This is a simple yet amazing Caprese chicken made with fresh basil, grape tomatoes, and fresh mozzarella. Serve with a side salad or a side of pasta.

½ cup oil and vinegar dressing, divided
4 skinless, boneless chicken breasts
salt and ground black pepper to taste
1 pint grape tomatoes, halved
1 bunch fresh basil, thinly sliced
1 (8 ounce) package fresh mozzarella cheese, sliced

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Pour 1/4 cup dressing into a small bowl.
  • Arrange chicken breasts evenly in the center of a grill pan. Brush both sides of the chicken breasts with dressing; season with salt and pepper.
  • Pour remaining 1/4 cup dressing into a mixing bowl. Add tomatoes and basil. Toss to coat evenly with the dressing.
  • Spread the tomato mixture evenly around chicken in a single layer.
  • Bake in the preheated oven for 20 minutes. Remove pan from oven and top chicken with fresh mozzarella; return pan to oven.
  • Continue baking until mozzarella cheese is golden brown and bubbly and chicken is fully cooked, about 10 minutes more. An instant-read thermometer inserted into the center of the chicken should read at least 165 degrees F (74 degrees C).

4 chicken boneless skinless chicken breasts "Thin- Sliced"
2 teaspoons lemon pepper seasoning
3 tablespoons olive oil
1 shallot, diced
1 tablespoon chopped garlic
2 tablespoons capers
1 cup white wine or chicken stock
1 tablespoon Dijon mustard
2 tablespoons freshly chopped parsley leaves
2 tablespoons sour cream

Steps:

  • Heat a grill pan or outdoor grill over medium to medium-high heat. Brush the grate of the grill with canola oil just before you grill the chicken. Season the chicken with lemon pepper and put on the grill. Grill for 4 to 5 minutes on each side.
  • Heat the olive oil in a medium skillet over medium heat. Add the shallot and garlic and saute for 2 minutes. Add the capers and white wine and reduce by half. Whisk in the mustard, and parsley and season with salt and pepper, to taste. Let simmer for 1 minute, then remove from heat and whisk in the sour cream.
  • Arrange the chicken on a platter and dollop with the creamy sauce.

OVEN BAKED CREAMY LEMON-CAPER CHICKEN

4 lbs. chicken cutlets
salt and pepper
~1 cup arrowroot flour
2-8 tbsp. olive oil
1 tbsp. finely chopped fresh parsley
2 lemons
2 cloves garlic, minced
2 1/2 - 3 cups chicken broth
2 tbsp. arrowroot flour
2-3 tbsp. capers (drained)

Steps:

  • Preheat oven to 300 degrees. A chicken cutlet is a chicken breast butterflied open. You can either do this yourself, or purchase it already like this. Once you have your chicken into "cutlets" break them down so that they are cut in half, lenthwise, and no longer attached to each other (It will look like 2 thinner breasts). Season both sides of the cutlets with salt and pepper. Place 1/2 cup of arrowroot flour in a bowl. Lightly dredge both sides of the cutlets in the arrowroot flour to coat them, you just need them lightly coated not caked on (if you run out of the flour you may need to add another 1/4 cup or so). In a dutch oven or large skillet, heat 2 tbsp. olive oil over medium-high heat. In batches, lightly brown both sides of the cutlets (about 3 minutes per side) and as you go, set the browned ones on plate on the side (they won't be cooked through yet, don't worry. They just need a light brown crust on both sides right now). With each batch that you brown the chicken cutlets, if your skillet is dry add another tbsp. of olive oil each time if you need it (arrowroot flour gets rather sticky to the skillet so you need to be sure that it has plenty of oil coating the bottom all times). Once all of your chicken is brown and resting on a plate, lets make the sauce. Reduce heat to med-low in the same skillet or dutch oven. Add garlic to the skillet and saute for 30 seconds, being careful not to burn. Pour in the 2 cups of chicken broth into the skillet and whisk constantly, scraping up all the brown bits on the bottom. In a small bowl, whisk together the remaining 1/2 cup of broth with 2 tbsp. of arrowroot flour and the juice of 1 lemon. Pour that into the skillet and whisk constantly until the sauce begins to thicken. You want to bring it to a light simmer while whisking. Once the sauce has thickened (about 3 minutes) remove from heat. Add the drained capers. At this point, if you think your sauce is looking too thick, go ahead and add in another 1/2 cup of broth. Nestle in all of the browned chicken cutlets into the sauce. **If you are doing this in a Crockpot: pour the sauce and capers into a crockpot and nestle the chicken in. Cook on Low for 4 hours.** Cover the dutch oven, and bake in the oven for 2 hours. Remove from oven and let cool for 10 minutes (the sauce thickens back up a tad). Garnish with parsley and thinly sliced lemon rounds while cooling. Serve and Enjoy!

