GRILLED AVOCADO AND CHICKEN SALAD

Oil, for grilling
1 large Hass avocado
1 store-bought rotisserie chicken
1/4 cup extra-virgin olive oil
1 tablespoon whole-grain mustard
2 teaspoons honey
1 lemon, juiced
Kosher salt and freshly ground black pepper
1 bag spring greens mix
1 block feta cheese, preferably goat's milk
1/4 cup basil leaves, sliced crosswise into ribbons

Steps:

  • Preheat a grill or grill pan over medium-high heat. Clean and oil the grates.
  • Halve the avocado and remove the pit but leave the skin on. Grill cut-side down until grill marks form, 3 to 5 minutes. Flip and grill 2 more minutes. Remove from the heat and let cool slightly. Once cool enough to handle, peel and chop into 1/2-inch cubes. Set aside.
  • Meanwhile, shred the chicken into large pieces, using mainly the breast meat. Place in a medium bowl and set aside.
  • Make the dressing: Combine the oil, mustard, honey and lemon juice in a small bowl or jar and whisk together. Season with salt and pepper.
  • Divide the spring greens mix among 4 bowls or plates. Crumble the feta over the top, sprinkle with the basil, then top with the chicken and grilled avocado. Drizzle with the dressing and serve.

1/2 cup lime juice
1/2 cup light olive oil
2 tablespoons dried ancho chile powder
2 tablespoons Worcestershire sauce
1 tablespoon ground cumin
1 tablespoon minced garlic
2 teaspoons black pepper
1 cup honey
1/4 cup canola oil
4 tablespoons dried ancho chile powder
2 -3 tablespoons pureed canned chipotle chiles in adobo
2 tablespoons Dijon mustard
2 teaspoons ground coriander
2 teaspoons ground cumin
2 teaspoons spanish paprika
kosher salt & freshly ground black pepper
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 -2 1/2 cups whole milk, heated (do not boil)
16 ounces monterey jack cheese, grated
salt & freshly ground black pepper
1 pinch freshly grated nutmeg
3 ripe Hass avocadoes, peeled, pitted and diced
1 serrano peppers (or more to taste) or 1 jalapeno chile, finely diced (or more to taste)
1/2 small red onion, finely diced
2 limes, juice of
2 tablespoons canola oil
2 teaspoons honey
salt & freshly ground black pepper
1/4 cup finely chopped fresh cilantro
8 jalapeno chiles
canola oil, for brushing
blue corn tortilla chips, for serving

Steps:

  • For the chicken and marinade: Place the chicken thighs in a bowl. Whisk together the lime juice, olive oil, ancho chili powder, Worcestershire sauce, cumin, garlic and black pepper in a small bowl and pour over the chicken. Cover the chicken and refrigerate overnight.
  • For the chipotle honey sauce: Whisk together the honey, canola oil, ancho chile powder, chipotles, mustard, ground coriander, ground cumin and Spanish paprika. Season with salt and pepper and set aside.
  • Preheat the grill to medium-high heat. Sprinkle the chicken well with salt and place the chicken thighs on the grill at a 45-degree angle to establish good grill marks. Once the chicken easily releases from the grill, turn it over to continue cooking. Start brushing the thighs with the chipotle honey sauce every few minutes. Once the internal temperature reaches 165 degrees F, or its juices run clear, about 8 minutes. Remove the chicken from the grill. Let the chicken rest for 5 to 10 minutes before serving. Slice the chicken.
  • Layer the tortilla chips, top with sauce, chicken, relish and jalapenos.
  • To Make Monterey Jack Cheese Sauce: Melt the butter in a medium saucepan over medium heat. Whisk in the flour and cook for 1 minute. Slowly whisk in 2 cups of the warm milk, increase the heat, bring to a boil and continue whisking until the sauce thickens and the flour taste has been cooked out, about 5 minutes.
  • Remove the sauce from the heat and slowly whisk in the cheese a handful at a time. Continue whisking until smooth. Season with salt and pepper and nutmeg. Set aside.
  • To Make Avocado Relish: Combine the avocados, serrano, onions, lime juice, oil, honey and salt and pepper to taste in a medium bowl. Fold in the cilantro until combined.
  • To Char the Jalapenos: Brush the jalapenos with oil and season with salt and pepper. Grill until charred all over, about 6 minutes.

12 ounces soba noodles
1 jalapeno, seeds removed
1/3 cup honey
1/4 cup chopped fresh cilantro leaves
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 to 3 tablespoons water
2 teaspoons olive oil
1/2 rotisserie chicken, shredded or sliced
3 tablespoons soy sauce
2 teaspoons sesame oil
1/4 cup chopped scallions, green part only
2 tablespoons pickled ginger, minced

Steps:

  • Cook soba noodles according to package directions. Drain and set aside (or refrigerate until later in the week).
  • In a blender or food processor, combine jalapenos, honey, cilantro, and 1/2 teaspoon each salt and black pepper and puree until smooth. Add 2 to 3 tablespoons of water to the mixture until desired consistency is achieved. Pour the 2 teaspoons of olive oil into a preheated skillet. Add the shredded chicken and the blended sauce and cook until heated through.
  • In a medium bowl, combine cooked soba noodles, soy sauce, sesame oil, scallions, and pickled ginger. Toss and then transfer to serving bowl. Pour heated chicken and sauce over noodles.

6 bacon strips, halved
6 boneless skinless chicken breast halves (4 ounces each)
1/2 cup olive oil
1/4 cup red wine vinegar
1/4 cup soy sauce
1 teaspoon minced garlic
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/4 teaspoon pepper
6 thin slices sweet onion
6 thin slices tomato
6 thin slices avocado
6 thin slices Monterey Jack cheese

Steps:

  • Cook bacon according to package directions; drain. Meanwhile, flatten chicken to 1/4-in. thickness. In a large resealable plastic bag, combine the oil, vinegar, soy sauce, garlic, salt, oregano and pepper; add chicken. Seal bag and turn to coat; refrigerate for at least 30 minutes. , Drain and discard marinade. Grill chicken, uncovered, over medium heat for 4-6 minutes on each side or until meat is no longer pink. , Move chicken to edges of grill. Top each with two bacon pieces and one slice of onion, tomato, avocado and cheese. Cover and grill 4-6 minutes longer or until cheese is melted.
