CAIPIRINHAS WITH PINEAPPLE
Though traditionally made with limes, the national cocktail of Brazil can also be made with pineapple or passion fruit

Steps:
- Core the pineapple and cut into 3cm chunks. Place 8 small handfuls of pineapple, the lime juice, half the mint and the sugar into a pitcher and mash up with the end of a rolling pin or a fat wooden spoon.
- Pour in the cachaça and a little crushed ice, then pour into 8 glasses, and add more crushed ice. Pour the pineapple juice over, filling to the rim. Garnish the glasses with extra mint sprigs and cocktail sticks with pieces of pineapple threaded on.

- Combine the sugar, mint leaves and 3 cups pineapple chunks in a pitcher. Muddle with a wooden spoon until the sugar is dissolved and the pineapple is crushed. Stir in the remaining pineapple and the cachaca and refrigerate until cold, at least 30 minutes or up to 4 hours.
- Add 6 cups ice to the pitcher and stir vigorously. Divide among glasses and garnish with mint sprigs.

Brazilian national drink. You can change limes for kiwis, pineapple or passion fruit, or mix them, but you may cut on sugar.

Steps:
- Cut the lime in quarters then cut them crosswise.
- Put lime and sugar in a tall glass and mash with a pestle (or a wood spoon, rolling pin, etc).
- Add the same amount of liquor on the lime juice and stirr.
- Add ice and stirr again.
- Here in Brazil, the guys that sell it at the beach put another glass upside down over it, hold both with one hand and shake.
- Great trick at parties.

- To make the pineapple infused cachaca place the pineapple slices in a large container, pour the cachaca over the pineapple slices, close tightly and let it rest in a dark cool place for a few days - but no longer than a week.
- Use a muddler to crush and mix the limes and sugar in a cocktail shaker.

REFRESHING CAIPIRINHA
Caipirinha is the national drink of Brazil. The drink is made with cachaça (pronounced - kuh-sha-suh). It is technically a brandy and a member of the aguardente family. There is an old adage in Brazil: "quanto pior a cachaça, melhor a caipirinha" -- the worse the cachaça, the better the caipirinha. The name caipirinha is derived from the Portuguese word caipira (hick, hayseed, country bumpkin, rube, etc.) coupled with the -inha suffix (a diminutive denoting little or small) and can be roughly translated as little hick, little hayseed, little country bumpkin, little rube, etc., etc. Poor man's drink or not, cachaça has become an integral part of Brazilian culture and its significance ranks right up there with soccer/football (futebol), carnival and samba as Brazilian national icons. The Brazilians like it sweet.... VERY sweet. In Brazil, the very best caipirinhas are made with "limões gallegos" -- what in the U.S. is often referred to as a key lime. Can also be made by the pitcher!

Steps:
- Trim the ends off the key limes and halve lengthwise. Cut each half into 4 slices.
- In a cocktail shaker, using a wooden spoon or a pestle, muddle the key limes with the 1/4 cup of sugar until juicy and the sugar dissolves.
- Add the cachaça and the crushed ice and shake for 10 seconds; taste and add more sugar if desired.
- Pour (not strain) into an old-fashioned glass or tumbler ice and serve.
