1 cup natural peanut butter
1 cup sugar
1 teaspoon pure vanilla extract
1 large egg, lightly beaten
Coarse sea salt, for sprinkling

Steps:

  • Preheat the oven to 350 degrees F and place the racks in the upper and lower third of the oven.
  • In a medium bowl, mix the peanut butter, sugar, vanilla and egg until well combined. Spoon 1 tablespoon of the mixture about 1 inch apart onto ungreased baking sheets. Flatten the mounds with the tines of a fork, making a crosshatch pattern on the cookies. Sprinkle coarse salt on top of the cookies.
  • Bake until golden around the edges, about 10 minutes, switching the position of the sheets halfway through baking. Transfer to racks to cool. Repeat with the remaining dough.

1 cup peanut butter
1 cup sugar
1 large egg, beaten
1 teaspoon baking soda

Steps:

  • Preheat oven to 350* and grease cookie sheets.
  • Beat together peanut butter and sugar in a large bowl with an electric mixer until smooth.
  • Add beaten egg and baking soda to peanut butter mixture and beat until well combined.
  • Roll 1 teaspoon of dough into a ball and place on cookie sheet.
  • Place dough balls one inch apart on cookie sheet and flatten with tines of fork making a cross pattern.
  • Bake until puffed and a golden pale, about 10 minutes.
  • Cool cookies on baking sheet about 2 minutes and then transfer with spatula to rack to cool.
  • May be kept in air tight container at room temperature for 5 days.
  • Makes about 2 dozen cookies.

1 1/2 cups of creamy peanut butter
1 1/4 cups of white sugar (or brown sugar or a mix of both)
2 teaspoons vanilla extract
1 egg, beaten (see recipe notes for using egg substitutes)

Steps:

  • Preheat oven to 350F and line a large baking sheet with parchment paper or a silpat.
  • Mix the peanut butter with sugar until sugar has dissolved.
  • Add in the vanilla essence and egg, and then stir until you get a homogeneous cookie dough.
  • Using a teaspoon or a cookie scoop, scoop one tablespoon of cookie dough and then roll it between both palms until you form a golf-ball sized ball. Repeat until you have used up all the cookie dough (you should get between 12 to 14 balls).
  • Place cookie dough balls in one single layer on the baking paper, leaving about 2 inches of space between each of them (you may need to bake the cookies in 2 batches depending on the size of your baking sheet)
  • Use the back of a fork to press down the balls in a criss-cross manner to flatten the dough slightly.
  • Bake for about 10 to 12 minutes, or until they turn a lighter brown (they will look slightly undercooked, but that's fine as they will continue cooking with the residual heat).
  • Allow cookies to cool at least 20 minutes before removing them from the pan (this is important because if cookies are still too hot, they will break when you move them).

An easy 7-ingredient healthy peanut butter cookie recipe made with gluten-free flour.

1 cup Natural Peanut Butter (fresh, runny jar)
6 tablespoons Almond Milk
1 cup All-purpose Gluten-Free Flour (make sure it contains xanthan gum, Bob's red mill is the best)
1 cup Coconut Sugar (or white sugar or unrefined cane sugar)
1 teaspoon Vanilla Extract
1 teaspoon Baking Soda
1/4 teaspoon Salt (optional)

Steps:

  • Preheat the oven to 350°F (180°C).
  • Line a baking sheet with parchment paper. Set aside.
  • In a medium-size mixing bowl, combine fresh, runny peanut butter with almond milk (at room temperature!). Stir until creamy and smooth. If your almond milk is too cold, it may not stir well. Microwave the bowl for 20 seconds to soften the peanut butter if needed.
  • Stir in all-purpose gluten-free flour, coconut sugar, vanilla, baking soda, and salt. The dough gets difficult to combine with a spoon so use your hands to form the cookie dough.
  • Scoop 2 tablespoons of dough and roll cookie dough into a ball between your hands.
  • Place each dough ball onto the prepared baking sheet, leaving 1 thumb space between each ball.
  • Repeat until all the dough is formed into balls.
  • Press each cookie dough ball 2 times, with the back of a fork, to form a cross on the top of the cookies.
  • Bake for 12 to 15 minutes or until golden brown on the side. The cookies will be soft in the middle when out of the oven and that's normal.
  • Cool the cookies down for 10 minutes on the rack, then slide a spatula under each cookie to transfer them one by one onto a cooling rack.
  • Cool 1 hour to appreciate their best texture.

1/2 cup sugar
1 tablespoon vanilla
1 egg
1 cup peanut butter (about, usually a bit less)
chocolate chips (optional, but so good!) (optional)
cinnamon-sugar mixture, to be used later (I just eyeball this part, need enough to roll in the dough)

Steps:

  • - Preheat oven to 350 degrees.
  • - Grease a baking sheet.
  • - Mix both sugars, vanilla, egg and peanut butter in a large bowl (using a large wooden spoon works, some recipes call for a hand mixer).
  • - Once smooth roll into small balls (about the size of a dollar coin)
  • - Roll the balls in the cinnamon/sugar mixture and place on the cookie sheet leaving space for them to expand.
  • - Place the completed cookie sheet in the oven for 8-11 minutes.
  • - Take the cookie sheet out and promptly place a few chocolate chips (morsels or whatever you have) in the center of the cookie while they are still hot and soft.
  • - Let the cookies cool on the cookie sheet for another 2-3 minutes and then remove.

  • In a medium bowl, add all ingredients: peanut butter, flax egg, coconut sugar, baking soda and optionally, vanilla and salt. Using a rubber spatula, thoroughly stir and fold until well mixed.
  • Using a medium cookie scoop, scoop and drop cookie dough balls onto the prepared baking sheet, spaced evenly apart. Using a fork, press down on cookie to flatten. Repeat in the opposite direction, creating crisscross marks. Cookie won’t spread much.
  • Bake for 10-14 minutes. Mine took 12 minutes. Transfer cookie sheet to cooling rack, and allow to cool for 20-30 minutes—do not remove from sheet for at least 20 minutes, as cookies are very soft and fragile. Then, if desired, transfer cookies directly onto the cooling rack to cool until completely cooled. After cooling, cookies will be firmer, but a tad fragile and melt-in-your-mouth. Handle with care.