½ cup all-purpose flour
2 (6 ounce) skinless, boneless chicken breast halves
2 tablespoons olive oil
¼ cup dry white wine
¼ cup lemon juice
¼ cup cold unsalted butter, cut into pieces
2 tablespoons capers, drained
2 lemon wedges

Steps:

  • Mix together salt and flour in a small dish or plastic bag, then coat chicken and shake off excess. Heat olive oil in a skillet over medium-high heat. Shake excess flour from chicken, then brown in hot oil until both sides are golden-brown, and the inside has turned white and firm, 3 to 4 minutes per side.
  • Remove the chicken, and set aside in a warm place. Pour white wine into the skillet, and allow to boil as you dissolve the cooked bits from the bottom of the pan. Add the lemon juice, and allow to come to a boil, cook for a few minutes until reduced by half.
  • Sprinkle the cubed butter into the boiling sauce. Swirl and shake the pan vigorously to dissolve the butter, thus thickening the sauce. The butter must never come to rest, or the sauce will separate and become oily. Once the butter has completely incorporated, remove from heat and stir in capers.
  • To serve, pour lemon-caper sauce over the chicken, and serve with a wedge of lemon.

2 tbsp plain flour
2 tsp dried oregano
4 skinless and boneless chicken thighs , halved
2 tbsp olive oil
2 tbsp capers , drained and dried
65g stuffed green olives
½ lemon , zested and juiced
handful of parsley , roughly chopped
½bag peppery salad , to serve

Steps:

  • Bring a pan of salted water to the boil and tip in the potatoes, boil for 8-10 mins, until cooked through, then drain.
  • Mix the flour and oregano, then toss the chicken in it. Put the oil in a pan over a high heat and fry the capers until crispy, about 2 mins. Remove with a slotted spoon and set aside.
  • Turn the heat down a bit and add the chicken, then fry until golden, around 10 mins. Tip the drained potatoes into the pan with the olives. CHICKEN IN LEMON CAPER BUTTER

The first dish I ever served to guests and the response I got was so positive I've been making it ever since. Needless to say, it's a very simple recipe. One of the few chicken dishes I still make using bone-in, skin-on chicken parts. When feeding known garlic-lovers, I'll increase the garlic. I generally serve it with noodles. While I post the original amounts from the recipe below, I actually do not measure the butter & lemon juice when I make this, but rather use 1 lemon's worth lemon juice and approximately the same or just slightly more butter, so that the butter comes to about 2-3 Tbs I would guess.

1 or 2 ears full-kernel fresh corn
1 tablespoon butter
1 tablespoon finely chopped shallots
1/4 cup dry white wine
3 tablespoons drained capers
1/3 cup heavy cream
1 tablespoon finely chopped fresh chives

Steps:

  • Cut each breast in half. Cut away >and discard any membranes or bone sections, and any remaining peripheral fat. Sprinkle chicken with salt and pepper.
  • Cut kernels from ears of corn. There should be about 1 cup.
  • Heat butter in a heavy skillet large enough to hold chicken breasts in one layer. Add breasts and cook 2 minutes. Turn chicken pieces and sprinkle shallots between the pieces. Add wine and bring to boil. Cover and cook about 3 minutes.
  • Sprinkle with capers and cream. Stir to distribute ingredients. Cover and cook 5 minutes.
  • Transfer chicken pieces to warm platter. Add corn to the sauce and cook 1 minute. Add chives and stir. There should be about 1 cup sauce.
  • Spoon sauce over chicken pieces and serve.

