2 garlic cloves, minced
½ cup chopped onions
⅔ cup diced tomatoes
4 large cousa squash, diced
2 tablespoons chicken bouillon granules
½ cup whole kernel corn
¼ cup shredded Colby-Monterey Jack cheese

Steps:

  • Heat oil in a stockpot over medium heat; add garlic and cook until fragrant, about 30 seconds. Add onions; cook and stir until translucent, about 5 minutes. Stir tomatoes into onion mixture and cook for 30 seconds more.
  • Mix cousa squash and chicken bouillon into tomato mixture; reduce heat, cover, and simmer until squash is tender, 20 to 30 minutes. Stir in corn and Colby-Monterey Jack cheese.

Zucchini Soup recipe allows you to be creative in your cooking; you can add heavy cream if you want, corn kernels for garnish, or diced Mexican fresh cheese. If you find the soup too thick for your taste, just add a little more milk. When I make it, we never have leftovers.

4 cups about 1 lb. of chopped zucchini or squash
1 tablespoon butter
1 teaspoon vegetable oil
1/3 cup diced onion
1 large garlic clove (diced)
1-½ tablespoon flour
2 cups of milk
1 cup chicken broth*
Salt and pepper to taste
12 thin slices of French bread
2 tablespoons vegetable oil
2 garlic cloves

Steps:

  • Place chopped zucchini or squash in a skillet, add one cup of water, and cover. Turn heat to medium-high; once it starts boiling, reduce heat to low. Keep cooking until zucchini or squash is tender, but not overcook. It should look firm and still have a bright color. This step will take about 8 minutes total.
  • While the vegetables are cooking, heat butter and oil in a medium-size saucepan over medium heat until butter is melting. Add the onion and garlic and cook until transparent, about 2 minutes.
  • Add flour and stir until flour has a light golden color. Pour milk and chicken broth into the saucepan and stir to dissolve the flour mixture, about one minute.
  • Remove zucchini/squash from skillet and drain any liquid left. Place into a blender with the milk combination. Process until you have a fine mixture.
  • Pour this mixture into the saucepan and turn the heat to medium. Keep cooking, stirring from time to time. Let it simmer on a warm heat setting for about 6-8 minutes until soup starts to thicken. Season with salt and pepper.

1 large yellow squash, (sliced into half moons)

2 teaspoons coarse kosher salt
1/4 teaspoon black pepper

1/4 cup water
1/2 cup shredded cheddar cheese
1/4 cup milk
optional garnishes: crumbled cotija cheese, chopped cilantro

Steps:

  • Heat olive oil in a large nonstick skillet over medium-high heat.
  • Add onions, poblanos, and jalapenos. Cook for 5 minutes, stirring occasionally, until vegetables begin to soften.
  • Add corn and tomatoes. Cook for 5 more minutes, stirring occasionally.
  • Add zucchini, yellow squash, garlic, salt, black pepper, oregano and ground cumin. Stir to combine and cook for 5 minutes, stirring every minute or so.
  • Add water to skillet, reduce heat to low, cover and simmer for 5 minutes.
  • Uncover the skillet, add the shredded cheese and milk, and stir together until the cheese has fully melted.
  • Remove from heat, garnish with chopped cilantro and cotija cheese, and serve.

2 -3 lbs chicken thighs (or whatever you like but I don't recommend breast)
1 calabaza squash
1 zucchini
1 yellow squash
1 tomatoes
1 yellow onion
2 tablespoons cooking oil
1 tablespoon salt
2 teaspoons black pepper
3 teaspoons garlic powder
3 teaspoons cumin
1 (15 ounce) can whole kernel corn (drained)
1 (8 ounce) can tomato sauce

Steps:

  • Wash chicken and boil until cooked, set aside.
  • Wash all the squash, cut up into cubes, set aside.
  • Wash tomato, cut up into cubes, set aside.
  • Cut onion into cubes, set aside.
  • Mix salt, pepper, garlic powder and cumin in a bowl, set aside.
  • Get a large pan, add 2 tbs cooking oil, tomato, cubed squash and cubed onion.
  • On medium high heat sautee for approximately 10 minutes or until you can see that everything is nice and tender.
  • Add drained corn.
  • Add tomato sauce.
  • Add dry spice mixture.
  • Add chicken.
  • Add 2 cups chicken broth from chicken boil.
  • Gently mix all the ingredients to coat everything well.
  • Cover and let simmer on medium heat for approximately 20-30 minutes.

It is a versatile dish - the measurements are estimated. Use whatever fresh vegetables you have on hand...red peppers, grated carrots, jalapenos, diced tomato... For example, if I'm making it for my Yankee parents I omit the poblano and cilantro, and add parsley, resulting in a mild but tasty saute of summer vegetables. Have fun experimenting and enjoy!

1 cup white onion (sliced into strips)
1 large poblano pepper (sliced into strips)
2 cloves garlic (minced)
Salt and pepper to taste
2 large tomatoes (1 quartered, 1 diced)
1-2 serrano peppers (sliced)
1/2 cup water
1 1/2 teaspoons Knorr chicken bouillon powder
1/2 teaspoon Mexican oregano (crushed)
1/2 teaspoon cumin
2 cups zucchini (diced)
1 full cup corn (fresh off the cob(or frozen))
2 cups queso panela, asadero or muenster cheese (cubed)

Steps:

  • In a large skillet, heat 1 1/2 tablespoons of olive oil to medium heat. Add the onions, poblano and garlic. Season lightly with salt and pepper. Saute for 6 to 8 minutes. Add diced tomato and cook for another few minutes.
  • While the vegetables cook, to the blender add, quartered tomato, sliced serrano, bouillon and 1/2 cup of water. Blend on high until smooth. Add to pan, along with oregano and cumin. Bring to a boil. Reduce to a simmer and cook for 5 minutes.
  • Taste broth for salt and pepper. Add zucchini and corn to the pan. Stir well to combine and cook for 5 to 7 minutes. Add 1/2 of the cheese and push down into broth. Add remaining cheese, cover pan with lid and cook just until cheese has melted a bit. Serve right away. Yields 4 servings.
