Authentic Romanian Sauerkraut Stuffed Cabbage Rolls- a great recipe for feeding a crowd, take it to potlucks and family reunions. The recipe explains the traditional way of making the cabbage rolls and also the crockpot and the Instant Pot versions.

1 pound ground meat(could be pork beef or a 50/50 mixture), 500 g
1 large onion chopped finely
1 cup rice
3-4 bay leaves
1 teaspoon thyme
1 teaspoon pepper
1 teaspoon marjoram
1 pickled cabbage or 1 big jar of cabbage leaves
1 cup tomato juice
1/2 cup tomato paste
Optional: 1/2 pound bacon chopped

Steps:

  • Make the filling:
  • In a large bowl place together ground meat, diced onions, rice, thyme, ground pepper and marjoram. Mix everything really well.
  • Set aside.
  • Make the cabbage rolls:
  • Prepare the cabbage leaves by removing the core and the thickest part of each leaf. If the leaves are too big cut them in half.
  • Grab a cabbage leaf and place 1 tablespoon of meat on it. Wrap the meat inside the cabbage leaf to obtain a neat roll.
  • Place shredded cabbage on the bottom of the pot, then start adding the rolls.
  • Optional, you can add a layer of bacon over each layer of rolls.
  • Fill up the pot with cabbage rolls, then mix together the tomato juice and the paste and pour it over the rolls.
  • Add water to cover the rolls.
  • The final layer should be shredded cabbage.(use left over cabbage)
  • Sprinkle more bacon, thyme and bay leaves and cover with a lid.
  • Bake in the oven at 350F for about 2 hours.
  • Remove the lid and allow the cabbage rolls to bake for another 30-45 minutes. You might notice the water evaporated, so you can add a little bit more, but do not fill up the pot again.
  • Serve them warm with a dollop of sour cream on top, fresh bread or polenta and hot peppers.
  • Crockpot: Follow the same method of making the rolls, but cook them in the crockpot on "Low" from 6-8 hours, or 4-5 hours on "high".
  • Instant Pot: Follow the recipe as I describe it. Close the pot and press the "Pressure Cook"manual button setting the time for about 18-20 minutes. Do a natural pressure release.

This recipe is so easy and people just love these cabbage rolls. Much of the flavor comes from the sauerkraut and tomato juice, so there is little else to it. I have substituted lean ground beef for half of the ground pork with much success.

2 lbs ground pork
1 cup uncooked rice
2 medium onions, chopped
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1 teaspoon salt
1 teaspoon paprika
1 (32 ounce) can tomato juice
1 (28 ounce) can sauerkraut
1 (28 ounce) can diced tomatoes
2 heads cabbage

Steps:

  • Combine pork, rice, onions, pepper, garlic powder, salt and paprika in large bowl.
  • Steam heads of cabbage until leaves remove easily (about 5 minutes each in microwave along with 1/2 cup water, covered with plastic wrap works well) Take handfuls of meat mixture and roll up in cabbage leaves.
  • Place rolls in roasting pan.
  • After covering the bottom of the pan, top with half of the sauerkraut and half of the tomatoes.
  • Repeat with second layer.
  • Pour tomato juice over top.
  • Cover and bake 2 1/2 hours at 350 degrees.

Sweet and Sour Cabbage Rolls With Sauerkraut image

This is a stick-to-the-ribs vegetarian delight! Good to prepare on a day when you can enjoy the creativity of cooking!

1 large onion, thinly sliced
2 tablespoons walnut oil or 2 tablespoons other vegetable oil
1 cup uncooked brown rice
1 1/2 cups vegetable stock
2 tablespoons raisins
1/4 cup sunflower seeds
1/2 teaspoon cinnamon
1 1/2 teaspoons salt
1/2 teaspoon black pepper
1 head cabbage
2 lbs fresh deli-type sauerkraut
1 (28 ounce) can plum tomatoes with juice, coarsely chopped
1 (6 ounce) can tomato paste, plus
1 cup water
1/4 cup honey or 1/4 cup date sugar, more to taste

Steps:

  • Finely chop 1 or 2 onion slices to make about 2 tablespoons.
  • In a saucepan, cook the chopped onion in 1 tbsp oil, stirring, until translucent and limp. (Reserve the remaining onion slices.)
  • Mix in the rice, stock, raisins, seeds, cinnamon, half of the salt and half of the pepper.
  • Bring to a boil over high heat, lower the heat, cover and cook until the rice is tender, about 45 minutes.
  • While the rice mixture is cooking, remove the core from the cabbage and discard.
  • Place the cabbage in a large steamer or a deep soup pot and steam until the outer leaves become limp enough to remove one by one. (You'll need at least 18 leaves, and more if possible.) Lay out the leaves on a clean dishcloth to cool.
  • Using a knife, remove the thick lower portion of the veins.
  • Finely shred the remaining cabbage and reserve.
  • Drain the sauerkraut, cover with fresh cold water, drain again and reserve.
  • In a casserole dish, cook the reserved onion slices in remaining tbsp of oil, stirring,until limp, about 3 minutes.
  • Add the shredded cabbage, sauerkraut, chopped tomatoes and their juices, tomato paste with water and remaining salt and pepper.
  • Bring the mixture to a boil, stirring constantly.
  • Stir in the honey or date sugar and simmer a few minutes to blend.
  • Taste and add more honey or date sugar if needed to balance the sour.
  • Remove from heat.
  • Preheat the oven to 350°F.
  • Fluff the rice mixture to distribute the raisins, sunflower seeds and spices.
  • Place 2 tbls.
  • of the filling on the lower third of a cabbage leaf.
  • Fold up the lower part of the leaf, then fold over both sides, and roll up.
  • Repeat with the remaining filling and cabbage leaves.
  • Place the rolls seam side down into the casserrole dish, pushing them into the sauce.
  • Cover and bake 25 minutes.
  • Spoon the sauce over the rolls and bake 20 minutes more.
  • If desired, continue baking, uncovered, to brown the top.
  • Serve hot.

