5 medium potatoes, peeled and sliced
1/4 cup grated Parmesan cheese
2 teaspoons minced fresh parsley
3/4 teaspoon garlic powder
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup butter, cubed

Steps:

  • Place half of the potatoes on a large piece of heavy-duty foil. Sprinkle with Parmesan cheese, parsley, garlic powder, salt and pepper; dot with butter. Top with the remaining potatoes. Fold foil over and seal tightly. , Grill, covered, over medium heat for 30-35 minutes or until the potatoes are tender.

16 medium Yukon Gold potatoes (about 2 inches in diameter), halved
3 tablespoons coarse kosher salt
2 tablespoons extra-virgin olive oil
4 unpeeled large garlic cloves, smashed
1 teaspoon chopped fresh thyme
1/2 teaspoon finely chopped fresh rosemary leaves

Steps:

  • Place potatoes in medium saucepan. Add enough cold water to cover by 1 inch. Sprinkle with 3 tablespoons coarse salt. Bring to boil, then reduce to simmer. Cook potatoes until tender, about 10 minutes. Drain. Return to saucepan. Add remaining ingredients to potatoes; toss to coat. Cool.
  • Arrange four 12-inch squares aluminum foil on work surface. Divide potato mixture among foil squares and place 1 garlic clove atop potatoes on each square. Crimp to seal. Store packets at room temperature up to 2 hours or in refrigerator up to 2 days.
  • Prepare barbecue (medium-high heat). Place potato packets on grill and cook until heated through and sizzling, turning occasionally, about 15 minutes. Transfer packets to serving plate and pierce foil with grill fork to release steam. Open packets carefully (hot steam will be released).

1 medium onion, sliced
6 tablespoons butter
1/3 cup shredded cheddar cheese

Steps:

  • Place the potatoes and onion on a large piece of heavy-duty foil (about 20 in. x 20 in.); dot with butter. Combine the cheese, parsley, Worcestershire sauce, salt and pepper; sprinkle over potatoes. , Fold foil up around potatoes and add broth. Seal the edges of foil well. These are easy to make for camping, my husband loves them! We prepare them at home and then leave them in the cooler until we are ready to cook. You can use any combination of meat and vegetables that you like. Do not try to use less olive oil or foil or your dinner will burn. Be careful when opening foil as steam will have formed inside and can burn you.

1 pound skinless, boneless chicken breast meat - cubed
2 onions, diced
1 (8 ounce) package sliced fresh mushrooms
1 yellow bell pepper, seeded and sliced into strips
1 red bell pepper, seeded and sliced into strips
4 cloves garlic, sliced
4 small potatoes, cubed
¼ cup olive oil
1 lemon, juiced

Steps:

  • In a large bowl, or a large zip-top bag, combine the chicken, onion, mushrooms, yellow pepper, red pepper, garlic, and potatoes. Pour in the olive oil and lemon juice, then mix well.
  • Evenly divide the mixture between 4 large sheets of aluminum foil. Top each with another sheet of foil, and roll up the edges tightly. Wrap each packet again, securely in another sheet of foil to double wrap.
  • Cook in the hot coals of a campfire until the chicken is opaque and the potatoes are tender, around 40 minutes.

We like to cookout a lot and always seem to have a crowd. These potatoes can be cooked in the oven to save room on the grill for large a crowd or on the grill if there is room. I add more garlic because the potato absorbs the flavor. There are never any leftovers.

1 -2 tablespoon butter
salt and pepper
aluminum foil
1 tablespoon sour cream

Steps:

  • halve potato lenghtwise.
  • add butter garlic, salt and pepper. put halves together and wrap in foil.
  • In oven use cookie sheet and bake at 400 for 1 hours.
  • Grill for 45 minutes turn frequently or they will burn.
  • Remove from foil and add sour cream -- Enjoy!
