Camp Rice In The Instant Pot Food

- Rinse the rice under cold running water until the water runs clear; drain well. Stir the rice, salt and 2 cups water together in a 6-quart Instant Pot® and follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high for 10 minutes (see Cook's Note). After the pressure cook cycle is complete, follow the manufacturer's guide for natural release and wait until the natural release cycle is complete, about 10 minutes. Be careful of any remaining steam and unlock and remove the lid.
- Using the tines of a fork, fluff the rice to separate the grains and serve.

Camp Rice has become one of our favorite dishes. It can be either a side dish or the main course. The recipe originally came from a book on camping. Over 50 years ago I adapted the recipe to one I could use in the kitchen. Then 30 years ago I changed the recipe so I could cook it in a rice cooker. Now I have made some adaptations...

Steps:
- 1. Set Instant Pot to SAUTE. When the Instant Pot has heated up add the salt pork and cook for about 4 minutes stirring every 30 seconds or so.
- 2. Add the chopped onions and cook another 4 or 5 minutes stirring every 30 seconds or so.
- 3. Puree the tomatoes in a blender and add them to the Instant Pot along with rice, sugar, celery seed, and black pepper. Give a quick stir to incorporate the ingredients together.
- 4. Close the Instant Pot lid and push the RICE button. (Cooking rice is one of the programs available for the Instant Pot.)
- 5. After pressure cooking has finished allow the cooker to cool down naturally until the float valve drops down, this will take 10 to 15 minutes.
- 6. Open the lid and spread the shredded cheese over the camp rice.
- 7. Serve and enjoy.