600 g sauerkraut
12 cabbage leaves
400 g potatoes
250 g green beans
45 g onions
15 g garlic
200 g carrots, peeled and cut into batons
4 -5 bay leaves
4 -5 black peppercorns
3 juniper berries
1 teaspoon mustard seeds
30 g butter
1 teaspoon olive oil
3 sprigs parsley
3 sprigs chives
3 sprigs coriander leaves
45 g onions
15 g garlic
100 g tomatoes, peeled and de-seeded
1 teaspoon olive oil
vegetable stock or water, as required
salt
black pepper

Steps:

  • Peel off the outer leaves of the head of a cabbage.
  • Take 12 leaves and cut out the hard center.
  • Blanch the cabbage leaves in salt water for a few minutes till they are soft and pliable.
  • Taste the sauerkraut. If it is sour, rinse and drain it.
  • Heat butter in a pot.
  • Add onion and allow it to sweat for a few minutes.
  • Add the sauerkraut and lightly mix.
  • Stir in water or vegetable stock, bay leaves, peppercorns and juniper berries.
  • Simmer for 15 minutes and then fold in the carrot batons.
  • Remove from heat and drain, reserving the drained liquid.
  • Place the blanched cabbage leaves on a tray or a clean table.
  • Place some of the half cooked, drained sauerkraut on them and roll.
  • Brush a baking dish or cooking pot with a little butter.
  • Place the cabbage rolls in it and top with the sauerkraut juice.
  • Cover the pot.
  • Braise in the oven at 180-200C for 30 minutes.
  • Serve with tomato coulis, garlic beans and fried potato wedges.
  • To prepare the tomato coulis, saute the chopped onions and garlic on olive oil.
  • Fold in the tomatoes, salt, pepper and water or vegetable stock. Bring to a boil.
  • Boil the sauce for 5 minutes.
  • Allow it to blend till it thickens.
  • Pour this sauce over the cabbage rolls and serve.
  • To prepare the beans, clean them and then blanch in salt water for a few minutes.
  • Add a little thyme and butter to the water just for good taste.
  • After blanching, remove the beans and drop them in ice water to retain the colour.
  • Saute 10 gms. garlic in butter alongwith a little finely chopped onion.
  • Add beans and season with salt and pepper.
  • For the potato wedges, wash the potatoes and cut into wedges.
  • Blanch them for a few minutes in salt water.
  • Fry in oil and drain on clean kitchen paper towels.
  • Season to taste with fresh herbs, salt and pepper.
  • Enjoy!

2 pounds sauerkraut
Light beer or white wine
3 tablespoons lard, bacon fat, or ham fat
3 tablespoons flour
1 pound ground beef, fine blade, double grind
1 pound ground pork, fine blade, double grind
1 cup cooked rice
1 egg, lightly beaten
1 onion, minced
2 garlic cloves, minced
Salt and pepper to taste
1 head of cabbage

Steps:

  • Make the filling: Put 1 pound each of beef and pork together through the fine blade of a food chopper twice. In a bowl, combine the meat with 1 cup cooked rice, 1 egg lightly beaten, 1 onion and 2 garlic cloves, both minced, and salt and pepper to taste. Remove 12 large outer leaves from a head of cabbage, reserving the remaining cabbage for another use. Dip the leaves briefly in boiling water to soften and spread them out flat on a work surface. Top each leaf with some of the filling and fold the leaves over the filling, tucking in the ends to make neat rolls. Put 2 pounds sauerkraut in a large kettle with light beer or white wine to cover and heat it gently. In a sauce pan melt 3 tablespoons lard, bacon fat or ham fat, blend in 3 tablespoons flour and cook the roux for 1 to 2 minutes. Blend it into the sauerkraut and bring the liquid to a boil, stirring constantly. Arrange the cabbage rolls on top of the sauerkraut and cook them, covered, in a moderate oven (350?F.) for 2 to 3 hours or until the filling is done. Serve the stuffed cabbage and sauerkraut topped with sour cream.;

1 medium onion, diced

Steps:

  • Chop cabbage into bite sized pieces, discard the core.

1/2 pound large mushrooms, quartered
1 cup slice onions
2 cloves garlic, mashed
1 1/2 pounds cabbage, trimmed of tough outer leaves and core and coarsely shredded
1 pound sauerkraut, rinsed and drained
2 cups chicken broth, boiling
1 cup dry white wine
Salt and freshly ground black pepper
1 bay leaf
2/3 cup sour cream
1 teaspoon poppy seeds

Steps:

  • Preheat oven to 375 degrees
  • Melt butter in a heavy casserole. Add mushrooms and saute over high heat until mushrooms begin to brown.
  • Lower heat to medium, stir in onion and garlic and saute until they are tender. Add cabbage, sauerkraut, chicken broth and wine. Mix to distribute the ingredients. Season with salt and pepper.
  • Add bay leaf, cover and place in preheated oven for 2 1/2 hours until virtually all liquid in pan has been absorbed. Remove bay leaf. Check seasonings.
  • Serve directly from the casserole or transfer to a serving dish. Sour cream sprinkled with poppy seeds should be served alongside.
