
2/3 cup sugar
6 ounces milk
1 gelatin leaf
8 ounces white chocolate
12 ounces whipped cream
4 tablespoons mango puree
4 teaspoons gelatin

Steps:

  • Chocolate Ring:
  • Begin by melting the milk and white chocolate. Cut 4 sterilized, food-safe flexible plastic strips 1 1/2 inches wide and 5 inches long. Spread a thin layer of milk chocolate on the plastic strips. Using the tine of a fork, scrape the length of the strip through the chocolate to create lines. Spread a layer of white chocolate immediately, directly over and then fold to form a ring. Seal edge with a plastic strip. Set aside to harden.
  • Preheat the oven to 360 degrees F.
  • Mix the sponge by whisking the eggs and sugar on high speed for 15 minutes, until pale yellow and thick. Take out of the mixer and fold in by hand the sifted flour, chopped macadamia nuts, and melted butter. Spread thinly on a buttered, floured and parchment lined baking tray and bake for 15 minutes.
  • Lower the oven to 340 degrees F.
  • To roast pineapple, begin by cutting the pineapple into grape size pieces and then toss in sugar and spices. Bake for 2 hours. Let cool.
  • To caramelize the macadamia nuts, first warm the nuts in the oven for 5 minutes. While nuts are warming, place the sugar in a small saucepan and cook over medium heat until the sugar melts and turns an amber color, about 10 minutes. Carefully add the nuts to the sugar mixture and stir to coat the nuts. Carefully remove from the pan and cool on a marble table or baking tray.
  • To make mousse, boil the milk, remove from the heat and add the gelatin while mixing in the white chocolate. Cool down slightly before folding in the whipped cream.
  • To make the jelly, melt the gelatin with the mango puree and strain into a container for future use.
  • To plate, place a circle of sponge in the base of the chocolate ring, sprinkle with chopped caramelized macadamias. Pipe 1/3 of the cup with mousse; place a spoonful of pineapple mix, top with mousse and a layer of mango jelly. Place in the refrigerator for 1 to 2 hours. Once chilled, remove the plastic strip, top with caramelized macadamia nuts and macadamia sponge.
  • Serve immediately.

CARAMELIZED PINEAPPLE AND CREME CARAMEL WITH BANANA ICE CREAM

Caramelized Pineapple and Creme Caramel with Banana Ice Cream image

Provided by Food Network

Categories     dessert

Time 1h8m

Yield 6 servings

Number Of Ingredients 11

1 cup sugar, plus 3 tablespoons
2 drops vanilla extract
10 ounces warm milk
2 egg yolks
3 eggs
1/4 pineapple, peeled, cored, sliced 1/4-inch thick
1/4 cup raisins
1/2 cup orange juice
1/4 cup rum
3 drops vanilla extract
6 scoops banana ice cream, store bought

Steps:

  • Preheat oven to 275 degrees F.
  • Begin by making the caramel as this is needed for the creme caramel and the pineapple. Place 1 cup of sugar in a heavy saucepan over high heat and cook until a bronze color. Swirl the pan as it begins to color to mix the sugar and caramel. Once the caramel has reached its color, very carefully pour a little of the caramel, just enough to cover the bottom, into 6 (2-ounce) timbales or ramekins.
  • Using the remaining caramel, add the orange juice, rum, and vanilla extract to the pan. Return to the stove to dissolve the caramel. When all is melted, pour the caramel mixture over the pineapple slices and combine all of the ingredients for the pineapple marinade. Allow the mixture to cool for approximately 3 to 4 hours and refrigerate.
  • To make the creme caramel, combine the warm milk and vanilla. In a separate bowl, combine the egg yolks, eggs, and remaining 3 tablespoons of sugar and beat well. Mix the warm milk and the egg mixture well to make a thin custard. Pour the custard into the ramekins, place in a deep tray, fill with 1 inch of hot water, and place in the oven for approximately 20 to 25 minutes until set. Remove from oven and allow to cool completely.
  • To serve, use a small knife and score the outside rim of the ramekins to help release the creme caramels. Turn creme caramels onto a plate, add a few slices of caramelized pineapple and raisins, drizzle a little of the juice around the plate, and finish with a scoop of banana ice cream.

CARAMELISED PINEAPPLE COMPOTES

Impress your guests with Gordon Ramsay's intensely flavoured fruit purée topped with yogurt and shavings of iced fruit granita

Provided by Gordon Ramsay

Categories     Dessert, Dinner

Time 1h30m

Number Of Ingredients 4

1large ripe pineapple
100g golden caster sugar
500g carton sweetened whole milk yogurt (we used Müller Thick and Creamy Yogurt)
Frosted coriander sprigs and Coconut tuiles , to serve

Steps:

  • Cut the skin off the pineapple, then cut it lengthways into quarters and remove the core from each piece. Chop the flesh roughly and purée in a food processor or blender until creamy. Pour the purée into a large sieve set over a bowl, and leave to drain in the fridge overnight. Do not stir.
  • Next day, pour the juice from the bowl into a freezerproof container. Freeze until solid (at least 4 hours).
  • Now caramelise the flesh. At this stage, in the restaurant, we rub the flesh through a sieve with the back of a ladle to make it very creamy. It's not vital, but it makes this dessert extra-special. Tip the sugar into a medium-sized frying pan and stir in 2 tbsp cold water. Stand for 5 minutes before heating slowly over a gentle heat, shaking the pan until the sugar dissolves into a clear syrup. When all the crystals have dissolved, raise the heat and cook to a medium golden colour. Tip in the pineapple flesh and cook for 5 minutes, stirring, until flavoured and slightly reduced. Remove and cool, then keep in a covered container in the fridge until ready to serve (The purée will keep for up to 2 days.)
  • When the pineapple juice has frozen, scrape it into icy shavings using a large metal spoon. Place in another container and keep frozen until ready to serve.
  • To serve, divide the purée between 8 shot or small wine glasses and top with yogurt. (They can be chilled for up to 4 hours at this point.) Remove the shavings from the freezer and spoon over the yogurt. Top each glass with a Frosted coriander sprig and serve with Coconut tuiles.

GENOISE WITH COCONUT CREAM AND CARAMELIZED PINEAPPLE AND MANGO

Genoise with Coconut Cream and Caramelized Pineapple and Mango image

In this sunny-tasting tropical-fruit dessert, genoise becomes a tender shell for coconut pastry cream and slices of caramelized pineapple and mango.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cake Recipes

Number Of Ingredients 4

Genoise(9-inch round cake)
1/2 cup Simple Syrup for Black Forest Layer Cake
Coconut Pastry Cream
Caramelized Pineapple and Mango

Steps:

  • Using the tip of a paring knife, cut a circle into top of cake, leaving a 1/4-inch border and stopping about 1/3 inch from the cake's bottom. Insert a long slicing knife into edge of cake 1/3 inch from bottom, as if splitting the cake into two layers; instead of actually splitting the cake, only make that single incision and carefully move the knife blade within the cake to loosen the center. Repeat on opposite side. Use an offset spatula to lift out the center, leaving a shell for filling. Reserve cake center for another use.
  • Brush shell with simple syrup. Spread pastry cream on bottom. Refrigerate until cold, 1 hour. To serve, arrange pineapple and mango on top of pastry cream.
