2 tablespoons unsalted butter
1/2 cup dark brown sugar
8 cloves garlic, finely minced
One 2-inch piece ginger, finely minced
1/3 cup rice vinegar
1/4 cup fish sauce
1/4 cup low-sodium soy sauce
8 skin-on, bone-in chicken thighs
Kosher salt and freshly ground black pepper
1 tablespoon coconut or vegetable oil
White rice, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Melt the butter in a small saucepan over medium-high heat. Add the brown sugar and cook, stirring constantly, until it begins to melt, 2 to 3 minutes. Add the garlic and ginger and cook, continuing to stir, for another 1 to 2 minutes. Stir in the vinegar, fish sauce and soy sauce. Bring to a low simmer and let cook for about 5 minutes. Remove from the heat.
  • Use a paper towel to thoroughly pat dry the chicken. Sprinkle both sides with salt and pepper.
  • Heat a large ovenproof skillet over high heat until very hot. Add the oil. Place the chicken in the skillet skin-side down and let brown without moving it for about 4 minutes. Remove the chicken to a plate and raise the heat to medium-high. Add the brown sugar mixture and use a wooden spoon to scrape up any browned bits. Return the chicken to the skillet skin-side up. Transfer the skillet to the oven and bake, basting the chicken with the sauce midway through cooking, until cooked through, about 20 minutes. For extra-crispy skin, transfer the skillet to the broiler for about 2 minutes. Serve over white rice with sauce.

For the Caramelized Sweet Potatoes and Peaches:
1 tablespoon organic coconut oil, melted
2 tablespoons pure maple syrup, room temperature (if it is cold, the coconut oil will solidify on contact)
1/2 teaspoon ground cinnamon
Iodized salt
1 medium sweet potato, scrubbed and cut into 1-inch chunks
2 medium peaches, pitted and sliced into 4 wedges each
1 medium sweet onion, peeled and quartered
For the chicken:
4 skinless, bone-in chicken thighs
Sea salt
Fresh-cracked black pepper
4 tablespoons chile jam (some of my favorites: Hell Fire Pepper Jelly from Jenkins Jellies or INNA Jam's Plenty Spicy Jalapeño for heat seekers)
Juice of 1/2 lemon

Steps:

  • To make the Caramelized Sweet Potatoes and Peaches:
  • Preheat the oven to 450°F.
  • In a small bowl, whisk the coconut oil, syrup, cinnamon, and salt. Put the potato and peaches in 2 separate bowls. Pour three quarters of the syrup mixture over the sweet potato and one-quarter over the peaches and toss. Spread the potato in an even layer in a large baking dish and roast for 10 minutes. Toss the potato and roast for 5 minutes more. Add the onion and roast for 15 minutes. Toss the potato and onion, add the peaches in an even layer, and roast 10 minutes, or until the potato and onion are fork tender and the peaches have caramelized.
  • To make the chicken:
  • Pat the chicken dry and season both sides liberally with salt and pepper. Heat the oil in a large skillet over medium-high heat and arrange the chicken thighs inside (cast iron works really well to get a nice crispy crust). Brown the chicken on one side, giving the chicken time to unstick itself from the pan surface and form a good, crispy coating, about 10 minutes (you can give it some help with your tongs or spatula if needed). Flip the chicken thighs and brown for 6 to 10 minutes, or until you can insert a knife to the bone and no red liquid emerges.
  • Lower heat to medium-low and spoon a quarter of the chile jam over each thigh. Melt the jam over the chicken and on all sides, using tongs to flip and swirl the thighs in the pan. Cook for 1 to 2 minutes to allow the jam to form a glaze. Remove the thighs to a serving plate and spoon the glaze on top. Scrape up any bits sticking to the bottom of the pan-these will be the crispiest and the first to go!
  • Just before serving, squeeze fresh lemon juice over the chicken to brighten its flavors and heighten the sweetness and spice. Serve with Caramelized Sweet Potatoes and Peaches.

5 boneless chicken thighs
2 Tablespoons vegetable oil
8 garlic cloves peeled
1/2 cup water
1/3 cup light brown sugar (packed)
1/4 cup rice vinegar
1/2 cup low sodium chicken broth
1/2 cup reduced sodium soy sauce
2 scallions thinly sliced for garnish

Steps:

  • In a large skillet heat oil over medium high heat. Season chicken with salt and cook until golden brown on each side until crisp and cooked through. Transfer to a plate and set aside.
  • Add garlic cloves to skillet until golden brown about 2 minutes. Transfer to the plate of chicken.
  • Return pot to medium high heat and carefully pour 1/2 cup of water scraping down the browned bits. Whisk in the brown sugar until dissolved. Then cook until mixture turns a deep amber color. About 4 minutes. Carefully add vinegar and stir to dissolve.
  • Add garlic, broth and soy sauce. Bring cooking liquid to a boil and whisk occasionally. This takes about 10 minutes. Be patient. The sauce will thicken and glaze the chicken beautifully.
  • Once glaze is ready, turn heat to medium low and return chicken to pan until heated through. Serve over rice and garnish with scallions or green onions if desired.

