CORNBREAD DRESSING
This is my favorite Cornbread Dressing I use for special holidays. I make my own white bread using my bread machine and my own Skillet Cornbread to use in this recipe. If you prepare the bread ahead of time, you can freeze them until ready to use. I really like this dressing. It is easy to do and has a great flavor. I like to add fresh mushrooms to the mix. Steps:
- Melt butter in a skillet; add the onions and celery and saute until tender.
- Combine toasted bread and cornbread in a large bowl and mix.
- Add onions and celery plus their cooking liquid, the salt, pepper, sage, and poultry seasoning and mix throughly.
- Using a bulb baster, add just enough turkey giblet broth to make a very moist mixture, then stir in the eggs and scrape the dressing into a large greased baking pan or dish.
- Bake in 400 degree F oven until dressing is nicely browned, about 30-40 minutes.

- Preheat oven to 375 degrees F.
- In a large skillet over medium heat, melt 2 tablespoons of the butter; add the onions and season with salt and pepper, to taste. Cook, stirring often, until light golden, about 6 to 8 minutes and remove from the pan to a small plate. Raise the heat to medium-high and add the water, scraping up the brown bits from the bottom of the skillet and allowing the water to simmer just a couple of minutes to infuse in the onion flavor. Remove from the heat.
- Put the cornbread in a large mixing bowl. Melt the remaining 6 tablespoons butter in a small pan over medium heat and let it bubble until the milk solids to start to turn golden. Add the sage leaves and briefly fry until beginning to crisp, about 30 seconds. With a slotted spoon, remove sage and put on top of cornbread to drain and crisp. Remove the butter from the heat. Add the eggs and cooked onions to the cornbread and pour the browned butter over the mixture. Season with salt and pepper, to taste. Add the onion infused water, a tablespoon at a time, gently folding, until cornbread is evenly moistened but not soggy. Pour the dressing into a 9 by 11-inch baking dish and bake in the preheated oven until the top is golden brown in color and the dressing is set in the middle, about 30 minutes.

- Preheat the oven to 350 degrees F.
- Melt the coconut oil over medium heat in a large skillet. Saute the onion, celery and carrots until tender, 8 to 10 minutes. Remove from the heat and put into a large bowl. Add the cornbread croutons, seasoned croutons, thyme, rosemary, sage and cayenne if using. Add the chicken stock and stir to combine. Taste and add salt and pepper, then stir in the eggs. Mix to combine and pour into a 9-by-13-inch casserole dish. Bake until golden brown and fluffy but still moist, 45 to 55 minutes.
- Preheat the oven to 375 degrees F.
- Add 1 tablespoon of the coconut oil to a 6-inch cast-iron skillet. Put the skillet in the oven and allow to heat until very hot, 6 to 8 minutes.
- Combine the cornmeal, flour, baking powder and 1 teaspoon salt in a large bowl with a whisk. In a different bowl, combine the almond milk, applesauce, sorghum, egg and 2 tablespoons coconut oil. Make a well in the center of the dry ingredients and pour in the wet. Fold to combine.
- Carefully remove the skillet from the oven and pour in the batter. Return the skillet to the oven and bake until golden with a crisp crust, 25 minutes. Let cool before cutting the cornbread into 1-inch pieces (about 8 cups).
- Reduce the oven to 350 degrees F.
- Grease a baking sheet with some coconut oil and spread the cornbread in a single layer. Be careful, the cornbread is fragile and you don¿t want to be rough with it. Drizzle lightly with the remaining 2 tablespoons coconut oil and sprinkle with salt and pepper. Cook, stirring halfway through, until golden brown and crunchy, 30 to 40 minutes. Cool on the baking sheet before using.
CORNBREAD DRESSING
Cornbread dressing is a staple of the Southern Thanksgiving celebration. I make mine with the holy trinity (green peppers, onions and celery) and lots of fresh sage and thyme. While most dressing recipes call for the bread to be toasted, here it just needs to be at room temperature. However, if you would like to start with day-old bread, that works too!

- For the dressing: Preheat the oven to 425 degrees F.
- Put the crumbled cornbread in a large bowl and set aside.
- Melt 4 tablespoons of the butter in a 10-inch cast-iron skillet over medium-high heat. Add the onion, green pepper, celery, garlic, 1 teaspoon salt and a generous amount of black pepper and cook, stirring occasionally, until the vegetables are tender, 5 to 7 minutes. Stir in the giblets, sage and thyme until just heated through, 1 to 2 minutes. Transfer to the large bowl, add the eggs and fold into the cornbread until well combined. Wipe the skillet clean and set aside.
- Add 1/4 cup of the stock at a time to the bowl and fold after each addition until the mixture looks like batter (1 1/2 cups stock should be plenty). Transfer the dressing to the skillet and dot the top with the remaining 2 tablespoons butter. Bake until the eggs are cooked through and the top is golden brown, about 20 minutes.
- Meanwhile, make the gravy: Melt the butter in a medium saucepan over medium-high heat. Add the flour and cook, stirring constantly, until golden brown, 5 to 7 minutes. Slowly pour in the stock, whisking constantly, until well combined. Season with 1/2 teaspoon salt and a generous amount of black pepper. Bring to a simmer and cook, stirring occasionally, until the flour taste is gone and the gravy has thickened, about 15 minutes. Fold the giblets, egg and heavy cream into the gravy. Season with 1/2 teaspoon salt and a few grinds of pepper. Serve alongside the dressing.
- Preheat the oven to 425 degrees F. Spray a 10-inch cast-iron skillet with cooking spray.
- Whisk together the cornmeal, flour, baking powder, baking soda and 1 teaspoon salt in a medium bowl until combined.
- Whisk the buttermilk, melted butter, eggs and brown sugar in a large bowl until smooth. Fold in the cornmeal mixture until just combined (it should be a bit lumpy).
- Transfer the batter to the prepared skillet and dot the top with the remaining 2 tablespoons butter. Bake until the top is golden brown and a toothpick inserted into the center comes out clean, about 22 to 25 minutes. Let cool in the skillet for 10 minutes, then invert the bread onto a rack to cool completely, about 30 minutes.

