2 cups packed brown sugar
1/2 cup butter, cubed
1/4 cup corn syrup
3 large apples, peeled and chopped
2 tablespoons lemon juice
1 tablespoon sugar
1 teaspoon apple pie spice
1 loaf (1 pound) day-old cinnamon bread
1/2 cup chopped pecans
10 large eggs
1 cup 2% milk
1 teaspoon salt
1 teaspoon vanilla extract

Steps:

  • In a small saucepan, combine brown sugar, butter and corn syrup. Bring to a boil over medium heat, stirring constantly. Cook and stir 2 minutes or until thickened. Set aside., In a small bowl, combine apples, lemon juice, sugar and pie spice. Arrange half of the bread slices in a greased 13x9-in. baking dish. Top with apples; drizzle with half of the caramel sauce. Sprinkle with pecans; top with remaining bread., In a large bowl, combine eggs, milk, salt and vanilla. Pour over top. Cover and refrigerate overnight. Cover and refrigerate remaining caramel sauce., Remove strata from refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 50-55 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes before cutting., In a microwave, heat the reserved sauce. Drizzle warm sauce over strata.

1/4 cup corn syrup
4 large Apples, peeled and chopped
2 tablespoons lemon juice
1 tablespoon sugar
1 teaspoon all-spice
1 teaspoon of ground cinnamon
1 loaf of Udi's (gluten, dairy, soy, & nut free) Cinnamon Raisin Bread
10 eggs
1 cup non-dairy milk (we used vanilla rice milk)
1 teaspoon salt
1 teaspoon vanilla extract

Steps:

  • 1. In a small saucepan on the stove, combine the brown sugar, non-dairy butter and corn syrup. Bring to a boil over medium heat, stirring constantly ( 2. In a medium size bowl, toss together the apples, lemon juice, sugar, all-spice, and ground cinnamon. 3. Arrange HALF of the bread slices in a greased 13x9" baking dish. Pour apples evenly over bread. Drizzle with HALF of the caramel sauce then top with remaining bread slices. 4. In a large bowl, combine the eggs, non-dairy milk, salt and vanilla. Pour over top the entire dish contents. 5. Cover and refrigerate overnight. Cover and refrigerate the remaining caramel sauce. 6. Preheat oven to 350 degrees and remove strata from the refrigerator for at least 30 minutes before baking. 7. Bake uncovered for 50-55 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting. 8. In a small microwave-safe dish, microwave reserved sauce, uncovered, for 1-2 minutes or until heated through. Drizzle over strata.

1 cup diced peeled apples
8 eggs
2 ½ cups half-and-half cream
6 tablespoons butter, melted
¼ cup maple syrup

Steps:

  • Coat a 9x13 inch baking dish with cooking spray. Arrange 1/2 of the cubed raisin bread in the bottom of the dish. Sprinkle the cream cheese evenly over the bread, and top with the apples. If you like extra raisins, add them now. Top with remaining bread.
  • In a large bowl, beat the eggs with the cream, butter, and maple syrup. Pour over the bread mixture. Cover with plastic wrap, and press down so that all bread pieces are soaked. Refrigerate at least 2 hours.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Bake 45 minutes in the preheated oven. Let stand for 10 minutes before serving.

5 medium apples, peeled and chopped (5 cups)
3/4 cup apple cider or juice
1/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves
1 frozen puff pastry sheet, thawed
1/4 cup fat-free caramel ice cream topping
1 large egg
1 tablespoon water
1 tablespoon coarse sugar
Optional: Sweetened whipped cream and additional caramel ice cream topping

Steps:

  • Preheat oven to 375°. In a large saucepan, combine the first 6 ingredients. Bring to a boil. Reduce heat; simmer, uncovered, 15-20 minutes or until apples are tender, stirring occasionally. Cool completely., Unfold puff pastry onto a large sheet of parchment; roll into a 16x12-in. rectangle. 1 dash ground nutmeg
powdered sugar

  • Put half the bread cubes in a lightly oiled 11x 8 inch baking dish.

2 tablespoons butter
2 tablespoons brown sugar

¼ cup chopped pecans, or more to taste

Steps:

  • Grease an 8-inch square baking dish.
