Provided by Chef John

Categories     Soups, Stews and Chili Recipes     Soup Recipes

Time 1h20m

Yield 6

Number Of Ingredients 9

12 ounces linguica sausage, sliced
1 tablespoon olive oil
1 onion, finely diced
1 pinch salt
3 pounds russet potatoes, peeled and sliced 1/8 to 1/4 inch thick
2 teaspoons salt, plus more as needed
2 quarts chicken broth or water
2 pounds kale - trimmed, chopped, rinsed, drained
1 pinch cayenne pepper

Steps:

  • Slice sausage into 1/4-inch rounds. Heat oil in a pot over medium-high heat. Add sausage and saute until sausage begins to turn brown and renders some fat, 3 to 5 minutes. Transfer with a slotted spoon to a dish. Reduce heat to medium-low; add onions and pinch of salt salt. Stir and cook until softened, 4 to 5 minutes.
  • Transfer potatoes to pot. Sprinkle in 2 teaspoons salt. Pour in chicken broth. Increase heat to high and bring to a simmer. Reduce heat to medium-low; simmer until potatoes are tender, 8 to 10 minutes.
  • When potatoes are tender, carefully mash them in the broth with a potato masher until broken up or completely mashed. Add kale, a handful at a time. Transfer browned sausage to soup. Bring to a simmer over medium-high heat. Reduce heat to medium-low and simmer until greens are tender, about 45 minutes.

Yield Makes 4 (main course) servings

Number Of Ingredients 8

1/4 cup extra-virgin olive oil, divided
1/2 pound chouriço or linguiça (smoked Portuguese sausages) or kielbasa, cut into 1/2-inch pieces
1 medium onion, chopped
2 garlic cloves, minced
1 pound russet (baking) potatoes, peeled and cut into 1-inch pieces
6 cups water
1 pound kale, stems and center ribs discarded and leaves very thinly sliced
Accompaniment: piri-piri sauce or other hot sauce

Steps:

  • Heat 1 tablespoon oil in a 5-quart heavy pot over medium-high heat until it shimmers, then brown sausage, stirring often, 2 to 3 minutes. Transfer with a slotted spoon to a bowl. Add 2 tablespoon oil to fat in pot and cook onion and garlic with 1/4 teaspoon each of salt and pepper over medium heat, stirring often, until browned, 7 to 8 minutes.
  • Add potatoes, water, and 1 teaspoon salt and simmer, covered, until potatoes are very tender, 15 to 20 minutes. Mash some potatoes into soup to thicken, then add kale and simmer, uncovered, until tender, about 5 minutes. Stir in sausage and cook until just heated through, 1 to 2 minutes. Drizzle with remaining tablespoon oil and season with salt and pepper.

CALDO VERDE (PORTUGUESE CABBAGE SOUP)

Caldo verde (Portuguese cabbage soup) image

Cabbage soup doesn't need to be boring. Spice it up with smoky chorizo and comforting potatoes.

Provided by The Hairy Bikers

Categories     Light meals & snacks

Yield Makes 1 large pot!

Number Of Ingredients 10

2 fat onions, finely chopped
4 cloves garlic, crushed
60ml/2¼fl oz olive oil
1 chorizo sausage
6 large potatoes
1.5 litres/2 pints 13fl oz good vegetable or chicken stock
salt and freshly ground black pepper, to taste
2 bay leaves
large bunch of greens or cabbage
smoked paprika and olive oil, for dressing

Steps:

  • Gently fry the onions and garlic in the olive oil until softened and translucent.
  • Chop the chorizo into small chunks and add to the pan with the onion.
  • Fry the onions and sausage for a few more minutes and then add the diced potatoes. They will absorb all the flavour from the sausage.
  • Transfer the mixture to a large pan, add the stock, seasoning and bay leaves, and cook until the potatoes are soft.
  • Meanwhile, very finely chop the cabbage (alternatively, buy a cabbage-shredding machine from the market as we did).
  • When the potatoes are ready, mash them into the broth to make a thick base. Blanch the greens in boiling water for one minute to take off any bitterness, drain, then add to the simmering broth.
  • Add as much cabbage as the broth will support - if you want heavy soup add loads of greens, if lighter, add less.
  • Simmer for a few minutes. The soup will go the colour of jade.
  • Mix the smoked paprika with some olive oil to make a dressing, and swirl this red magic into the vibrant green soup. Serve with some rustic country bread.