3 pounds chicken thighs
3 tablespoons water

Steps:

  • Combine sugar, fish sauce, and black pepper in a shallow plate and turn chicken in the marinade. Set aside for 10 minutes.
  • Combine water, fish sauce, sugar, and rice vinegar in a bowl. Set caramel sauce aside.
  • Heat a cast-iron skillet over medium-high heat. Add 1 tablespoon oil and pan-fry chicken, skin-side up, until bottoms turn slightly crispy and brown, about 5 minutes. Turn and cook until skin is slightly charred, about 5 minutes. Remove chicken from skillet and transfer to a plate.
  • Add remaining 2 tablespoons oil to the skillet and cook garlic for 30 seconds. Return chicken to the skillet and add caramel sauce. Reduce heat to a simmer and cook until chicken is no longer pink at the bone and the juices run clear. Caramel sauce should be reduced and turn amber in color. Add jalapenos and cook for 1 more minute.

4 large / 5 small chicken thighs (, bone in skin on (Note 1))
1/2 cup / 80 g brown sugar (, loosely packed)
1 tbsp water
400 g / 14 oz coconut milk (, low fat (1 can) (Note 2))
1 1/2 tbsp fish sauce ((Note 3))
2 1/2 tbsp rice vinegar ((or cider vinegar))
2 garlic cloves (, minced)
1 eschallot / French onion (, finely sliced (Note 4))
1/4 tsp white pepper ((or black))
1 shallot (, finely sliced (green onion / scallion))
1 large red chilli (, finely sliced)

Steps:

  • Place sugar and water in a skillet over medium heat. Stir, then when it bubbles and the sugar is melted (it looks like caramel), add the rest of the ingredients except chicken.
  • Stir, then put the chicken in SKIN SIDE DOWN.
  • Adjust the heat so it is simmering energetically. Not rapidly, not a slow simmer (I use medium high heat on a weak stove, medium on a strong stove).
  • After 25 minutes, turn the chicken.
  • After another 25 minutes, the fat should separate from the sauce and turn a pale brown (see video).
  • Turn chicken so the skin side is down. Move it around so the sauce doesn't catch on the bottom of the skillet and to brown the skin.
  • Once sauce and skin is brown, remove from heat.
  • Place chicken on serving plates, spoon over some sauce (don't need much, chicken is infused with flavour + sauce is strong).
  • Garnish with shallots and chilli, if using. Serve with rice.

500 g skinless chicken fillets, thinly sliced
2 cloves garlic, crushed
2 -3 tablespoons peanut oil
300 g butternut pumpkin, sliced into pieces about 2 x 4 cm and 5 mm thick
1 red capsicum, seeded and cut into strips
60 g soft brown sugar
60 ml fish sauce
60 ml rice vinegar
1 (400 g) can baby corn, drained
2 tablespoons chopped fresh coriander

Steps:

  • Place the chicken in a bowl, add the crushed garlic and about 2 teaspoons of the peanut oil, then season with salt and plenty of freshly ground black pepper.
  • Heat a wok over high heat and add 1 tablespoon oil swirling to coat the sides of the wok.
  • Stir-fry the chicken in two batches for about 2 minutes per batch or until the meat changes colour.
  • Transfer the meat to a plate.
  • Add the remaining oil to the wok and stir-fry the pumpkin for about 4 minutes, or until tender but not falling apart.
  • Add the capsicum strips during the pumpkins last minute of stir-frying.
  • Remove the vegetables to the plate with the chicken.
  • Put the sugar, fish sauce, vinegar and 125ml water in the wok, stir thoroughly, then bring to the boil and boil for about 10 minutes or until syrupy.
  • Add the baby corn to the wok and heat for a couple of minutes, then return the chicken and vegetables to the wok as well.
  • Stir for 1 minute, or until well coated with the syrup and heated through.
  • Sir in the coriander and serve immediately over steamed rice.

1 onion (finely chopped)
1/2 cup tomato sauce (ketchup)
1 tablespoon garlic (minced)
salt (freshly ground to taste)

1 tablespoon Dijon mustard

  • Preheat oven to 225°C.
  • Cut chicken into 8 pieces (2 drumsticks, 2 thighes and 2 half breasts [cut the breasts in half again to give you your 8 pieces - one portion will have wings, remove if you don't want them there] or buy a precut chicken.

