Steps:
- Preheat barbecue to medium.
- Place onions and apples on four 45 cm x 45 cm (18 inches x 18 in.) sheets of heavy-duty aluminum foil.
- Distribute butter, barbecue sauce and brown sugar evenly over onions and apples.
- Salt and pepper to taste and seal each papillote as tightly as possible. Place on barbecue grill and close cover.
- Cook for 10 minutes.
- Turn using tongs and continue cooking for 10 minutes.
- Let stand for 5 minutes before serving.
- Serve as a side dish to grilled fare.

Steps:
- In medium bowl, combine soy sauce, sherry, garlic, scallions, ginger and catfish cubes. and allow to sit for 15 minutes.
- Preheat oven to 450°F.
- Cut four 12x12 inch pieces of parchment paper or aluminum foil.
- Place catfish in paper or foil.
- Top with red pepper strips, ham and 2 slices of lemon.
- Spoon sauce over mixture.
- Fold in edges of paper to form a triangle.
- Crimp the edges to seal tightly.
- Place on a baking sheet and bake in preheated oven for 10-12 minutes or until catfish flakes easily.
- Remove from baking sheet and open paper.

CARAMELIZED APPLES AND ONIONS
Steps:
- Heat half the olive oil in a large nonstick skillet over medium-high heat and add the apples and then one stem of thyme and one bay leaf. Cook, stirring occasionally, until the apples are golden brown but not mushy, 5 to 10 minutes. Remove from heat and throw away the thyme and bay leaf.
- In another skillet over medium-high heat, add the remaining olive oil, the butter and the onions, then the remaining thyme and bay leaf. Season with salt and pepper. Reduce heat to medium low and cook, stirring frequently, until the onions are soft and golden brown, 20 to 30 minutes. Remove from heat and throw away the thyme and bay leaf.
- To serve, warm the apples and onions over medium-high heat and spoon them around the pork chops on a warmed platter.

- Preheat oven to 400°F.
- Using a potato peeler slice the zucchini lenghtwise into strips.
- Cut the leek into very fine julienne strips and cut the asparagus into 2 in even lenghts.
- Cut out 4 sheets of parchament paper. 12 X 15 inch size. Fold in half. Draw a large curve to make a heart shape when unfolded. Cut along inside of line and open out.
- Divide the vegetables between each heart. Position the filling on one side of the fold line and top with tarragon and the unpeeled garlic clove. Season to taste.
- Brush the edges with the egg and fold over. You may also fold without using the egg. This takes a bit more practice. http://www.sundaysupper.com/parch.htm give directions and shows photos of the no egg technique. For Vegan, omit the egg. If you do want to seal it, use the cornstarch and water paste method.
- Pleat the edges so it is sealed. lay on cookie sheet and bake for 10 minutes. Serve immediately.

To wrap fish in parchment paper will protect the against the high heat. The steam can still escape, but the fluids and the flavours are kept inside. You can use almost any fish with this technique, but I would suggest to use whole fish. Serve the fish still wrapped in paper and "open" it on the table. A burst of wonderful flavours will escape. Serve it with some bread to dip up the wonderful flavoured juices.

- Preheat oven (390° F, 200° C).
- Pepare a parchment paper large enough to wrap the fish. Spread a little of the olive oil where you will put the fish on.
- Crush the black peppercorns a little in a mortar and pestal, but it should be coarse though.
- Remove from one rosemary sprig, the leaves. You can chop them, but I prefer to leave the small leaves as they are.
- Clean the fish and brush both sides with olive oil. Salt to taste (inside and outside).
- Put 2 sprigs of rosemary into the cavity and also add a small piece of butter. If you like, put 2 slices of lemon into the cavity too.
- Sprinkle a little of black pepper and rosemary leaves onto the parchment paper and then place the fish on it.
- Cover the fish with the rest of black pepper and the rosemary leaves.
- Squash the garlic cloves (do not peel them) and place them on top of fish. Cut the butter into small pieces and arrange on top of fish too.
- Wrap the parchment paper around the fish to make a package. Fold over the edges to seal the package.
- Brush a little of the olive oil over the paper. This will protect it from burning.
- Put the package on a baking tray and bake for about 25 minutes.
- Serve the fish hot in the package.
- NOTE: use smaller fish for this recipe.

CARAMELIZED ONION AND APPLE CHUTNEY
I had grilled some thick pork chops one Fall day and wanted an onion and apple chutney to serve with the chops. After much searching for just the right recipe and coming up empty-handed, I created this recipe completely off the top of my head. The results were so delicious that my wife demanded I write down exactly what I had done so I could do it again. This chutney is the perfect balance of tart and sweet and is brimming over with rich, delicious flavor. I strongly suggest using a 12 to 14-inch stainless steel skillet with a lid if you have one. Around here, the raisins and caraway or celery seed are optional as the wife doesn't care for them as much as I do, but IMO, they only make it better. I hope you like this stuff as much as we do. Yield is more a guess than a certainty.

- In a 12-inch (or larger) skillet, melt the butter over medium-high heat. Add the oil, and when hot, add the onions to the skillet, along with a pinch or two of kosher salt and a few grinds of black pepper. Cook, stirring often, for about 10 minutes, then lower the heat to medium and continue to cook, stirring occasionally, until the onions turn a rich golden brown, or about another 30 to 40 minutes. Do not rush this process as you do not want any onions to burn or dry out.
- Meanwhile, in a medium mixing bowl, whisk together the vinegar, brown sugar, mustard, celery or caraway seed (if using), and pure maple syrup along with more salt and pepper; set aside.
- When the onions are ready, raise the heat to medium-high again and add the apples. Cook, stirring frequently, for about 5 minutes, or until the apples just begin to soften. Add the vinegar mixture and deglaze the pan by scraping the bottom. If you're using a nonstick skillet, there will be nothing to deglaze. Stir in the raisins (if using) and cover the skillet, lower the heat to medium-low, and let simmer for 15 to 20 minutes, or until the apples are soft. Remove the lid and raise the heat back to medium-high. Cook the mixture, stirring often, until the liquid in the pan thickens enough that you can drag a spoon across the bottom and the liquid flows slowly back in, or is syrupy. Remove from the heat and set aside to cool. Taste and adjust the seasoning.
- This stuff is delicious and goes well with grilled or roasted pork.