  • Saute the chicken in hot oil in a nonstick pan. When the chicken is brown on both sides, stir in the garlic, and cook for 10 seconds.

1/2 teaspoon onion powder
1/4 teaspoon poultry seasoning
1/2 teaspoon lemon pepper
2 boneless skinless chicken breast halves
1/4 cup grated parmesan cheese
1 tablespoon flour
1 tablespoon olive oil
1/4 cup white wine (can sub same about with chicken broth)
1/2 cup chicken broth
2 green onions, thin-sliced, tops included
1 tablespoon capers, drained

Steps:

  • Combine garlic powder, onion powder, poultry seasoning, and lemon pepper. Sprinkle spice mix on both sides of chicken breasts, then coat each side with Parmesan cheese and flour.
  • Heat a heavy skillet over medium-high heat. When hot, add olive oil and swirl to coat the pan. Brown chicken breasts on both sides, turning only once. It should not be cooked through and through. Remove to a plate and keep warm.
  • Add white wine to deglaze the pan, scraping up any browned bits. Cook for 1 minute, then add chicken broth. Bring to a simmer and return chicken breasts to the pan. 3 lbs bone-in skin-on chicken breasts
1 tablespoon vegetable oil
1 teaspoon vegetable oil
1 shallot, minced
1 teaspoon flour
3/4 cup low sodium chicken broth
1 tablespoon unsalted butter

1 tablespoon fresh parsley, chopped
2 teaspoons fresh lemon juice

Steps:

  • Adjust an oven rack to the lowest position and heat the oven to 450°F Pat the chicken dry with paper towels and sean with salt and pepper. Heat the oil in a 12" oven-safe skillet over medium-high heat until just smoking. Carefully lay the chicken breasts skin-side down in the skillet and cook until well browned, 6-8 minutes. Baked Chicken With Lime,scallions, Mushrooms & Capers image

Adapted from The Best of Food and Wine. This recipe is elegant enough for company, special occations or just to treat your family. I usually double the sauce ingredients to have extra for rice, linguine or mashed potato or just for sopping with crusty bread. Serve with your favorite side and crisp salad. This may sound time consuming but if prep work is all done before hand it goes together quite easily. Believe me it is worth it.

4 boneless skinless chicken breast halves
1/2 cup all-purpose flour, for dredging
5 tablespoons unsalted butter
8 ounces sliced fresh mushrooms
2/3 cup minced scallion (white and green part)
2 tablespoons capers, rinsed
1 large garlic clove, minced (or more if you like)
1/2 cup dry white wine
1/4 teaspoon salt
1/4 teaspoon pepper (freshly ground)
1 tablespoon fresh lime juice
2 teaspoons minced lime zest
1 tablespoon chopped parsley
1 tablespoon fine dry breadcrumb

Steps:

  • Preheat oven to 400 degrees.
  • Trim off any fat or membranes from the chicken.
  • Pound thicker ends lightly to flatten to an even thickness.
  • Dredge the chicken in flour; shake off excess.
  • In a large non reactive skillet, melt 4 Tbs butter over moderately high heat.
  • Add chicken and saute, turning once, until golden brown, about 3 mins per side.
  • Remove to plate. Keep warm.
  • Reduce the heat to low and add the scallions,garlic, mushrooms and capers.
  • Cook until softened, about 5 minutes.
  • Increase heat to moderately high, add wine and boil, scraping up any browned bits, until reduced by half, 2 to 3 minutes ( If more liquid is needed add more white wine.).
  • Spread half the sauce in a buttered baking dish just large enough to hold the chicken in a single layer.
  • Add chicken and season with salt and pepper.
  • Drizzle on the lime juice.
  • Cover with remaining sauce.
  • Sprinkly on the lime zest, parsley and bread crumbs.
  • Dot with remaining Tbs butter.
  • Bake uncovered in the top third of the oven for 15 mins or until the juices run clear.
  • Serve at once.