4 chicken breasts, chopped into one inch bits
4 tablespoons cornstarch
1 egg
1 tablespoon vinegar
1 teaspoon soya sauce
1/2 teaspoon salt
6 small green chilies, slit length ways
4 cloves garlic, chopped fine
1 green pepper, deseeded and roughly chopped into one inch pieces
1 shallot, diagonally sliced into one inch pieces
1 tablespoon cornstarch
1/2 cup water

oil, for deep frying chicken

Steps:

  • Make a batter with the'Marinade' ingredients.
  • Put chicken pieces into it and mix well.
  • Set aside for 1/2 hour.
  • Heat oil, about 2 inches deep, in a wok/frypan.
  • Fry chicken pieces, in batches of 6-8 pieces, till cooked through (approx 7-8 mins for each batch).
  • Drain fried chicken on a paper towel.
  • When all the chicken pieces are fried, remove oil from the pan, letting about 2 tablespoons remain in it.
  • In a small bowl mix together cornstarch and water.
  • Put back the wok on fire and heat the 2 tblsps of oil.
  • Add green chillies, garlic, green pepper and shallot and stir fry for 30 secsonds.
  • Pour in soya sauce and vinegar; give it two three quick whisks and immediately add the cornstarch-water mixture.
  • The sauce will thicken; if you find it too thick, add some more water.
  • When the bubbles appear, add the fried chicken pieces.
  • Add salt and a pinch of MSG (if using).
  • Stir fry chicken for 2 minutes and remove from fire.
  • Serve hot with chinese fried rice/plain rice or noodles.

100g golden caster sugar
4 tbsp gluten-free fish sauce
1 green chilli , halved (optional)
small piece cinnamon bark
small piece ginger , finely chopped
juice 1 large lime , plus extra for squeezing over
1kg chicken wing , tips removed and cut in half
small bunch spring onion , cut into 1cm lengths
large piece ginger , cut into matchsticks
1 green chilli (seeds removed if you don't like it too hot), cut into rings
handful coriander sprigs
boiled white rice , to serve

Steps:

  • Put the sugar in a medium sauté pan with enough water to make it go sludgy. Place on a low heat and bring to the boil, then cook until you have a dark amber caramel (see tip, below).
  • At arms length, add the other ingredients, except for the chicken and garnish, and bring to a simmer - take care as it will spit. Once it has calmed down a little and you have a thick sauce, stir in the wings until well coated. Pour over 100ml water and simmer on a medium heat for about 30 mins, stirring every now and then until the sauce is a thicker consistency - add a splash more water if needed.
  • Turn down the heat and continue to cook, covered, for a further 15 mins, stirring occasionally, until the wings are lacquered and tender and the sauce is very thick. Turn off the heat and quickly stir through half the spring onion, ginger and chilli. Tip the wings and sauce onto a platter. Scatter with the remaining garnish and coriander, and serve with extra lime and rice.

25 g butter
2 tablespoons sugar
1/2 teaspoon dried chili
1/2 teaspoon salt
40 g popcorn, popped

Steps:

  • To make the pineapple syrup, pour the pineapple juice into a frying pan or wok (the wider the base, the better). Heat on a medium temperature, swirling the pan regularly to ensure that it doesn't burn at the bottom.
  • Do this until most of the liquid has evaporated and you're left with about a tablespoon of intense pineapple syrup that has the consistency of honey. This might take up to an hour, so it's worth starting early and perhaps pouring yourself a glass of wine.
  • Pop the butter in a saucepan along with the sugar, salt and chilli. Heat on a low-medium temperature, stirring regularly to help the sugar to dissolve.
  • Once the mixture has thickened to a consistency similar to lemon curd, reduce your stirring and bring it slowly to the boil until bubbles start to appear all over the surface.
  • Once it starts bubbling, leave it to caramelise for 3 minutes without stirring. The colour will start to darken.
  • While waiting for the caramel to cook, fill a tablespoon with the pineapple syrup, so that it is ready to add to the mixture. Make sure that your popcorn is also ready and waiting in a big bowl that has plenty of room for some vigorous stirring.
  • After 3 minutes, take the caramel mixture off the heat and add the tablespoon of pineapple syrup to the frying pan, stirring it inches.
  • Immediately pour the mixture over the popcorn, stirring quickly to ensure that the popcorn is evenly coated before the caramel cools and hardens.
  • Put the popcorn on a baking tray and place it in the oven at 100°C for 30 minutes to evaporate off any remaining liquid and allow it to become deliciously crisp.
  • Take the popcorn out of the oven and leave it to cool.
  • Sit back and enjoy - perhaps paired with an elegant Sauternes while dreaming of azure seas, golden beaches and palm trees swaying gently in the breeze.

  • Heat up a skillet (cast-iron preferred) on medium to high heat. Add 1 tablespoon oil. Pan-fry the chicken (skin side up) until the bottom turns slightly crispy and brown. Repeat the same for the skin, until the skin becomes slightly charred. Transfer the chicken out.
  • Add the remaining oil into the skillet and add the garlic. Add the chicken into the pan and follow by the Caramel Sauce mixture.
  • Lower the heat to simmer and continue to cook until the caramel sauce reduces and becomes amber in color. Make sure you turn the chicken a couple of times during cooking.

  • Reduce the heat slightly and heat the remaining oil in the wok. Add the chilli and remaining garlic, and cook for 30 seconds. Pour in the sauce mixture and allow it to bubble until reduced, syrupy and caramelised. This will take about 3–5 minutes. When the sauce is thoroughly reduced and caramelised, return the chicken to the wok, without any of the accumulated juices, and cook for 1 minute to coat the chicken in the sauce and heat through. Stir in the coriander. Garnish with the spring onion before serving.