PORTUGUESE KALE SOUP (CALDO VERDE)

Portuguese Kale Soup (Caldo Verde) image

I'm not sure where I found this recipe. It's more tomato-y than some versions (but then every one I've looked at here is quite different!). I'm also not sure whether herbs de Provence is appropriate to a Portuguese soup. But it's delicious, that's for sure!

Provided by lecole54

Categories     Greens

Time 1h15m

Yield 6-8 serving(s)

Number Of Ingredients 13

1/4 cup olive oil
1 large yellow onion, cut into 1/2-inch dice (approximately 1 cup)
1 carrot, medium cut into 1/2 inch dice (approximately 1/2 cup)
4 garlic cloves, minced
8 cups chicken broth
2 cups yukon gold potatoes (cut into 1/2-inch dice )
1 teaspoon herbes de provence or 1 teaspoon ground thyme
1 bunch kale
1 (28 ounce) can diced tomatoes with juice
1 (14 ounce) can white beans, drained
1/2 lb pork sausage, smoked (chourico, chorizo, kielbasa, etc.)
salt
pepper

Steps:

  • Heat olive oil in a large heavy pot on medium/low. Add onion and carrots and cook until softened, 5-10 minutes.
  • Add garlic and cook, stirring often, until fragrant (about 2 minutes).
  • Add stock, potatoes, and herbes de Provence. Bring to a boil (high). Reduce to low and simmer gently until potatoes are partially cooked, about 15 minutes.
  • Meanwhile, rinse kale and remove/discard tough stems. If flat kale, cut leaves crosswise into 1" ribbons. If curly kale, tear into bite-sized pieces.
  • Add kale, tomatoes, beans, and sausage. Cook until tender 5-10 minutes.
  • If soup is too thick, thin with more stock or water.
  • Season with salt and pepper and serve hot.
  • Will keep in fridge, covered, up to 5 days.

Provided by Kate DeMello

Categories     Portuguese

Time 45m

Yield 8 1 cup servings, 8 serving(s)

Number Of Ingredients 10

1 lb Portuguese chourico (can use turkey chourico) or 1 lb turkey sausage (I like to use chourico dogs)
1 lb kale, stems removed, leaves shredded
1 teaspoon olive oil
1 onion, chopped
4 garlic cloves, chopped
6 cups fat free chicken broth
4 small boiling potatoes, peeled diced into 1/4 inch pieces
1 pinch dried red pepper flakes
salt, if needed
1/4 teaspoon fresh ground pepper

Steps:

  • In a large pot, cook chourico or sausage over low heat. Turn and cook until brown, about 10 minutes. Remove from pot and let cool. Cut sausage into slices. Remove any fat from pot, but leave the cooked on bits.
  • Add oil to pot, add onion and cook on medium until translucent, about 5 minutes. Add garlic and cook 1 minute more. As you stir, scrape up the bits from the bottom of the pan.
  • Add broth potatoes, and black pepper, bring to a boil and cook 20 minutes. Remove the pot from heat and either lightly mash the potatoes with a potato masher or food processor, or I like to use my immersion blender to puree the entire mixture.
  • Add chourico or sausage, red pepper flakes and bring back to a simmer. Cook covered for about 4 minutes. Add kale and bring back to a simmer. Cook partially covered until the kale is cooked. Adjust salt if needed.

  • In a large pot over medium heat, fry in the olive oil the chorizo sausage until a light, golden brown. Then, using a slotted spoon, remove the sausage. Next, add the onion and garlic and fry gently. Season with a little salt and pepper, add the potatoes, chicken stock and bring to a gentle simmer. Cook for approximately 15 - 25 minutes and add back the sausage. When the potatoes are fall-apart cooked, add the kale. Cook for an additional three to five minutes. Adjust the seasoning and using immersion blender, partly puree the soup to add a creamy texture from the potatoes and the characteristic green colour of the soup. Do this just before serving and serve in a hot soup bowl drizzled with olive oil and enjoy.
  • Note: this is a tasty, rustic, classic Portuguese soup that will be found all over Portugal. During the summer time, I like to add a little homemade pesto using fresh basil, olive oil, grated zest of lemon. I drop in a handful of small, peeled shrimp and cook gently for three minutes. Then add a tablespoon or two of the pesto, and serve. This makes a delicious, summery version of this hearty soup.
