CAJUN PORK CHOPS

Cajun Pork Chops image

This is a recipe I am transferring here from an old handwritten recipe card. I have no idea where it came from, but I have made it many times over the years and we really like it. (There are several recipes for Cajun pork chops here, but the dry rub mixture in this recipe has different ingredients.)

Provided by TasteTester

Categories     Pork

Time 18m

Yield 4 serving(s)

Number Of Ingredients 10

1 tablespoon paprika
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon sage
1/2 teaspoon fresh ground black pepper
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper (or to taste)
4 boneless center cut pork chops, 1/2-inch thick
1 1/2 teaspoons butter
1 1/2 teaspoons oil

Steps:

  • Combine paprika, cumin, salt, sage, pepper, garlic powder and cayenne in a bowl. Coat chops with seasoning mixture on both sides, pressing into the meat.
  • Heat butter and oil over high heat in a large skillet until very hot. Place chops in skillet, reduce heat to medium and cook 7-8 minutes, turning once halfway through cooking time.

PAN-SEARED PORK CHOPS WITH WARM CAJUN GRAIN SALAD

Pan-Seared Pork Chops with Warm Cajun Grain Salad image

We love the plump and tender grains of spelt (a member of the wheat family) in this warm Cajun-inspired salad. The dish goes great with pork chops, but also try it with grilled chicken or blackened fish.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h5m

Yield 4 servings

Number Of Ingredients 13

3/4 cup spelt
3 tablespoons olive oil
1 small green bell pepper, cut into thin 1-inch strips
4 scallions, cut into 1/2-inch-long pieces, white and green parts separated
2 stalks celery, thinly sliced
2 ounces Canadian bacon, cut into 1/2-inch pieces
2 cloves garlic, thinly sliced
1 1/2 teaspoons Cajun seasoning
1 cup cherry tomatoes, halved
1/2 cup roughly chopped parsley
Kosher salt
4 bone-in pork chops, each about 3/4-inch-thick and 8 ounces
Lemon wedges and Louisiana-style hot sauce for serving, optional

Steps:

  • Combine the spelt with 1 1/2 cups of water in a medium saucepan. Bring to a boil, reduce heat to medium low, cover and simmer until most of the water is absorbed and the grains are tender but still chewy, about 30 minutes. Remove from the heat and let sit, covered, for 10 minutes. Let cool completely. (The spelt can be cooked up to 1 day ahead and refrigerated.)
  • Heat 2 tablespoons of the oil in a large nonstick skillet over medium-high heat. Add the bell pepper, scallion whites, celery and Canadian bacon and cook, stirring frequently, until the vegetables are crisp-tender and the ham is lightly browned, about 4 minutes. Add the garlic and 1/2 teaspoon of the Cajun seasoning and cook, stirring, for 1 minute. Add the spelt, tomatoes, scallion greens, parsley and salt to taste. Cook, stirring, until the spelt and tomatoes are warmed through, about 2 minutes. Remove from the heat, transfer to a medium bowl and cover to keep warm. Wipe out the skillet.
  • Sprinkle the pork chops all over with the remaining 1 teaspoon Cajun seasoning and 1 teaspoon salt. Heat the remaining 1 tablespoon oil in the empty skillet over medium-high heat. Nestle the pork chops in the skillet snuggly. Cook until nicely browned on both sides and an instant-read thermometer inserted into the center of each registers 140 degrees F, about 4 minutes per side.
  • Divide the pork chops among four plates. Serve with the warm grain salad, and with wedges of lemon and hot sauce on the side if using.

CAJUN PORK CHOPS WITH KALE

Cajun Pork Chops with Kale image

Provided by Food Network Kitchen

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 12

2 tablespoons extra-virgin olive oil
3 tablespoons chili powder
1 tablespoon jalapeno hot sauce
2 pounds thin-cut bone-in pork chops (about 6 chops)
Kosher salt
4 stalks celery, chopped
1 large white onion, chopped
3 cloves garlic, chopped
2 cups low-sodium chicken broth
1 14.5-ounce can no-salt-added diced tomatoes
1 15-ounce can no-salt-added white beans, drained and rinsed
1 5-ounce package chopped kale (about 6 cups packed)

Steps:

  • Preheat the broiler. Whisk 1 tablespoon each olive oil, chili powder and hot sauce in a bowl. Season the pork chops with 1/2 teaspoon salt. Pierce the chops all over with a fork and rub with the spice mixture on both sides; place on a rack set over a baking sheet. Set aside.
  • Heat the remaining 1 tablespoon olive oil in a Dutch oven or large pot over medium-high heat. Add the celery, onion, garlic and the remaining 2 tablespoons chili powder. Cook, stirring, until the vegetables are translucent, about 8 minutes.
  • Add the chicken broth and tomatoes to the pot. Cook, stirring occasionally, until reduced by about one-third, about 7 minutes. Add the beans and kale; toss to coat. Reduce the heat to medium, cover and cook until the kale is tender, about 7 minutes. (Add up to 1/2 cup water if the mixture looks dry.) Season with salt.
  • Meanwhile, broil the pork until browned, 4 to 6 minutes. Flip; broil until cooked through, 2 more minutes. Serve with the kale and beans.

