CARAMELIZED ONIONS AND SWISS CHARD RECIPE
This Caramelized Onions and Swiss Chard Recipe is super healthy and can easily be made vegan! We use rainbow or red chard and sometimes add peppers too! This is my husband's all-time favorite recipe! Enjoy it as a side with my Almond Crusted Baked Chicken Recipe!

Steps:
- Preheat your skillet on low and add your cooking fat.
- Meanwhile, cut your onions in half and thinly slice all halves. When all the onions are sliced, add to the pan.
- Stir every few minutes, for the first 5-7 minutes or so, to ensure the onions are thoroughly coated with fat, are not sticking to the pan and are cooking. Adjust the heat if necessary, but keep it on low.
- Meanwhile, thoroughly wash the chard and dry completely. Then thinly slice the chard.
- When the onions begin to brown slightly and turn translucent, add the chard. Cook, stirring every few minutes, until the chard wilts and the onions turn brown and caramelize.
- Season to taste with granulated garlic, salt and pepper. Serve warm
RED CHARD AND CARAMELIZED ONIONS
This dish is good hot or at room temperature. I serve it as a side when the kids want mac and cheese for dinner. They do not eat it, but it makes me feel grown-up. It is very tasty.

- In a cast iron skillet, cook onions in olive oil over medium-high heat until they begin to brown. Stir in brown sugar, and continue cooking for a few minutes.
- When onions are brown and tender, stir in chard and olives. Cook until chard is slightly wilted. Stir in capers and salt, and continue cooking until chard is completely wilted, about 3 minutes. Season with black pepper and squeeze lemon over the top.

PASTA WITH CARAMELIZED ONION, SWISS CHARD AND GARLICKY BREAD CRUMBS
The warm, nutty flavor of good varieties of whole wheat pasta is robust enough to stand up to intense, complicated sauces, yet satisfying with just a little butter and Parmesan shaved over the top.

- In a large skillet over medium heat, melt the butter. Add 3 anchovies to the skillet; cook until melted, about 2 minutes. Add the garlic and cook 1 minute. Stir in the bread crumbs and toast until golden, 3 to 4 minutes. Transfer to a bowl.
- Wipe the skillet clean and return it to a medium-high heat. Add the oil, the onion and a pinch of salt. Cook, stirring occasionally, until very soft and caramelized, 15 to 20 minutes. Chop the remaining 2 anchovies and add them to the skillet. Cook until melted. Add the Swiss chard, a handful at a time, and cook until wilted, about 4 minutes. Cover and keep warm.
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions. Drain well. Toss with the chard mixture and bread crumbs, season with salt and pepper and drizzle with oil.

- Melt butter in large skillet over medium heat. Add onions and toss to coat with butter. Cover and slowly cook onions, stirring occasionally, for 10 minutes or until a golden Color is reached. Turn heat up to medium high and begin to brown the onions, stirring constantly about 10 more minutes. Season with salt and pepper.

- Cut the chard crosswise into 1-2 inch slices. In a large skillet heat the oil over medium-heat. Add the onion and stir occasionally for about 10 minutes, until they become golden and caramelized. Add the garlic and red pepper and stir for 1 minute, until fragrant. Add the broth, greens and a pinch of salt. Cover reduce heat to low and cook until the greens are almost tender, (spinach will just take about 2 minutes, chard about 5, and heartier greens like collards, about 7-8) stirring occasionally. Remove lid and turn heat back to medium, stirring, until the mixture is nearly dry and adjust salt to taste.
- Meanwhile, heat a flat skillet over medium-high heat and warm the tortillas for a minute or so per side. Fill the warm tortillas with veggies and top with crumbled queso and salsa.
- **You can use your favorite salsa, or make a quick, smokey chipotle salsa. Place 1-2 tomatoes, cut in half, half side down under the broiler with a few peeled cloves of garlic until slightly charred - a few minutes. Blend, tomatoes, garlic and 2-3 chipotles in adobo sauce (you'll find these in a can) with a splash of olive oil and salt and pepper to taste.
SWISS CHARD AND CARAMELIZED ONION LASAGNA
This is not a traditional lasagna, but it's good! The sweetness of the onions is offset by the chard.

- Cook noodles just until tender. Cover with plastic wrap and set aside.
- In a large skillet, heat 1 tablespoon oil over medium heat.
- Add garlic and cook, stirring often, about 30 seconds.
- Add chard and cook, stirring often, until tender, 5 minutes.
- Transfer to a medium bowl and stir in ricotta. Season with salt and pepper and set aside.
- Wipe out skillet, heat remaining oil over medium heat.
- Add onions, cook and stir, until onions begin to brown all over.
- Sprinkle with sugar, cook and stir until deep amber in color, about 20 minutes.
- Remove from heat and splash with vinegar.
- In a medium saucepan, heat 2 1/2 cups milk over medium heat until steaming.
- Put flour in a small bowl and whisk in 1/2 cup milk until smooth; whisk into hot milk and continue to whisk until until sauce simmers and thickens. Cook and stir 1 minute longer.
- Stir in parmesan or Asiago cheese until melted and smooth. Season with salt and pepper.
- Preheat oven to 400 degrees.
- Lightly oil a 9x13-inch baking dish.
- Coat bottom of dish with 1/2 cup sauce.
- Line bottom with a single layer of noodles.
- Spread half the chard over noodles.
- Add another layer of noodles, arrange onions on top and season with salt and pepper.
- Spread another 1/2 cup of sauce over all.
- Add another layer of noodles, followed by remaining chard.
- Finish with remaining noodles and sauce. Sprinkle with remaining Parmesan.
- Tightly cover with foil sprayed with cooking spray.
- Bake 30 minutes.
- Uncover and bake 10-15 minutes, until light brown and bubbly.
- Let stand 10 minutes before serving.

- Heat the oil in a large deep frying pan over a low heat.
- Add the onions with a generous pinch of salt and cook slowly for 30-40 mins. Stir occasionally to prevent them from sticking or burning until they become soft and golden. If the onions start to catch, add a splash of water to the pan and mix well.
- Add the sugar and vinegar to give them a sweet, slightly sharp chutney flavour. Keep cooking on a low heat for another 5 mins, stirring occasionally until the mix is sticky, the sugar has dissolved and the vinegar has reduced. The onions are now ready to serve, or use in a recipe.
