This delicious keto cheesy zucchini bread is blended for a light, fluffy texture - with no tell tale green strips of zucchini so you can sneak it by your picky kids! Shhh - I won't tell if you don't!

3/4 cup salted butter, melted
4 eggs
1/2 cup unsweetened almond milk
1/2 cup shredded zucchini, squeezed dry in a paper towel
2 tablespoons chopped sun-dried tomatoes (dried, not in oil)
2 cups almond flour
1/4 cup coconut flour
4 teaspoons baking powder
1 teaspoon granulated sugar substitute (I used Swerve)
1/2 teaspoon xanthan gum
1 1/4 teaspoon kosher salt
1/2 teaspoon dried oregano
1/2 teaspoon dried parsley
1/4 teaspoon garlic powder
1/2 cup shredded Asiago cheese

Steps:

  • Preheat the oven to 350 degrees (F)
  • Combine all of the wet ingredients (butter, eggs, almond milk, zucchini, sun-dried tomatoes) in a magic bullet and blend for about 30 seconds or until mostly smooth.
  • In a medium sized bowl, combine all of the dry ingredients (almond flour, coconut flour, baking powder, sweetener, xanthan gum, salt, oregano, parsley, garlic powder) and mix with a fork until well blended with no lumps.
  • Pour the wet ingredients into the dry ingredients and mix with a fork until a uniform batter is formed and the dry ingredients are absorbed.
  • Stir in the Asiago cheese.
  • Spoon the batter into a greased loaf pan (9×5 or equivalent) or 12 muffin cups.
  • Bake at 350 degrees (F) for 50-60 minutes if making a loaf.
  • Bake at 350 degrees (F) for 20-25 minutes if making muffins.

For the breadsticks:
2 zucchini, shredded (once dried out this is about 4 cups)
1 tablespoon minced garlic
1 tablespoon Italian seasoning
1/2 teaspoon salt
2 large eggs (if extra large is all you have reduce to 1)
2 cups shredded mozzarella cheese
For the topping:
1 cup shredded mozzarella cheese
red pepper flakes and basil (optional)

Steps:

  • Preheat the oven to 425 degrees
  • Shred the zucchini and place in a sturdy dish towel. Squeeze as much moisture as possible from the zucchini. When you feel like you've gotten as much as you can out unroll the towel and allow it to rest for several minutes then try again. Do not skip the second step, the zucchini needs to be extremely dry.
  • Transfer the dry zucchini to a mixing bowl and combine with the garlic, spices, eggs and cheese.
  • Place the dough on a greased or silicone lined baking sheet and spread into a rectangle. **Do not pat too thin, or it will be more like a thin crust pizza than breadsticks**
  • Bake for 20-22 minutes until the breadsticks have browned slightly and dried out.
  • Remove from the oven and top with remaining cheese. Bake for 5-7 more minutes until melted and bubbly.
  • Cut into 12 strips.

1 tablespoon minced onion flakes
1 tablespoon dried parsley flakes
1 ounce grated parmesan cheese
1/8 teaspoon garlic powder
2 tablespoons vegetable oil
2 teaspoons vegetable oil
2 eggs, beaten
3/4 cup almond flour
1 teaspoon baking powder
1 ounce shredded low-fat cheddar cheese or 1 ounce swiss cheese

Steps:

  • Preheat oven to 350.
  • In a large bowl, combine zucchini, onion flakes, parsley, Parmesan cheese, garlic powder, oil, and eggs. Mix with a fork or whisk.
  • Combine flour and baking powder. Stir into zucchini mixture, mixing well.
  • Place mixture in a 9-inch round sprayed pan. Sprinkle evenly with Cheddar or Swiss.
  • Bake 40 minutes, until a toothpick inserted in the center comes out clean.
  • Serve warm or toasted for best flavor.