BRO'S "CAJUN" STUFFED PORK CHOPS

Bro's

Provided by Food Network

Time 13h20m

Yield 4 servings

Number Of Ingredients 15

4 center cut pork chops
1 pound ground (chili cut) pork
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
1/2 teaspoon granulated garlic
1/4 teaspoon freshly ground black pepper
1 teaspoon paprika
1/2 cup finely chopped green onions
1 teaspoon salt
1 teaspoon cayenne pepper
1 teaspoon granulated garlic
1 teaspoon freshly ground black pepper
1 teaspoon paprika
2 cups BBQ sauce, (recommended: Bro's BBQ Sauce)
Dirty rice, red beans and tasso, praline yams and cornbread, as accompaniments, optional

Steps:

  • On a flat surface, use a sharp knife to make a pocket inside each of the pork chops. In a mixing bowl, combine the ground pork, salt, cayenne, granulated garlic, black pepper, paprika, and green onions; mix well. Divide the pork mixture into 4 equal amounts and overstuff the mixture into the pocket of each pork chop. Mix all the rub ingredients together in a small bowl. Season each pork chop with the rub. Cover and refrigerate overnight to let the seasoning infuse into the chops. Preheat a grill or BBQ pit to 375 degrees F. Put the stuffed chops on the grill or BBQ pit. After 30 minutes, turn the pork chops over. After an additional 15 minutes, turn each pork chop over and begin basting each side with BBQ sauce. Grill until a pretty glaze forms and the internal temperature registers 170 degrees F on an instant-read thermometer. Serve the pork chops on top of dirty rice, with red beans and tasso, praline yams and cornbread, if desired.

CAJUN SMOTHERED PORK CHOPS

Cajun Smothered Pork Chops image

Pork chops smothered with onions and Cajun flavors in a rich stock. Cajun comfort food. Simple ingredients and simple methods.

Provided by Sweet Daddy D

Categories     Main Course

Time 3h15m

Number Of Ingredients 18

6 bone-in pork chops (2 - 3 pounds)
2 tablespoons vegetable oil
6 cups yellow onion (sliced thin (about 2 large onions))
4 cloves garlic (rough chop)
1 tablespoon AP flour
4 tablespoons butter
1 cup dry white wine
3 cups chicken stock (plus some reserved)
16 ounces baby Bella mushrooms (quartered-optional)
1 tablespoon Creole seasoning
1 teaspoon dry oregano
1 teaspoon dry basil
½ teaspoon dry thyme
1/2 teaspoon cayenne pepper (Optional)
1/2 teaspoon Kosher salt
1/2 teaspoon ground black pepper
⅓ cup Creole seasoning
⅔ cup AP flour

Steps:

  • Rinse pork chops and pat dry with a paper towel.
  • Sprinkle both sides of the chops with kosher salt and ground black pepper and let sit for about 15 minutes.
  • Combine the ingredients for the dredge.
  • Heat the vegetable oil in a Dutch oven over medium-high heat.
  • Dredge the pork chops in the dredge mix and shake off the excess.
  • When the oil is hot, sear the pork chops on both sides for about 3 to 4 minutes. Set aside on paper towels. Do this in batches so you don't crowd the pan.
  • If there are any burned morsels in the dutch oven, wipe out with a paper towel.
  • Set the heat to medium over under the dutch oven and add the butter.
  • When the butter is frothy add the AP flour and stir constantly to make a light roux. NOTE: The roux will be very thin because of the 4:1 ratio of butter to flour, but with the long cook, it will still serve to thicken the gravy.
  • Add the yellow onions and stir until starting to wilt about 8 to 10 minutes.
  • If using the mushroom, add them about halfway through (after about 4 minutes) sauteeing the onions.
  • When the onions are wilted, add the garlic and the Herb and Spice Blend. Stir to combine.
  • Saute until the garlic is aromatic, which will only take about 2-3 minutes. Stir constantly.
  • Increase heat to medium-high.
  • Stir in the white wine and simmer until the wine has reduced by about half, about 5 minutes. Use the wine to deglaze the pan if necessary by scraping the bits of food off the bottom.
  • Add the stock. Bring the stock to a high simmer and continue for about 5 minutes.
  • Add the pork chops back to the pot. Stir and move them around so that they are all covered with the gravy.
  • Lower the heat to a low simmer, cover the Dutch oven and simmer for 1 hour. Stir the pot thoroughly every 15 minutes or so.
  • After 1 hour, continue to simmer with the pot partially covered for another 30 minutes, stirring occasionally.
  • Check the pork chops for tenderness and continue to simmer until very tender. Taste the gravy for seasoning and add more if needed. Add more reserved stock if the gravy is too thick. Place the lid on completely or partially depending upon how thick you want the gravy.
  • Once the chops are tender and falling apart, serve immediately over rice.

  • Grill pork chops for about 4-5 minutes per side. Flip them over when the chops easily release from the grill grates. Actual cooking time will vary depending on the thickness of your chops and the temperature of the grill. Internal temperature of the meat should reach at 140-145 degrees F.
