6 pounds cucumbers (about 6 cucumbers), peeled, seeded, and coarsely chopped (12 cups)
2 yellow bell peppers, stem and seeds removed, coarsely chopped
4 green onions, chopped
2 jalapeno peppers, minced
2 tablespoons finely chopped fresh cilantro
1 tablespoon finely chopped fresh mint
1 tablespoon finely chopped fresh dill
3 to 4 garlic cloves, mashed to a paste with 1 teaspoon salt
2 teaspoons Essence, recipe follows
1 1/2 teaspoons salt
1/2 teaspoon cayenne pepper
3 cups plain yogurt
3 cups sour cream, divided
3 tablespoons extra-virgin olive oil
2 teaspoons white wine vinegar
2 tablespoons minced fresh chives
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Combine the cucumbers, bell peppers, green onions, jalapenos, cilantro, mint, dill, garlic, Essence, salt, cayenne, yogurt, 2 cups sour cream, olive oil, and white wine vinegar in a large bowl. Working in batches, puree the ingredients in a blender until very smooth. Transfer the soup to the refrigerator until well chilled, at least 2 hours. Taste and adjust the seasoning if necessary. Serve the soup, with each bowl garnished with a dollop of the remaining sour cream and some of the minced chives.

3 -4 tablespoons minced chives
4 tablespoons chopped fresh dill or 2 tablespoons dried dill
1/2 bunch fresh parsley, minced
1 quart buttermilk
1 cup plain yogurt
salt and pepper
crushed garlic (optional)
minced scallion (optional)
minced of fresh mint (optional)

Steps:

  • Mix ingredients.
  • Chill overnight, or at least 3-4 hours.
  • YUM!
  • This also works well in smaller servings as a counterpoint to spicy foods (like raita).

2 cups buttermilk
1/2 cup reduced-fat sour cream
1-1/2 teaspoons sugar

Steps:

  • Cut 4 thin slices of cucumber; set aside for garnish. Peel and finely chop remaining cucumbers. In a large bowl, combine the buttermilk, sour cream, sugar, dill, salt, pepper, green onions and chopped cucumbers. , Refrigerate for 4 hours or overnight. Garnish with cucumber slices and, if desired, fresh dill.

4 cups reduced-sodium chicken broth
1 1/2 cups chopped peeled waxy, thin skinned potatoes (such as red or Yukon Gold, not russets)
1/2 cup chopped cauliflower or 1/2 cup additional chopped potatoes
1/2 cup chopped celery
1 large handful whole fresh dill sprigs (including stems), plus 1/4 cup coarsely chopped dill leaves, plus small sprigs for garnish
1 handful whole fresh chives, plus 1/4 cup coarsely chopped chives, plus more for garnish
1 tablespoon butter
1 1/4 cups finely diced seeded and peeled cucumber, plus thin half moon slices for garnish
freshly ground pepper to taste

Steps:

  • 1. Combine broth, potatoes, cauliflower (or additional potato) in a large saucepan. Lay the whole dill and chives on top. Bring to a boil over medium high heat. Adjust the heat so it boils briskly and cook until the vegetables are very tender when pierced with a fork, 15 to 18 minutes. Remove from the heat and set aside until slightly cooled. 2. Meanwhile, combine 1/4 cup each chopped dill and chives with yogurt in a food processor. Process until the herbs are finely chopped and the mixture is slightly green. Transfer half the mixture to a bowl, cover and refrigerate to use later as a garnish. Leave the remainder in the processor. 3. Using a fork, lift off and discard the herbs from the pan. Transfer the vegetables to the processor with a slotted spoon (leave the broth in the pan). Add butter; process until very smooth, scraping down the sides as needed. 4. Add diced cucumber to the broth. Bring to a gentle boil and cook until the cucumber is just cooked through but still slightly crisp, about 3 minutes. Remove from the heat. Thoroughly stir the pureed vegetables into the cucumber mixture. Season with pepper. Refrigerate until chilled, at least 3 hours or up to 3 days 5. Serve the soup with a dollop of the reserved herbed yogurt. Garnish with small sprigs of dill, chopped chives and or half-slices of cucumber, if desired.

1 clove garlic, minced
2 teaspoons honey
1 lemon
Fresh or dried dill, to taste
Water
Salt
Pepper

Steps:

  • Peel cucumber and remove seeds. Grate to yield 3 cups. In food processor combine cucumbers, yogurt, garlic, honey and a squirt of lemon. Snip in dill. Process until smooth. Slowly add water until creamy. Season with salt and pepper and continue processing. Pour into a bowl. Chill. Serve.

8 cucumbers
2 large onions
2 garlic cloves
1 cup chicken stock (canned or bouillon)
1 pint half-and-half
fresh chives
white pepper
olive oil
salt

Steps:

  • Peel and seed cucumbers, cut into chunks. Saute' chopped onions and garlic in olive oil in a large pot until golden.
  • Add chicken stock, cucumbers and a fistful of peel (for color, to be removed later). Cook on low heat, covered, for 45 minutes.
  • Remove cucumber peel, add cream and a pinch of white pepper. Puree in food processor, salt to taste.
  • Chill overnight, serve with a sprinkle of fresh chopped chives.
  • Needs no thickener, since the pureed cucumber pulp gives it a nice velvety texture.

4 large cucumbers - peeled, seeded, and cubed, divided
½ cup finely chopped yellow onion, divided
½ cup finely chopped celery, divided
½ cup grated carrots, divided
4 medium jalapeno peppers, seeded and finely chopped

¼ cup sour cream
2 teaspoons white sugar
1 teaspoon garlic powder
1 teaspoon dried dill weed

Steps:

  • Set 1/4 cup of cubed cucumber aside.
  • Place remaining cucumbers, 1/4 cup onion, 1/4 cup celery, 1/4 cup carrots, jalapeno peppers, Greek yogurt, sour cream, sugar, garlic powder, dill, salt, and pepper into the bowl of an 8-cup electric blender or food processor and pulse until all ingredients are just blended.

I have to be honest here. I really dislike cucumbers and dill and I have never tried this soup BUT I have made it for a summer cook out on the very high praise of the lady who gave it to me. It was well liked by my husband and the couple we had invited to dinner that night. I'm passing it along so that cuke fans might enjoy it. As written this is made for 2 but I doubled it it seemed to be fine. Cook time is chill time.

Chill the individual soup cups before serving! These are appetizer or 1st course sized servings. Cooking time includes cooking and chilling time.

2 cucumbers, peeled and sliced
2 tablespoons butter
1 leek, sliced, white part only
1 bay leaf
1 tablespoon flour
3 cups chicken stock
1 teaspoon salt
1 cucumber, peeled, seeded, and grated
1 cup cream
1/2 lemon, juiced
1 teaspoon dill or 1 teaspoon mint, finely chopped
salt, to taste
pepper, to taste
sour cream, as a garnish

Steps:

  • Peel 2 cucumbers, slice, and saute gently in 2 tbsp butter with 1 sliced leek and 1 bay leaf for 20 minutes, or until tender but not browned.
  • Stir in 1 tbsp flour.
  • Add 3 cups chicken stock and 1 tsp salt and simmer for 30 minutes. Put the mixture throuth a blender half at a time and strain through a sieve. Chill.
  • Add 1 cucumber, peeled, seeded, and grated, 1 cup cream, and the juice of 1/2 lemon.
  • Stir in 1 tsp finely chopped fresh dill or mint. Add salt and pepper to taste.
  • Chill in the refrigerator for at least another 30 minutes, so soup will be icy cold when served.
  • Serve in chilled soup cups with a dab of sour cream on top of each serving.