CORNBREAD DRESSING
This is Paul Prudhomme's recipe for cornbread dressing that he uses in his Turducken recipe. I like to bake it as a side dish instead of stuffing for a turkey. If I'm short on time or if I do not have any chicken stock in the freezer I just use canned chicken broth. I also eliminated the giblets in the ingredients listing. If you like giblets add 1 1/2 pounds that have been boiled for an hour and then ground. I also reduced the Cayenne pepper from 2 tsp to 1/4 tsp and the Oregano from 2 tsp to 1 tsp. I can't imagine putting 2 tsp Cayenne pepper in this, however, if you want it VERY, VERY HOT feel free to use the original amount. I did modify the cooking steps a bit but it is still a fantastic dressing. Please don't let the long list of ingredients deter you from making this recipe - it is worth every step and it really is very easy.

- Preheat oven to 350°F.
- Mix the "seasoning mix" ingredients together in a small bowl and set aside.
- In a large dutch oven or deep skillet melt the butter over medium heat and add the onion, bell pepper, celery, garlic and bay leaf.

- Preheat oven to 350 degrees F and lightly grease an 8 inch baking dish.
- Combine the corn bread, toasted bread, and crackers in a large mixing bowl. Pour the stock into a saucepan and add celery and onion. Bring to a boil and cook for 10 to 15 minutes. Remove the stock mixture from the stove and allow it to cool for about 10 minutes before proceeding.

- Start chopping, and dicing all of the vegetables such as the celery, onions, and garlic. Also chop up the fresh sage.

- Preheat oven to 400 degrees. Mix corn muffin mix, four eggs, and 1 1/3 of milk until uniform and free of any large lumps. Transfer batter into a 13x9-inch pan and bake for about 30 minutes or until top is golden brown and a toothpick inserted into the center comes out clean. Allow to cool a bit for safe handling then crumble and set aside.
- Reset oven heat to 350 degrees. In a large pot, melt butter over medium heat.

- Place the 4 tablespoons of butter in an 8-inch skillet and melt in the oven for approximately 5 minutes.
- While the butter is melting, combine the Jiffy cornbread mix, sugar, cream cheese, and heavy cream in a medium-size mixing bowl.
- Pour the melted butter from the skillet into the mixing bowl and mix all the ingredients together.

- Bake at 350 degrees F. In the conventional oven for 25-30 minutes. Instant Pot Omni Plus oven for 23-25 minutes.

- In a large bowl, add in the cornmeal, all purpose flour, salt, baking powder, and sugar. Mix or sift the ingredients together.
- Before anything, make sure you carefully clean the turkey necks and gizzards. Be sure to remove the membranes from the turkey necks.
- Add 2 tbsp of olive oil ( or vegetable oil) into a medium sized pan. Turn the heat to medium, and add in the chopped onions and peppers. Cook the vegetables until they softened, then remove from the heat.

- For the Cornbread. Preheat oven to 450 degrees Fahrenheit. Use half of the canola oil to grease a heavy, 10 inch, cast iron skillet and place in the oven while preheating. Mix all ingredients together. Mixing well, but some lumps are ok. Remove skillet from oven and pour in batter. Return to preheated oven and bake for 20-25 minutes. Cool and save for dressing. I like to do this the day before.
- For the Dressing. Preheat the oven to 350 degrees Fahrenheit. Crumble the pre made cornbread to your liking. I like mine finely crumbled so I zip it in the food processor for just a bit. Melt butter in a skillet and sauté onions and celery and salt in the butter until softened and translucent.
- In a large bowl, combine crumbled cornbread, onions, celery and their pan drippings. Mix well. Add in beaten eggs and pepper and mix well. Next, add the broth, one cup at a time until desired consistency is reached. *Keep in mind a lot of the liquid will evaporate during cooking so 2 cups is a good rule for a firm yet moist dressing. You can add less but it will be dry. You can also add more but it will be soupy.

- Preheat oven to 350°F. Toss together 5 cups cornbread cubes, torn white bread, 1/2 cup melted butter, and sage in a large bowl. Heat a large skillet over medium-high. In 2 batches, add cornbread mixture to skillet; cook, stirring, until bread is toasted, 5 to 8 minutes. Transfer corn-bread mixture to a large bowl, and set aside. Wipe skillet clean.
- Add bacon to skillet; cook over medium, stirring often, until crisp, about 12 minutes. Using a slotted spoon, remove bacon; add to cornbread mixture. Reserve 2 tablespoons bacon drippings in skillet; discard remaining drippings or reserve for another use. Add onion, apple, celery, parsley, thyme, 1/2 teaspoon salt, and 1/4 teaspoon black pepper; cook, stirring occasionally, until softened, about 5 minutes. Add onion mixture to cornbread mixture. Crumble remaining 5 cups cubed cornbread into cornbread mixture.
- Whisk together 3 cups broth, eggs, remaining 1/2 teaspoon salt, and remaining 1/4 teaspoon pepper in a medium bowl until blended. Fold into cornbread mixture. Spoon mixture into a 13- x 9-inch baking dish. Drizzle with remaining 1/2 cup broth and remaining 1/4 cup melted butter. Bake in preheated oven until lightly toasted, about 35 minutes.
