This long forgotten Prohibition-era cocktail is named for the 1922 movie starring Rudolph Valentino. It is the movie which, on his death bed, he stated he'd like to be his legacy. Try this drink straight up, and toast one of the most revered actors of silent film.

The Blood and Sand counters the notion that Scotch whisky can't play well in a mixed drink: Without that deep, vital smokiness, this drink would be a much less exciting proposition. In the 1930 "Savoy Cocktail Book," Harry Craddock's recipe calls for equal parts Scotch whisky, cherry brandy, Italian vermouth and orange juice. I prefer different proportions that allow the whisky and juice to predominate - and I especially like it when fresh blood orange juice is available, both for color and flavor.

Broken Shaker mixologist Gabriel Orta says the key to a great cocktail starts with the ingredients-such as freshly squeezed orange juice and a liqueur making a comeback from the 1920s, Cherry Heering. (Movie buffs may recognize this cocktail's name, which comes from the 1922 movie Blood and Sand, starring Rudolph Valentino.)

1 ounce blended Scotch
1 ounce sweet vermouth
1 ounce cherry liqueur, preferably Cherry Heering brand
1 ounce freshly squeezed orange juice, from blood oranges, if possible
Ice cubes
Cocktail cherries, for garnish

Steps:

  • Add equal parts Scotch, vermouth, cherry liqueur, and orange juice to a cocktail shaker. Fill shaker with ice cubes. Cover and shake briefly, about 10 seconds. Uncover and, using a strainer, pour the cocktail into a coupe glass. Garnish with a few cherries skewered through a cocktail toothpick. Serve immediately.

Eben Freeman, bartender of Tailor restaurant in New York City, developed this version of a classic cocktail that mixes whiskey, vermouth, brandy, and orange juice. Instead of cherry brandy, Freeman generally uses beer: either Echt Kriekenbier from Brouwerij Verhaeghe or Quelque Chose from Unibrew. And instead of regular orange juice, Freeman creates his own orange foam, which gives it a unique texture. Note: Freeman's ingredients are not commonly found in supermarkets. 1/4 cup (2 ounces) Scotch
2 tablespoons (1 ounce) sweet vermouth
1 dash orange bitters
1 cup ice cubes
1/4 cup (2 ounces) cherry ale
Orange juice (200g is approximately 3/4 cup, but measurement is very precise in molecular gastronomy)
Versa-Whip* (a very precise scale is needed to weigh ingredients in fractions of grams, I dont think it makes sense to give volume measurements)
Xanthan gum*

Steps:

  • In a medium bowl, combine 200 grams orange juice, 2.5 grams Versa-Whip (available online), 1/2 gram xanthan gum (also available online). Use immersion blender with whisk attachment to whip juice into foam.
  • In chilled cocktail shaker or pint glass, stir together Scotch, vermouth, bitters, and ice until well combined. Strain into chilled double old-fashioned glass and top with cherry ale and orange foam.
