Steps:
- Combine above ingredients in a heavy saucepan.
- Turn the heat to high.
- When mixture thickens, reduce heat to medium-low.
- Stir once with fork and cover tightly.
- Simmer 12-14 minutes, or until all liquid is absorbed.

ORANGE-FLAVORED RICE
Steps:
- Place a medium saucepan over medium heat. Add the olive oil and rice, and cook until the rice smells toasty, about 3 minutes. Add the chicken stock and half of the orange zest and juice. Bring to a boil, stir once more, then cover and reduce the heat to low. Simmer until tender and the liquid has been absorbed, 18 to 20 minutes. Remove from the heat and let stand, still covered, for 5 minutes. Stir the remaining orange zest and juice into the rice, and garnish with the green onions.

Steps:
- Heat butter until foamy.
- Add chicken, cook till done (I just let the fat on the chicken cook it, instead of adding butter) Remove chicken and set aside.
- Blend flour and spices into remaining butter or fat from chicken.
- Gradually stir in orange juice and raisins.
- Cook stirring until thick.
- Add chicken, cover, and simmer 30 minutes until chicken is tender.
- Stir in orange sections.
- Serve with rice.

- Pour 1/2 a cup boiling water of the raisins, add the rind of 1 orange. Let cool.
- Mix together butter and sugar; cream until fluffy. Add egg, juice, and dry ingredients and blend.
- Stir in cooled raisin mixture. Pour into prepared bread pan and bake 1 hour at 350.
RAISIN RICE PUDDING

- Combine 4 cups milk, rice, sugar, butter, cinnamon stick and salt in heavy large saucepan. Simmer over medium-low heat until rice is tender and mixture is creamy, stirring frequently, about 1 hour. Remove from heat. Discard cinnamon stick. Stir in raisins and vanilla.
- Pour 3/4 cup milk into heavy small saucepan. Bring to simmer. Whisk egg yolks in medium bowl to blend. Gradually whisk hot milk into beaten yolks. Return mixture to same saucepan. Stir over medium heat until thermometer registers 160 °F, about 2 minutes (do not boil). Stir egg mixture into rice mixture.
- Transfer rice pudding to large nonmetal bowl. Cover and chill until cold, about 30 minutes. (Can be prepared 1 day ahead. Keep chilled.)
- Thin rice pudding with more milk, if desired. Spoon into bowls and serve.
ORANGE SPICE BLEND
Add one teaspoon or more to cake batters, quick bread batters, whipped cream etc.Lemon peel could be used in place of the orange.

CAMARGUE RED RICE BLEND
I bought a package of Camargue Red Rice Blend (Riz Rouge). It contained 60% long grain parboiled brown rice; 20% California wild rice; and 20% Camargue red rice. Never had this blend before and here is the recipe I came up with.....hope you enjoy! I am quite sure you could use all red rice if you wish.** This is a very good time to use recipe#166346.....it is something that I always have in my freezer. BTW, I posted this as servings for a main course, for a side dish, it will make much more.....but don't cut the recipe because this is very good cold the next day!

- Wash rice well, removing any foreign objects.
- Place rice and stock into rice cooker and start.
- Heat oil over medium-high heat, add onions and saute until translucent.
- Add all the peppers, saute until they JUST START to soften.
- Add mushrooms and garlic. Saute until mushrooms begin to give off their liquid.
- Remove from heat. Add pepper and salt (if using) Combine well.
- When rice is done, toss everything together and serve.
