CAJUN RICE WITH SAUSAGE

2 slices bacon, chopped
12 ounces spicy chicken sausage (preferably Cajun style), cubed
1 small onion, chopped
2 stalks celery, sliced
1 small green bell pepper, chopped
2 cloves garlic, minced
2 teaspoons chopped fresh thyme or 1 teaspoon dried thyme
Kosher salt and freshly ground pepper
1 cup long-grain white rice
1 cup low-sodium chicken broth
2 cups chopped frozen okra, thawed
2 tablespoons chopped fresh parsley

Steps:

  • Heat a large cast-iron skillet over high heat. Add the bacon and cook until crisp, about 2 minutes. Transfer with a slotted spoon to a paper towel-lined plate to drain. Add the sausage, onion, celery and bell pepper to the skillet and cook, stirring, until the vegetables are soft and the sausage begins to brown, about 3 minutes.
  • Add the garlic, thyme, 1 teaspoon salt and 1/2 teaspoon pepper to the skillet, then stir in the rice. Add the chicken broth and 1 cup water and bring to a boil. Stir in the okra, then reduce the heat to low, cover and simmer 15 minutes. Remove from the heat and let sit, covered, 5 minutes. Add the bacon and parsley and fluff with a fork.

This easy skillet dinner comes together quickly, making it a perfect option for a weeknight. We used spicy andouille sausages to give the dish a little kick, but any type of sausage would work. Cooking at medium-high heat allows the sausage and vegetables to get nice and caramelized in a short amount of time, but if they ever start to overcook, stir in a splash of cold water to cool the pan down.

2 tablespoons canola oil
8 ounces chicken andouille sausages, sliced diagonally 1/4-inch thick (about 1 heaping cup)
1 small yellow onion, thinly sliced (about 2 scant cups)
Kosher salt
1/2 small head green cabbage, cored, halved crosswise and sliced 1/4-inch thick (about 6 cups)
1/4 teaspoon crushed red pepper
2 cloves garlic, minced
3 tablespoons apple cider vinegar
1 tablespoon unsalted butter
1/2 small sweet-tart apple such as Gala or McIntosh, cored and sliced 1/8-inch thick (about 3/4 cup)
1 large scallion, thinly sliced (about 1/4 cup)
Hot sauce, for serving

Steps:

  • Heat a large cast-iron skillet or high-sided saute pan over medium-high heat. Add the oil and swirl the pan to coat evenly. Add the sausage slices in a single layer and cook until browned on the first side, about 2 minutes. Flip and cook until browned on the second side, about 2 minutes. Use a slotted spoon to remove the sausage slices to a bowl and set aside.
  • Add the onion, a splash of water and large pinch salt to the pan and cook over medium-high heat, using a wooden spoon or heatproof rubber spatula to scrape up any browned bits from the bottom of the pan. Cook, stirring occasionally, until the onion is lightly browned in spots and starting to get tender, 5 to 7 minutes. Add the cabbage, crushed red pepper and another pinch salt and cook until cabbage is crisp-tender, 6 to 8 minutes, stirring occasionally. If the pan seems dry at any point, stir in another splash of water.
  • Add the garlic and cider vinegar and cook until the vinegar is mostly evaporated, about 1 minute, stirring constantly. Stir in the butter until melted, then return the sausage to the pan along with the apple and cook until the apple slices are just tender, 3 to 4 minutes, stirring occasionally.
  • Sprinkle with the scallion and serve immediately with hot sauce alongside.

4 teaspoons olive oil
2 celery ribs, diced
1 medium onion, diced
14 ounces diced tomatoes with green chilies
1 red bell pepper, diced
1 cup uncooked long grain rice (I use brown rice)
2 garlic cloves, minced
1/2 teaspoon salt
1 tablespoon fresh thyme or 1 teaspoon dried thyme
10 ounces fresh kale, stems removed and chopped (or 8-10 stalks)
1 cup cheddar cheese, shredded (optional)
1/2 lb linguica sausage, quartered lengthwise and sliced
2 1/2 cups water
your favorite hot sauce

Steps:

  • In a wide, heavy-bottomed saute pan with a lid, or a soup pot, heat 1 tsp olive oil over medium heat.
  • Add sausage and lightly brown, 3-4 minutes.
  • Remove sausage and set aside.
  • Add remailing oil to same pot and saute onion, celery, and red pepper over medium heat for 4 minutes.
  • Add garlic and cook and additional minute.
  • Stir in rice to coat with oil.
  • Add water, tomatoes, thyme, and salt.
  • Place kaleon top without mixing in, cover, and boil for 2 minutes.
  • turn heat to low, cover, and simmer for 20 minutes until rice is done (35-45 minutes for brown rice).
  • Stir in reserved sausage and cheese (if using). Cover again for a minute to let cheese melt.
  • Add your favorite hot sauce (I use Cayenne concoction).

1 large onion, chopped
1 medium green pepper, chopped
1 can (14-1/2 ounces) diced tomatoes with garlic and onion, undrained

1 medium onion, diced

3 bay leaves or 1 teaspoon dried thyme

2 tablespoons butter or 2 tablespoons margarine
1 cup onion, chopped
1 (4 ounce) can mushrooms
2 (3 1/2 ounce) bags boil-in-the-bag rice
1 (14 1/2 ounce) can chicken broth
1 (14 1/2 ounce) can stewed tomatoes
2 tablespoons cajun seasoning
1 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
1 dash of texas pete hot sauce (optional)

Steps:

  • Melt butter or margarine in large skillet.
  • Cut raw sausage into 1/2" pieces.
  • Add sausage to skillet and fry on medium-high heat for 10 minutes, turning occasionally.
  • Add onions and mushrooms, and saute for 5 minutes.
  • Add uncooked rice, chicken broth, stewed tomatoes, cajun seasoning, black pepper, cayenne pepper, and hot sauce to skillet, and stir thoroughly.
