CREAMY CREAMED CABBAGE
A bit different... tastes great. Cabbage, Romano cheese and a cream sauce are a perfect combination!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium saucepan over medium heat, blend milk, flour, butter, salt and pepper. Stir constantly until a thick white sauce has formed.
- In a separate medium saucepan over boiling water, steam cabbage until tender but firm.
- In a small baking dish, alternate layers of sauce, cabbage and Romano cheese.
- Bake approximately 30 minutes, until sauce and cheese are bubbly.

BRAISED RED CABBAGE
Steps:
- Melt butter in a deep saute pan with a cover. Once the butter's melted, and the foam's subsided, add the cabbage and stir to coat.
- Add salt and pepper, to taste, red onion, apple, and allspice packet, cover the pan and lower the flame to low-medium, turning once in a while, until the cabbage is soft, but still slightly firm, about 15 minutes.
- Remove lid and deglaze with the red wine, bring up flame and cook, uncovered, until the wine is reduced by at least half. Add the red wine vinegar reduce a little, add the molasses or cane syrup and toss to coat. Cook 2 to 3 more minutes, remove allspice packet, season with salt and pepper, to taste.
CABBAGE BRAISED IN CREAM

Steps:
- In a large Dutch oven, saute bacon until crispy. Remove bacon bits to a paper-towel lined bowl. Leave the drippings in the pot. (If not using bacon, simply melt the butter in the pot.).
- Add onion to hot fat with a pinch of salt. Saute slowly until limp and translucent, 10 minutes.
- Add cabbage and toss. Season with more salt. Saute until cabbage begins to wilt, 5 minutes.
- Add cream. Reduce heat to low, cover and braise, stirring occasionally, until cabbage is very soft and flavors are blended, 25-45 minutes (depending on the size of your cabbage). Finish with grated nutmeg, if desired.

WORLD'S BEST BRAISED GREEN CABBAGE
My d.h. HATES cabbage, but I just had to try this. It lives up to it's title! Luscious! AND healthy. He even agrees. Yee ha! It originates, I believe, from Molly Stevens' "All About Braising..." by way of the Atlanta Journal Constitution. There is nothing to it and after you make it once you don't need the recipe.

Steps:
- Heat oven to 325'. Oil a large baking dish (9"x13"). Discard ragged outer leaves from cabbage and cut into 1/8s, removing most of core. Arrange wedges in dish with no- or minimum overlapping.
- Thickly slice onion and cut carrot into 1/4" rounds.
- Scatter onions and carrot over cabbage; drizzle with oil and stock, salt and peppers. Cover tightly with foil and bake till tender, about 2 hours May turn the cabbage after an hour. At this point you can add a bit of water if dish seems too dry.
- When tender, remove foil, raise temp to 400' and roast another 15 minute or so till veggies are beginning to brown. Serve warm or at room temperature.

CREAMED CABBAGE- NORWEGIAN STYLE
I remember eating this when I was younger. It was the only way I liked cabbage then. This seems to really bring out the sweetness of the vegetable and remove any harshness- which kids just do not enjoy. As a kid it looked like something drenched in gravy or whipped cream- looks are deceiving- but whatever gets the kid to eat the veggie was cool with my mom.

- Boil cabbage until tender, approximately 30 minutes and drain well.
- Make a roux from the butter, flour and milk stirring constantly until it turns a light brown. Add bouillon and stir to combine.
- Add cabbage, salt, pepper and nutmeg and stir to mix together.
- Serve.

BRAISED WHITE CABBAGE
This was on the Foodnetwork website. Great way to make cabbage taste good. I've substituted chicken stock for the wine. If you use salted butter, don't add as much salt.

Steps:
- Preheat oven to 450 degrees F.
- Cut cabbage into quarters, remove core and shred finely.
- Put wine and bay leaves in a heavy large saucepan. Bring to boil, reducing by half. Add cabbage, salt and pepper, cover with the tightfitting lid and transfer to oven.
- Bake 30-35 minutes, stirring down after 15, take out when cabbage is limp and has a few little browned bits stuck to the side.
- Cut the butter and stir into cabbage. Check and adjust seasoning-removing bay leaves.
- Can be reheated in a 350 degree oven for 15 minutes.

- In a large, low, oven safe dutch oven, cook bacon over low heat until fat is rendered and meat is slightly crispy, about 5 minutes. Add butter and diced onions. Stir and cook until onions are soft and translucent. Do not let them brown. Add white wine to deglaze pan and use a wooden spoon to scrape any bits from the bottom of the pan. - To boiling salted water add prepped cabbage. Blanch for about 1 minute or until tender. Return dutch oven to stovetop and add cream, nutmeg, salt and pepper and cook over medium –high heat until thickened, about 10-15 minutes.
