OLD STYLE LOBSTER CHOWDER

This recipe comes from the Lunenberg Hospital Cookbook and is considered a collector's item in the Canadian Maritimes. I haven't tried it yet, but is sounds really good and looks relatively simple to make.

1 medium onion, finely chopped
2 medium potatoes, peeled, small dice
1 cup water
2 cups canned lobster, drained
2 cups whole milk
1/2 cup cream (recipe does not indicate butter fat content)
2 -3 tablespoons butter or 2 -3 tablespoons margarine
1 teaspoon salt
1/4 teaspoon pepper, freshly ground

Steps:

  • Combine onions and potatoes in a saucepan with water and cook until potatoes are tender.
  • Chop larger pieces of lobster into small pieces.
  • Add lobster, milk and cream to the potatoes and onions.
  • When heated through (do not allow to boil), add butter and season with salt and pepper, to taste.
  • Serve immediately.

2 tablespoons butter
2 potatoes, diced
1 cup water
2 cups lobster meat, cut up
1 teaspoon salt
1/4 teaspoon pepper
2 cups milk
1 cup light cream
1/4 cup butter

Steps:

  • In deep saucepan, saute onion in butter til tender.
  • Add potatoes and water.
  • Cover and simmer 10 mins or til potatoes are almost tender.
  • Add remaining ingredients.
  • Reheat, but do NOT boil.

This is my version of the fish chowder from the Company's Coming cookbooks. It is the authentic "Atlantic provinces" style. Serve with Recipe #213970 or your own.

1/2 cup butter or 1/2 cup hard margarine
1 cup chopped onion
2 cups diced potatoes (or so)
2 cups boiling water (enough to cover potatoes)
1/2 teaspoon salt
1/8 teaspoon pepper
1 bay leaf
2 lbs haddock fillets, cut bite size
1 cup whipping cream

Steps:

  • In a large pot, melt butter. Add onion and sauté until soft.
  • Add next 5 ingredients; cover. Cook until potatoes are tender-crisp. Do not overcook. Remove bay leaf.
  • Add fish; cook for about 5 minutes until fish flakes when tested with a fork.
  • Stir in cream; heat slowly, stirring often, until steaming hot.

Being from the Easy Coast, I've tried a lot of different chowders; however, my Mom's takes the cake. She makes a huge pot of this chowder every Christmas Eve and all of it is gone by Christmas night. Although it is not very healthy, it is an awesome treat once in awhile for any of us that love seafood! I normally throw in a dash of garlic and onion powder. Enjoy!

2 large onions, diced
3 carrots, sliced
7 potatoes, cubed
1 pound salmon, cut into chunks
1 pound cod, cut into chunks
1 pound scallops
1 pound shrimp, peeled and deveined
6 ounces cooked lobster meat, shredded
1 (6 ounce) can crabmeat, drained and flaked
2 (6.5 ounce) cans chopped clams, drained
4 ¼ cups heavy whipping cream
2 cups half-and-half
1 ½ cups butter, cut into chunks
salt and ground black pepper to taste

Steps:

  • Fill a large pot halfway with lightly salted water; bring to a boil. Add onions and carrots; cook until slightly tender, 10 minutes. Add potatoes; cook until tender, 15 to 20 minutes.
  • Stir in salmon, cod, scallops, shrimp, lobster, and crab; cook over medium heat until salmon and cod are firm but chunks are still slightly translucent in the center, about 10 minutes. Drain half the water from the pot and add clams, heavy cream, and half-and-half. Place butter chunks atop the soup; season with salt and black pepper. Cover and simmer, stirring occasionally, until salmon and cod are fully cooked and flake easily with a fork, about 30 minutes.

1 1/2 teaspoons celery salt

3/4 cup sour cream
1 1/2 cup farmer's whipping cream
1 cup farmer's milk
2 cups Nova Scotia lobster meat, cooked & chopped, plus juices or substitute
1 (11.3-ounce) tin frozen lobster meat

Steps:

  • In a large saucepan over medium heat sauté onions in butter until soft and transparent, do not over cook. Stir in the thyme, celery salt and pepper, and then the cooked potatoes. In a bowl, blend the sour cream, whipping cream, milk and the lobster meat and juice. Add to potato mixture and stir gently. Heat through but do not boil.

1/2 cup butter
3 onions, chopped
1 cup diced celery
1 small green pepper, diced
1 small red pepper, diced
1/4 cup flour
1 tablespoon italian seasoning or 1 tablespoon herbes de provence
2 teaspoons salt
1 teaspoon pepper
1 (11 ounce) can frozen lobster meat, thawed and cut in bite-size pieces or 1 (11 ounce) can fresh lobsters, if you are so lucky
2 (385 ml) cans 2% evaporated milk
1/4 cup chopped fresh parsley

Steps:

  • In a large saucepan, bring 4 cups water to a boil; add potatoes and cook for 20 minutes or til tender.
  • In skillet, melt 1/4 cup of the butter over medium heat.
  • Add onions, celery and peppers, cook, stirring occasionally, for about 10 minutes or until softened.
  • Sprinkle with flour, herbs, salt and pepper.
  • Cook for two minutes.
  • Add to potato mixture.
  • In same skillet, melt remaining butter over medium heat.
  • Add lobster; cook, stirring for 4 minutes.
  • Add to potato mixture.
  • Add evaporated milk; stir over medium heat for 10 minutes or until heated.
  • Serve garnished with parsley.
