1 cup milk
2 tablespoons instant coffee granules
1 cup white sugar
1 pinch salt
2 cups heavy cream
¾ cup caramel dessert sauce

Steps:

  • Whisk together milk, instant coffee granules, sugar, and salt in a large bowl until sugar is dissolved. Stir in the heavy cream, then cover and refrigerate until chilled, at least 2 hours.
  • Pour the chilled mixture into an ice cream maker and freeze according to manufacturer's directions until it reaches "soft-serve" consistency. Transfer half of the ice cream to a one- or two-quart lidded plastic container. Pour half of the caramel sauce over the top, then repeat the layers with the remaining ice cream and caramel. Swirl the caramel into the ice cream using a chopstick or knife. Cover surface with plastic wrap and seal. For best results, ice cream should ripen in the freezer for at least 2 hours or overnight.

If you've got an espresso/cappuccino machine you're well on your way to recreating a top-choice Starbucks coffee drink. For the caramel part, you can use any caramel sauce that you find in the grocery store near the ice cream toppings. Pick your favorite. Just note that to make this recipe work best you'll only need 3 tablespoons of a richer caramel sauce (like the stuff Starbucks uses), but more like 4 tablespoons of a lighter sauce (such as fat-free Smuckers). For the vanilla syrup you can use the bottled syrups, such as those made by Torani, or just whip up a your own clone from scratch. By the way, if you want to make this clone super accurate, pick up bottles of the authentic vanilla syrup and caramel sauce sold in Starbucks stores.

1/3 cup prepared dulce de leche sauce
3/4 teaspoon instant espresso powder
6 store-bought sugar waffle cones
1 pint (2 cups) coffee ice cream
2 ounces semisweet chocolate, chopped
1 tablespoon vegetable shortening
2 tablespoons chocolate-covered espresso beans, chopped

Steps:

  • Put the dulce de leche sauce and espresso powder in a small bowl and whisk until combined.
  • Put 1 teaspoon of the espresso-dulce de leche sauce in the bottom of each waffle cone and swirl to completely coat the inside. (If the sauce is too thick to swirl, use a small offset spatula to smear the sauce on the sides.) Add 1 small scoop of coffee ice cream to each cone, then top with 1/2 teaspoon more of the espresso-dulce de leche sauce. Repeat these layers until the ice cream reaches the top of each cone. Using a 1/3-cup ice cream scoop, top each waffle cone with an additional scoop of coffee ice cream and freeze until the ice cream hardens, about 30 minutes. (See Cook's Note.)
  • Once the ice cream has set, put the chopped chocolate and vegetable shortening in a small bowl that is deep enough to dip the tops of the cones into and microwave in 30-second increments, stirring after each, until completely melted and smooth, about 2 minutes. Cool until room temperature but still liquid.
  • Remove the cones from the freezer and dip the tops of each in the melted chocolate. Immediately sprinkle each cone with the chopped espresso beans and freeze until ready to serve.

1 cup half-and-half
1 cup heavy cream
1/2 vanilla bean, split lengthwise
4 egg yolks
1/3 cup sugar
2 tablespoons butter or 2 tablespoons margarine, cut into pieces
1 cup sugar
1 cup water

Steps:

  • In a medium saucepan combine half and half, heavy cream and vanilla bean and bring to a boil over medium heat.
  • Remove from heat.
  • Cover and let stand for at least 15 minutes.
  • Beat egg yolks with sugar in mixing bowl until thick and lemon colored.
  • Whisk in 1/3 of the scaled cream.
  • Return mixture to saucepan.
  • Place saucepan over medium heat and cook for 5 minutes or until mixture thickens.
  • DO NOT BOIL.
  • Remove from heat.
  • Stir in butter pieces, one at a time, blending well after each addition.
  • Let cool to room temp.
  • and then cover and refrigerate for at least 4 hours or up to 3 days.
  • While custard is cooling make caramel syrup.
  • To make syrup: combine sugar and 1/3 cup water in small saucepan and bring to a boil.
  • Cover and let steam one minute.
  • Remove lid and continue cooking until mixture caramelizes to a dark tea color.
  • Remove from heat.
  • Add remaining water slowly (be careful mixture will spatter) and stir.
  • Cover and let cool to room temp.
  • Remove vanilla bean from custard, scraping any seeds into custard mixture.
  • Stir syrup into custard.
  • Can be refrigerated again at this point before making ice cream.
  • Transfer to ice cream maker and process using manufacturer's instructions.
