Portobello Mushroom Salad image

Provided by Rachael Ray : Food Network

Categories     appetizer

Time 10m

Yield 4 servings

Number Of Ingredients 7

4 portobello mushroom caps, wiped clean and very thinly sliced
4 ribs celery and their green tops, thinly sliced on an angle
Handful flat-leaf parsley, picked of stems but left whole
1 lemon (Heads up: you'll need lemon zest for the pesto later, so zest and reserve before you cut this lemon to juice it for this salad.)
3 tablespoons extra-virgin olive oil, eyeball it
Coarse salt and black pepper
A couple of handfuls shaved Parmiginao-Reggiano

Steps:

  • Arrange the mushrooms and celery on a platter and scatter the parsley leaves around. Squeeze the lemon juice evenly over the platter then liberally drizzle the salad with extra-virgin olive oil, about 3 tablespoons. Season the salad with salt and lots of black pepper and toss with your finger tips to combine. Using a vegetable peeler, shave cheese and scatter a couple of handfuls Parmigiano-Reggiano over the salad.

Blackened Salmon on Wilted Greens with Portobello Mushrooms image

Provided by Food Network

Number Of Ingredients 15

2 cups Tropicana orange juice
Zest and juice of 2 oranges, zest finely chopped
1 tablespoon finely chopped rosemary
1/4 cup sugar
1 pound butter
1 large portobello mushroom cap, underside cleaned the stem removed, and thinly sliced
1 tablespoon unsalted butter
1 large handful of mixed greens, spring mix or mesclun
Salt and pepper to taste
2 ounces white wine
Four 6-ounce salmon fillets
Salt and pepper to taste
Cajun spice to taste
2 tablespoons canola oil
Serving suggestions: wild rice blend and honey-glazed carrots

Steps:

  • For the butter: Reduce all the above the ingredients down to approximately 1/2 cup and chill the reduction. When chilled, incorporate the reduction into 1 pound of butter, using a food processor. Remove to a bowl and refrigerate until needed.
  • For the greens: In a medium saute pan over high heat saute the mushrooms in butter until well browned. Season with salt and pepper. When the mushrooms are cooked, add the greens and deglaze the pan with white wine.
  • For the salmon: Season the fillets with salt and pepper and Cajun spice. Heat the canola oil in a cast iron skillet until very hot, almost smoking. Carefully add the salmon fillets and blacken them, approximately 3 minutes per side. Turning only once per side.
  • To assemble the dish: Place the blackened salmon on top of the wilted greens and mushrooms, and top it with 1 teaspoon of the orange-rosemary butter. Serve with your favorite wild rice blend and honey-glazed carrots.

BLACKENED PORTOBELLO MUSHROOM SALAD

Blackened Portobello Mushroom Salad image

A SPEEDY cajun themed main-dish salad. Recipe from Cooking Light, May 1998. It is very highly rated on their website. After making this recipe, I have to say I was pleased. I marinated my mushrooms for about 30 minutes and they had great flavor. I used Emeril Essence (left over from another recipe) as the Cajun seasoning. My only suggestion would be to cut the mushrooms very thin so that they aren't rubbery after cooking. ENJOY!

Number Of Ingredients 24

sea salt
1/4 cup extra virgin olive oil
2 shallots, chopped
2 garlic cloves, minced
2 -3 tablespoons low salt cajun seasoning
1/2 cup dry white wine
1 1/2 tablespoons white wine vinegar (or white balsamic vinegar)
4 large portabella mushrooms, stemmed, gills removed, cut on the bias into 1/4-inch slices
1 cup mayonnaise (vegan preferably)
1 tablespoon ketchup
1 tablespoon dijon-style mustard
1 teaspoon hot sauce
1 teaspoon Worcestershire sauce (vegan preferably)
1 tablespoon fresh lemon juice (or lime)
1/4 teaspoon sea salt
2 teaspoons capers, minced
2 teaspoons shallots, minced
1 teaspoon fresh parsley, minced
2 teaspoons red bell peppers, minced
1/4 cup remoulade sauce
4 soft sandwich buns, split
4 -8 lettuce leaves, rinsed and dried (romaine works well)
1 large tomatoes, thinly sliced
1 ripe avocado, peeled, sliced

Steps:

  • Mushrooms:.
  • Place a large pot over medium heat. Sprinkle the bottom with a pinch of salt and heat for 1 minute. Add the oil and heat for 1 minute, being careful not to let it smoke. This will create a nonstick effect.
  • Add the shallots and garlic and cook for 3-4 minutes, until softened. Add 1 tbls. of the Cajun seasoning, along with the wine, vinegar, and 1 cup water, bring to a boil, lower heat and simmer 20 minutes.
  • Add mushrooms and cook 1 minute. Pour the mushrooms and liquid into a shallow container, cover, and set aside to marinate for 1 hour.
  • Remove the mushrooms from the marinade and press between paper towels or in a dish towel to remove excess marinade, then sprinkle with remaining Cajun seasoning, pressing the seasoning into both sides of the mushroom slices. Discard the marinade(or save for another use).
  • In a cast iron skillet over medium high heat, cook the mushrooms in a single layer(you may need to do this in two batches) until blackened, 2-3 minutes on each side. Remove to a plate.
  • Remoulade:.
  • Place all the ingredients in a food processor or blender and blend on high for 1 minute. Store, covered, in the refrigerator for up to 1 week.
  • Makes 1 3/4 cups.
  • Putting it together:.
  • Spread a spoonful of the remoulade on one half of each roll. Top each with 1 or 2 lettuce leaves and a few slices of tomato and avocado. Divide the mushroom slices among the rolls. Close each sandwich and cut in half. Serve and enjoy!
