On a recent trip to Austria, this simple cheese 'spread' was much enjoyed, spread on good black bread, between hearty swigs of beer, while waiting for our mains to arrive.

- Mash Camembert with fork and combine with cream cheese, mixing well. Mix cheese with onion, garlic, white wine, paprika and a generous amount of freshly-cracked pepper. Finally mix in chives.

OBAZDA - BAVARIAN STYLE CAMEMBERT SPREAD
This is yummy! A Bavarian style cheese spread that works pretty well with any bread, vegetable and, of course, Brez'n (Pretzels). This is the basic version, as there are a lot of regional differences. You can add different herbs such as parsley or chives, scallions and even a tad of beer :). However paprika and carraway seed are a must to make it really Bavarian.

Steps:
- Cube Camembert.
- Chop onion very finely.
- Add butter to a bowl, add cheese and the rest of ingredients and mash thoroughly using a fork until a homogenous spread/consistency is reached.
- Season with salt and cracked pepper to taste (again).
- Serve with bread, vegetables and beer.

CAMEMBERT WITH BLUE CHEESE, FIGS AND PORT SAUCE

Steps:
- Brush Camembert on all sides with egg, then coat with breadcrumbs. Place on foil-lined plate and cover.
- Bring Port to simmer in heavy small saucepan over medium heat. Add figs; simmer until slightly softened, about 5 minutes. Using slotted spoon, transfer figs to small bowl. Add sugar to Port in pan; boil until reduced to thick syrup, stirring occasionally, about 5 minutes. Pour syrup over figs. (Cheese and figs can be prepared 3 hours ahead. Refrigerate cheese. Let figs stand at room temperature.)
- Melt butter in heavy skillet over medium-high heat. Add Camembert and cook until breadcrumbs are brown and cheese is warm, about 2 minutes per side. Transfer to platter. Top with blue cheese, figs and syrup. Sprinkle with chives and surround with toasts.
BLUE-CHEESE SPREAD

- In a regular or mini food processor, pulse cream cheese until smooth. Add blue cheese and process until fully combined. If needed, pulse in water, 1 teaspoon at a time, to reach a spreadable consistency. Season with salt and pepper.
