Old Fashioned French Canadian Baked Beans image

This was a staple for me growing up in Quebec and brings back many happy memories. A perfect winter comfort food!!! I have tweaked an original recipe and wanted to share it with you. Great at breakfast with fried egg and sausage. A hearty meal with crusty bread and salad. It takes some time but well worth the wait -- I hope you enjoy them. Special note: some people prefer using salt pork when preparing baked beans - I use sliced bacon instead.

1 -1 1/2 lb navy beans (2 1/2 to 3 cups measure)
bay leaf
2 garlic cloves
1/4 cup molasses
1/4 cup maple syrup
3/4 cup ketchup
1 medium onion, diced
2 teaspoons salt
2 teaspoons vinegar
1 1/2 teaspoons dry mustard (Keen's brand is what I use)
2 -3 tablespoons brown sugar
2 tablespoons Worcestershire sauce
4 slices bacon (optional)
reserved bean liquid

Steps:

  • Cover beans with water and soak overnight.
  • Rinse beans then bring to a boil in approximately 1 quart of water, bay leaf and garlic - simmer for 30 minutes.
  • Turn off heat and let beans stand for approximately 1 1/2 hours until soft. Drain and reserve the bean liquid. Discard bay leaf and garlic.
  • Mix together remaining ingredients (excluding beans and bacon).
  • Add beans to bean pot (or any covered dish).
  • Stir in molasses mixture to beans. Top off with some of the reserved bean liquid.
  • Arrange bacon on top.
  • Cover and bake at 300 degrees for 7 hours. For the final hour of cooking, remove cover to let bean brown up nicely.
  • Note: check occasionally and keep beans covered with reserved bean liquid during cooking.

1 pound thick-cut bacon, cut into small pieces
1 large Vidalia onion, diced
Four 15.5-ounce cans great Northern beans
1 cup molasses
1/2 cup tomato sauce
1/2 cup brown sugar
2 tablespoons yellow mustard
1 tablespoon garlic powder
Kosher salt and freshly ground black pepper
Candied Jalapenos, recipe follows
1 pound jalapeno peppers
1/4 cup brown sugar
1/2 teaspoon granulated garlic
1/2 teaspoon ground mustard
1/2 teaspoon cayenne pepper
Pinch kosher salt
2 tablespoons olive oil

Steps:

  • Preheat the oven to 350 degrees F.
  • Cook the bacon in a large ovenproof saucepan or Dutch oven until the fat is rendered and the bacon is crisp, about 7 minutes, then set aside to drain on a paper towel. Add the onion to the pan and cook until softened, 8 to 10 minutes.
  • Add the beans, molasses, tomato sauce, brown sugar, mustard, garlic powder, 1/4 cup water and salt and pepper to taste and stir to combine well. Let the mixture simmer for a minute or so. Transfer the pan to the oven and bake, uncovered, until the beans are very tender and dark and the sauce is thick, 1 1 /2 to 2 hours.
  • Transfer to a serving dish and top with Candied Jalapenos and bits of bacon.
  • Preheat the oven to 325 degrees F and line 2 baking sheets with parchment paper.
  • Thinly slice the jalapenos and place in a single layer on the prepared baking sheets.
  • Combine the brown sugar, granulated garlic, mustard, cayenne pepper and salt in a small bowl. Brush the slices of jalapeno with the olive oil. Sprinkle the sugar and spice mixture over the top. Bake until the jalapenos are crispy, 20 to 25 minutes. Set aside to cool.

BLACK BEAN AMANATTO (CANDIED BLACK BEANS)

This is a simplified version of amanatto. While it is a simple process, it is time consuming because of the sorting phase. This recipe is a result of some trial and error work with a recipe found at the anime blog and some crystallized ginger recipes that I had at hand. The result should be a soft candied bean with a light sugar coating. Hard beans, lumpy sugar coating, broken beans are all signs of rough handling. I've learned that crunchy beans are a sign of poor quality ingredients. The key to this process is gentle handling at every point. Preparation time does not include the time required for soaking or sorting the beans, which is significant.

1 lb black beans, high-quality small black turtle beans
water, to soak and cook beans
1 pinch baking soda
3 cups water
4 1/2 cups granulated sugar
1 teaspoon salt
2 cups superfine sugar

Steps:

  • Rinse beans, picking out any stones or odd beans. Soak overnight in ample water.
  • After soaking, drain beans and rinse with plenty of cold water. Pick through again to get rid of any odd beans or stones.
  • Put beans in a pot with plenty of cold, fresh water and a good pinch of baking soda. The baking soda will help to maintain the black color of the beans.
  • Simmer beans gently for 1 hour until beans are just cooked through. Be careful not to boil the beans or overcook them. The beans should hold together in their skin.
  • Drain beans and rinse gently in cold water.
  • Prepare syrup by combining the 3 cups of cold water, granulated sugar and salt. Heat to simmer for 20 minutes or until the syrup is starting to thicken a bit.
  • While the syrup is simmering, carefully sort through the cooked beans, discarding any that are out of the skin, or where the skin has cracked open. You should plan that the volume of beans will decrease by as much as a third, depending on how you cooked the beans.
  • Carefully add the beans to the syrup mixture and continue simmering for 1 1/2 hours.
  • Turn off the heat and allow beans to cool for 10 minutes. Drain.
  • Put the superfine sugar into a bowl. In batches, toss the beans into the sugar and then lay them out onto a cookie sheet in a single layer.
  • When all the sugar-coated beans are on the cookie sheet, put the cookie sheet in an oven preheated to 175 degrees F for 5 minutes.
  • Remove the cookie sheet and toss the beans, returning them to the oven for an additional 5 minutes. Turn off the oven and leave the beans in the oven for 5 minutes. Cool completely.
  • Store in an airtight container.
